The Vino di Nocino is made from the walnuts that are sort of left over after the production of the Nocino liqueur. These originally green walnuts, after the alcoholic extraction for the Nocino, are now black, intensely soaked with alcohol and still rich in aromatic substances. A dry white wine is added to them immediately after the Nocino is strained, giving it a pleasant spicy aroma and a beautiful amber color over several weeks. Together with some of our distilled spirit from ripe walnuts and an organic sugar syrup, this creates the liqueur wine “Vino di Nocino”. In the dry version we produce, it is excellent as an aperitif. As the name suggests, it originated in Italy, where it is also known as Nociato, Nocellato or “Secondo Nocino” (translated: “second Nocino”), the latter due to the double extraction of the originally green walnuts. And these nuts still have it in them, because the nuts remaining after straining the Vino di Nocino taste very delicious, for example, covered with chocolate as a dessert.
