Green walnut liqueur

It is only a very narrow window of time that nature leaves you to harvest the green walnut in the perfect condition: around St. John’s Day, i.e., June 24, they are just right, depending on the weather conditions in that particular year. This is because the inner kernel must no longer be liquid, but the formation of the walnut shell must not have begun either. And so, you have to go out to “your” tree several times to find the perfect harvest time. And after that, it must also be quick, because the green walnuts are quickly spoiled. We first cleaned and crushed the green walnuts and then, together with other ingredients – instead of the neutral alcohol usually used for cost reasons – added our distillate from the ripe walnut and finally rounded it off with sugar syrup. In this way we have succeeded in combining the early and the mature aromas of the walnut into an incomparably harmonious, bitter-sweet Nocino liqueur, which gets better the longer it is stored. Perfect as a digestif, it is said to have a digestive effect.
