Emmer (i.e. emmer wheat) is as old as einkorn. Its origins lie in the Middle East, where it has been cultivated for thousands of years. Nowadays, the hearty spicy tasting black emmer, which we also use, is most important. Like the other old grain varieties – einkorn or pure spelt – emmer is a spelt grain in which each individual grain is enclosed by a solid glume. Unlike naked wheat – this cannot be removed by threshing. In an additional elaborate production step, the husks are removed in a special hulling mill. This also explains why ancient grains are significantly more expensive than normal wheat, but we spared no expense or effort to create a unique, typical mild Korn grain spirit from this wonderful old grain variety.
