Who isn’t familiar with the wonderful fragrance of pine needles on a walk through the forest in summer? It has a deeply soothing and balancing quality that connects us with the world of nature. But how do you recognise a spruce tree and how does it differ from the pine, for example? That’s easy: spruce needles are prickly; pine needles aren’t. This undesirable characteristic is also the reason why spruce has been supplanted by the ever-popular Nordmann fir as Christmas trees since the 17th century. Although one drawback is that the Christmas forest smell has disappeared from living rooms, as the latter produces almost no essential oil. That’s why we prefer to use spruce for our spirit. Its aromatic organic needles are collected wild and have an impressively high essential oil content. The German pharmacopoeia gives a detailed definition of the minimum and maximum amounts of the following components of spruce needle oil that is used medicinally: α-pinene, camphene, β-pinene, car-3-ene, limonene, bornyl acetate and borneol. Our spirit has captivating strong spruce notes of bornyl acetate, which can be detected even in the smallest quantities. The specially selected raw materials are the reason why this stands out in the distillate. They are easy to distinguish from the aroma produced by freshly harvested spruce tips because the composition of the essential oil changes significantly within the first weeks as the fresh tips mature. The proportion of oxidized terpenes keeps increasing and the non-oxidized proportion decreases. We recommend that anyone still not convinced should try a comparative tasting!
