As every child knows, blood oranges obviously have nothing to do with blood, other than the dark red colour of the flesh and sometimes also the peel, but this colour only occurs when the night temperatures drop below 10 °C. Blood oranges are the result of a mutation centuries ago. Unfortunately, as the dyes are non-volatile, none of the beautiful colour of the fruit is transferred to our spirit during distillation. However, what are volatile are the key aromas such as limonene, the aldehydes hexanal, octanal, decanal (i.e. with 6, 8 and 10 carbon atoms) and -sinensal with its citrus fresh, sweetish smell, and octyl acetate and neryl acetate. The latter has a sweet, flowery smell reminiscent of oranges and roses. These are what give our spirit the typical blood orange taste. Just listing these wonderful aromas makes one imagine melting it on the tongue or enchanting your guests by drizzling it over delicious vanilla ice cream.
