Cilantro belongs to the botanical family Apiaceae, to which many aromatic plants belong. In the case of cilantro, two different plant parts are used in the kitchen: the leaves and the seeds, with the leaves mainly used in Asian cuisine and the seeds in European cuisine. This posed the question as to which one we should use as the raw material for our spirit? Following a series of tests, we opted for both, but rather than combining them in a single product, we created two different ones. The result was two spirits that couldn’t be more different. For this spirit, we used the cilantro leaves. The leaves produce a very intense essential oil – though only in small quantities – which has a variety of aliphatic aldehydes (including decanal and dodecanal), which are responsible for the typical smell and taste. Its aroma is characterised as musky, lemony or even “soapy-herbaceous”. And it’s precisely this aroma that we reproduced 1:1 in our cilantro leaf spirit, which truly has the intense fresh cilantro smell and taste. Cilantro aficionados will enjoy drinking this distillate neat. But cilantro spirit is also ideal for mixing, cooking and, of course, perfuming.
