The English word “peanut” already indicates the botanical relationship to peas. For although the name might suggest it, the peanut is not a nut, but belongs to the Faboideae family and thus to the legumes. For this reason, peanuts are more closely related to peas and beans than to nuts. The relationship can be recognized by the fact that peanuts do not have a hard shell, but ripen in a legume. We have very consciously selected the wild organic peanuts in raw vegetable quality, which we obtain 100 % natural i.e., unroasted and unsalted from Indonesia, because they have a more original taste than the roasted peanut kernels from the supermarket. It is a wild variety that is cultivated by small farmers on half a hectare of land in mixed cultures according to ecological standards so that no pesticides are necessary. All processing steps are done by hand. Twice a year the organic peanut kernels are harvested and after harvesting they are dried in their shells in a special process and then cracked. The valuable red-brown striped seed skin remains largely intact. In order to enhance the taste of these pure, wild peanuts for our spirit production, we gently roasted them in our distillery, freed them from the seed skins and then extracted and distilled them with our mild neutral alcohol. The result is a freshly roasted peanut aroma pure in the glass, which is mainly derived from 2-methyl-3-furanthiol with a roasted and meaty note and 2-acetyl-1-pyrroline and 2-propionyl-1-pyrroline with a popcorn-like note.
