Sometimes the solution is closer than you think: while searching for local fruit, we came across a Berlin-based association with a truly commendable purpose. The dedicated members have set themselves the goal of preserving endangered orchards in Brandenburg and planting new ones. The focus is on old apple varieties typical of the region, such as the Goldparmäne, which is one of the oldest and most popular apple varieties of all and is believed to have originated in Normandy. “Reine des Reinettes” (translated: “Queen of all princesses”) is what our French neighbors also call this variety out of reverence. The medium-sized fruits have a smooth, shiny, greenish-yellow skin and the sides facing the sun are golden-reddish in color. The flesh of the Goldparmäne is yellow-orange, very juicy and has a strong aroma that flatters the palate with a nutty component. The apples, picked by hand at the beginning of October, we have mashed, gently fermented and distilled. The result is a brandy with the typicality of ripe yellow apples on the nose and palate.
