Sometimes the solution is closer than you think: while searching for local fruit, we came across a Berlin-based association with a truly commendable purpose. The dedicated members have set themselves the goal of preserving endangered orchards in Brandenburg and planting new ones. The focus is on old apple varieties typical of the region, and they have a lot of different ones, such as the Red Autumn Calvary, a dessert apple that is now very rare. It is notable for its ribbed, bulbous shape, its glossy black-red fruit and its flesh, which is either red marbled or has a strong reddish tinge throughout. The latter, together with its raspberry- to strawberry-like aroma, makes it a pomological specialty, which has earned it numerous sonorous names, such as Red Cardinal or Raspberry Apple, since its first description dating back to the 15th century. The brandy we produce from it carries the berry notes paired with the apple ones and is, to our knowledge, the first single-varietal apple brandy from this almost forgotten apple variety.
