In addition to the pepper variety we selected for our distillate No 520 Indian Black Pepper, another variety stood out so strongly in our experiments on account of its aroma that we have also included it in our product range. The reason for this pepper’s very special aroma is the way it is cultivated and harvested, as well as its origin. The fruit of pepper plants is usually harvested green and unripe. It turns black when dry due to the enzymatic oxidation of o-diphenols. However, this particular pepper is left on the plant and only harvested with its red pericarp when it is ripe. This gives it a much more subtle flavour. It comes from the Periyar National Park, located in the spice region of Kerala in southern India. In the green, sheltered hills of Kumily, where there is also a tiger reserve, pepper is not cultivated in the usual way, as a monoculture in a plantation. Instead, smallholders plant older and now endangered pepper varieties, scattered throughout the jungle. The pepper is picked by hand from March to May. After drying in the sun and further selection by hand, the pepper has truly earned its exotic name. This production method leads to an essential oil content that is twice as high as conventionally grown black pepper, with b-caryophyllene, a-pinene and limonene as the main components. You can smell and taste it. We hope all those creative talents out there will have lots of fun deciding between the two varieties — not an easy choice!
