It was late summer when the phone rang and an elderly gentleman with a distinct Berlin accent informed us of the condition of his Portuguese, a variety of pear quince. He was literally groaning under the weight of the quinces from a particularly productive year and asked if we would be interested in the fruit. There was no way we could say no and so we set off when we got the signal that the quinces were ripe and ready to be harvested. At the address in Prenzlauer Berg, we would have expected anything but this: a rural-looking idyll of single-family homes, each with a beautiful, large garden, and all this in the middle of Berlin. And in that very garden stood the magnificent specimen of the Portuguese pear quince, whose perfectly ripe fruit we quickly harvested and brought to our factory a few kilometers away. After brushing off the fuzz still partially present on the pear quinces, they were thoroughly washed, processed with our fruit mill to the finest possible pulp, and then fermented under cool conditions after the addition of yeast. Immediately after the end of the fermentation process, we slowly distilled the mash and generously separated the heart from unwanted foreshots and tails components. Extensive storage has allowed this brandy with its varietal aromas to mature even further. And so, a real Berlin kid was born, because from the fruit to the finished brandy everything was processed by Berliners in Berlin to a premium product.
