The black elderberry is a common plant. That’s why there are numerous myths about it. It was considered to be the tree of life and so it was planted in many gardens. It is found in lowland forests, beside paths and roads and on riverbanks. In around June, it looks stunning as it has countless fragrant umbrella-shaped white umbels. In autumn, these turn into small, black, juicy berry-like stone fruits, which gave the black elderberry the epithet nigra (Latin: “niger” = black). Based on many years of experience, dried flowers of the black elderberry are also used as a traditional herbal medicinal product. That’s why the quality of the elderflower (Sambuci flos) is specified in the European Pharmacopoeia. Elderflowers are used to relieve the initial symptoms of a cold. There has not as yet been any research into which of its many ingredients (flavonoids, hydroxycinnamic acid derivatives, triterpenes, gums and essential oil) account for its diaphoretic and expectorant effect. The essential oil contributes over 60 components to the remarkable flavour that our spirit aimed to reproduce. These include cis-rose oxide (floral, rose, powdery), nerol oxide (green, floral, minty), hotrienol (sweet, tropical), nonanal (green, fresh, lemon), linalool (floral, citrus) and a-terpineol (floral), as well as hexanal and 3-(Z) hexenol (both fresh, green, and grassy). Our farmers in Mecklenburg-Western Pomerania collected the wild flowers by hand. We used the fresh flowers to distil a wonderfully characteristic elder spirit. It has a range of flavours that will make you want to enjoy it neat, or use it to create spectacular cocktails and desserts.
