Even though the name suggests otherwise, the raspberry is not a berry! Some of you may recall the cumbersome term “aggregation of drupes” from biology lessons. This tells us that the raspberry is made up of many small stone fruits formed of individual carpels. There are countless varieties of raspberry with red, yellow and black fruiting bodies, which can be divided into summer and autumn raspberries. The former includes our Tulameen, a variety obtained in 1980 in Vancouver, Canada by crossing Nootka and Glen Prosen. We’ve chosen it because it is very aromatic and tastes delicious. The large, sweet, attractive fruits were harvested when particularly fresh towards the end of June 2018 by a farmer in Southern Germany in sufficient quantities for us to manufacture an eau-de-vie by maceration and distillation. We mixed five parts fruit with one part alcohol and, after the end of the maceration period, carefully distilled it to capture the full force of the rheosmin or raspberry ketone in our eau-de-vie. But it would be wrong to think that only one substance is responsible for the bombastic flavours of this spirit. Raspberry ketone may dominate, but it is just one of more than 200 substances that contribute to the flavour. Taste this classic drink neat, with dessert or in a sophisticated cocktail mix.
