Salad cucumber or gherkin? That’s the question! When we’re asked a question like this, we answer it properly. It was obvious that we would produce our cucumber spirit using the famous gherkins from nearby Spreewald. But the blind tastings that form part of our systematic product development ultimately gave preference to the cucumber in terms of smell and taste. Once we’d opted for cucumbers, there was no question that they had to come from the place in Germany where they grow best, and which has a long-standing tradition – the island of Reichenau on Lake Constance. Of organic quality, naturally. Botanically speaking, the cucumber is a fruit (berry with a hard rind), however, the aroma is the reason why it’s treated as a vegetable and used not for desserts but as part of a savoury main course, e.g. as a salad. This is also why it is assigned to the crop group of fruiting vegetables. The aldehydes (E,Z)-2,6-nonadienal and (E)-2-nonenal are responsible for the typical cucumber aroma. They provide the foundation for this truly refreshing spirit, which recalls fresh summer aromas and can be enjoyed at any time of the year, either drunk neat or used for cooking or mixing. Incidentally, the bitter substances often found in cucumbers are mainly triterpene glycosides, so-called cucurbitacins. But don’t worry: these bitter substances are non-volatile and therefore not contained in our spirit.
