No 500 Brazilian Roasted Yerba Mate

Most people are probably familiar with mate in the form of a tea, or even in the form of a cult cold drink that emerged from the hacker scene. Green unroasted mate leaves are also used as traditional herbal remedies for mental and physical fatigue. The major difference between our spirit and the drinks or the medicinal application: our spirit contains no purines because caffeine, theophylline and theobromine are non-volatile under distillation conditions. All the aromas are volatile, and it is these that are responsible for the mellow, sweet-and-sour, earthy-smoky smell and taste, which evokes wilting leaves. That’s what makes our spirit using roasted organic mate leaves truly amazing! Just like with coffee, the roasting process is important to produce the typical aromas. Maillard reactions form the flavour components typical of the variety, such as pyrroles and pyrazine. These are then also transferred to our spirit during distillation. But don’t be put off by the chemical terminology: these processes occur in every frying pan and many dishes would be pretty bland without them! So, use the spirit in cocktails, as a shot in tea or drunk neat.
