No one knows exactly where Constantinople Apple Quince comes from. The name suggests Turkish roots, as Constantinople is the former name of modern Istanbul. In any case, of all the numerous varieties of quince, we specifically wanted this particular one as it is said to have a particularly subtle aroma. We had a real stroke of luck, because a Mecklenburg farmer came to us of his own accord a few weeks before the harvest and offered us precisely this variety from his certified organic farm. What he brought to our yard in October surpassed our expectations: the most intensely fragrant, highly aromatic fruit we had ever seen. They were harvested at optimum ripeness and therefore no longer had the fine fuzz, which has to be removed before processing from fruit that is harvested unripe and then post-ripened because it has bitter taste. We immediately washed, crushed and slowly fermented and cooled the firm fruit to capture its full complexity in our distillate, which contains the subtle fragrance of the aromas released. Chemically, it is a blend of more than 80 esters, ketones, alcohols and aldehydes. Following gentle distillation and extensive maturation, we obtained a wonderful eau-de-vie typical of the variety, with sweet and flowery, slightly spicy notes on the nose and palate. A truly world-class eau-de-vie with a lingering finish that blends the complexity of the quince aroma to perfection.
