In contrast to strawberries and raspberries, the blackcurrant is a berry in the botanical sense, i.e. an indehiscent fruit formed from an ovary, with an outer skin that remains fleshy when ripe. Its German name ‘Johannisbeere’ reflects the fact that the fruit ripens around the 24th of June, the feast day of St John the Baptist. At that time, the berries are plump and spherical with a dark blue to inky violet colour because of the high anthocyanin content in the skin. This colour is also characteristic of the famous French liqueur Crème de cassis. Rather than a sweet, colourful variety, we’ve opted for a fruity, clear variety with a fantastic aroma. We used perfectly ripened fruit from our southern German farmer to extract an eau-de-vie (by maceration and distillation), i.e. using five parts blackcurrants to one part alcohol. During the slow distillation, the flavouring substances are over-distilled with the alcohol, in particular 4-methoxy-2-methyl-2-butane thiol, a substance to which the human nose is particularly sensitive. Its pleasant, desirable smell of blackcurrants can be detected in very low quantities; however, in higher concentrations, our receptors suddenly start detecting unpleasant notes. There are definitely none of these in our eau-de-vie. On the contrary, it has compelling aromas that are typical of the fruit, which make it ideal for mixing, adding a special touch to desserts or drunk neat for pure pleasure.
