Today, we take the seasonal availability of local fruit for granted. But the fruit trees on our doorstep are struggling with the increase in extreme weather events, such as long periods of drought. Therefore, intensive research is needed to find varieties that can handle such extremes. One place where this is happening is the Müncheberg fruit growing trial station about an hour’s drive east of Berlin. In the largest variety garden for fruit plants in Brandenburg, more than 1,400 tree species ranging from apples, apricots, pears, quinces, sweet and sour cherries to plums have been scientifically studied since 1927. Due to the sheer number of species, of course, only a limited number of trees of each are available. Therefore, the harvest is usually insufficient for single-variety brandies. We selected plum as our first project with the fruit growing trial station and processed a mixture of different varieties of ripe plum. After removing all the stems, we mashed the fruit, removing most of the stones. Thus, the fruit-typical aromas are in the foreground of our plum brandy and the marzipan and bitter almond aroma originating from the stones is only discreetly pronounced.
