Einkorn wheat was domesticated more than 8,000 years ago in Turkey and the Middle East, which makes it one of the oldest grain varieties. The last meal of “Ötzi”, the 5,300-year-old mummy found in a glacier in the Tisenjoch mountain pass contained einkorn. In addition to the nutty taste of the grain – this was reason enough for us to brew a Korn spirit made from einkorn. As with all grain varieties, grain finely ground in a grist mill is then made into a paste by adding hot water to release the existing starch. Natural enzymes are then added to obtain the so-called sweet mash, as the enzymes cause the starch to decompose into sugar. Finally, the sugar is transformed into alcohol using specially selected yeast bacteria to produce the sour mash. Following gentle distillation, once the specific einkorn aroma was obtained, a wonderfully mild grain spirit was created, which Ötzi would have thoroughly enjoyed.
