Virtually no tarragon is grown in Germany, which is why demand is met by imports. Following weeks of research, we eventually found a supplier in Israel. He supplied us with the higher-grade “aromatic” variety of the two available types (“Russian” and “aromatic” tarragon), harvested before they began budding, because that’s when the essential oil content is at its peak. This complex composite oil consists of 2/3 estragole (methyl chavicol) as well as ocimene, sabinene and eugenol etc., which give the herb its spicy-aromatic, anise-like aroma with hints of woodruff and a bitter-sweet taste. These ingredients are the reason tarragon is used as a culinary spice, but they are also responsible for its digestion stimulating properties. It’s these special ingredients that made us enthusiastic about creating a tarragon spirit. The result is a distillate with an authentic tarragon aroma that anyone who is not averse to an anise note will also enjoy drinking neat. This distillate also gives people who enjoy experimenting in gourmet kitchens, bars and elsewhere an opportunity to unleash their creativity. The Latin name ”dracunculus” (“Little Dragon/Snake”) is probably the reason for the erroneous belief that tarragon leaves are an antidote for snakebite.
