    If you are interested in our craft, or maybe even always wanted try distilling and even make your own personal gin, our workshop will be just right for you! In around 3.5 to 4 hours, we’ll teach you the basics of distillation – from preparing and cleaning the raw materials, to maceration or mashing, gentle distillation, ending with maturation and dilution to drinking strength. With expert guidance, you’ll distil your own spirit or gin in a small copper pot still, which you can then take home. We also serve a light meal. We’ll get in touch a week before the event, so that you can select the right distillate for you and we can start it up.

    Tastings & Workshops are only open to people over 18. If you are unable to attend a session, please phone us well in advance and we will no doubt be able to find a satisfactory solution.     The idea for our Christmas spirit came from an Advent tradition: every year on the last Sunday of Advent, friends come round for an Advent coffee gathering, at which mother’s unsurpassed home baked Christmas cookies and, of course, our home-made mulled wine, are served. The blend of a good red wine and around a dozen spices is regularly greeted so enthusiastically that we obviously had to use this recipe to create a spirit. However, this turned out to be a lot more difficult than we initially imagined. As the taste of red wine as an important stabilising basis is absent, the individual components emerged too strongly in our early attempts. That’s why after our internal tastings, we kept changing the quantities of ingredients. But in the end, the pharmacist’s meticulousness and patience paid off and resulted in a beautifully balanced spirit, which legally must be labelled as a spirit drink. Christmassy aromas of rich citrus, cinnamon, various classic gingerbread spices and, of course, a hint of vanilla, are smoothly blended in our particularly fine alcohol. You’re guaranteed to enjoy the Christmas spirit even in summer!

    The name “Blue Velvet” will remind almost everyone of the popular song from the 1950s, sung by Bobby Vinton, which catapulted to number one on the charts in 1963, as well as the more recent cover by Lana Del Rey. “Blue Velvet” is also the spelt enveloping the grain of this original pure spelt to protect it against predators. In the specialist literature, Blue Velvet was first mentioned in the mid-1850s, but its cultivation did not become widespread. Nowadays it is a protected exclusive product of our grain supplier and we have distilled a first-class grain spirit from it. Because spelt is a species of the wheat genus, our Korn eau-de-vie has a similar taste, i.e. it is mild with bready, fruity echoes.

    Most grain eaux-de-vie are based on conventional rye or wheat. This cereal stopped being a natural plant thousands of years ago, to become a grass modified by humans. We deliberately chose ancient grain varieties as the basis of our eaux-de-vie to give our products a more intense taste. This wild rye is an ancient rye from the Kraichgau region in southwestern Germany, and its name reflects its cultivation in forest clearings. In some areas, it is called St John’s Rye, a reference to its early sowing date around the feast of St John (24th June). Its grains are significantly smaller than ordinary rye grain, but otherwise very similar. Our Korn eau-de-vie made from forest wild rye is significantly stronger than eaux-de-vie made from wheat grain and has a totally individual note.

    There are numerous legends about oriental wheat, which is also called kamut. It has been found as offerings in the tombs of the Egyptian Pharaohs. It is sometimes also called “prophet’s wheat” after the legend that Noah carried the grain on board the ark. We can say for sure that oriental wheat is a very ancient grain. According to the latest genetic research, it is a natural hybrid of durum wheat and so-called Polish wheat. It originated in the north-eastern province of Khorasan in Iran, hence the name. The grains of oriental wheat are three times as big as those of normal wheat, have a golden-yellow colour and a slightly buttery, nutty flavour. In the nose and on the palate, the resulting mild Korn grain spirit recalls fresh bread underpinned by fruity notes.

    Emmer (i.e. emmer wheat) is as old as einkorn. Its origins lie in the Middle East, where it has been cultivated for thousands of years. Nowadays, the hearty spicy tasting black emmer, which we also use, is most important. Like the other old grain varieties – einkorn or pure spelt – emmer is a spelt grain in which each individual grain is enclosed by a solid glume. Unlike naked wheat – this cannot be removed by threshing. In an additional elaborate production step, the husks are removed in a special hulling mill. This also explains why ancient grains are significantly more expensive than normal wheat, but we spared no expense or effort to create a unique, typical mild Korn grain spirit from this wonderful old grain variety.

    Einkorn wheat was domesticated more than 8,000 years ago in Turkey and the Middle East, which makes it one of the oldest grain varieties. The last meal of “Ötzi”, the 5,300-year-old mummy found in a glacier in the Tisenjoch mountain pass contained einkorn. In addition to the nutty taste of the grain – this was reason enough for us to brew a Korn spirit made from einkorn. As with all grain varieties, grain finely ground in a grist mill is then made into a paste by adding hot water to release the existing starch. Natural enzymes are then added to obtain the so-called sweet mash, as the enzymes cause the starch to decompose into sugar. Finally, the sugar is transformed into alcohol using specially selected yeast bacteria to produce the sour mash. Following gentle distillation, once the specific einkorn aroma was obtained, a wonderfully mild grain spirit was created, which Ötzi would have thoroughly enjoyed.

    Autumn leaves, seriously? We usually get an amazed, incredulous reaction when we mention this creation. But this product is exactly what DSM stands for: trying out new and totally unprecedented things. Even ideas that seem crazy are passed to product development. If what we expected emerges during the experimental optimisation, then it was worth the effort. If not, we’ve gained another valuable experience. But what can be expected of a spirit made from autumn leaves? Everyone probably has that captivating smell somewhere in their olfactory memory. The smells while walking through an autumnal park or forest keep us deeply grounded in nature because they make us aware of its cycle. This is precisely the smell that we captured in our spirit made from autumn foliage. We ventured out and collected newly-fallen leaves of one specific type of tree. Their beautiful yellowish to red colours were created by the breakdown of chlorophyll into carotenoids and anthocyanins. We immediately macerated the leaves, to preserve the typical notes. The tasting was the ultimate surprise, because in addition to the autumnal notes, we also detected amazing fruity notes that round off the unusual experience of this spirit. So it’s hardly surprising that it has already been used in various cocktail recipes. But where does the smell and taste actually come from? We’re not quite sure, but it’s probably a combination of the breakdown metabolic products in the leaves and the decomposition of the leaves by ray fungi occurring on the ground. This involves bacteria of the genus Streptomyces coelicolor, which produce earthy-smelling geosmin, among other things.

    We would have appreciated using German porcino, but we are not allowed to. In some countries, because they are a protected species, porcino may only – if at all – be collected by private individuals in small household quantities for their own consumption. As porcino cannot be cultivated, they can only be obtained in sufficient quantities for our purposes by wild collection in controlled areas. In Europe, these regions are found mainly in Romania and the countries of former Yugoslavia, such as Bosnia and Herzegovina. There are rich stocks and the harvest is carried out in a sustainable manner, which means porcino will continue to delight future generations. To give pleasure to people today, we were able to capture in our spirit the wonderful walnut-like, earthy and mushroom-like aromas of organic porcino by particularly gentle maceration and distillation. It is, of course, an ideal ingredient for fine cuisine and can also be enjoyed neat by mushroom enthusiasts. For those interested in chemistry, by way of a postscript: using the analytical procedures of headspace chromatography with a sniffing port (i.e. a sniffer detector) it was possible to differentiate between the different substances responsible for the typical – especially when cut – fungal odour of porcino and identify them by their smell. It is a complex mixture of disparate ketones and alcohols, of which 1-octene-3-ol is the most important in terms of quantity.

    Chanterelle has been a popular edible mushroom since antiquity, and it has a compelling spicy-aromatic smell and taste that we have conveyed 1:1 in our spirit. If you are preparing a tasty sauce, for example, or adding that special touch to a mushroom ragout or simply want to see how its aroma compliments a game steak, you won’t be very interested in knowing that science discovered the aliphatic alcohol called 1-octene-3-ol is one of the main components of the mushroom aroma. Just taste it! Incidentally, our organic chanterelles are sourced from a wild collection in Bosnia and Herzegovina, where there are still enough of them thanks to sustainable harvesting. Elsewhere, stocks have been dwindling since the 1970s, as a result of the major environmental issue of the era: acid rain. Because the mycelium of the chanterelle (filamentous cells of the fungus in the soil) is very sensitive to the sulphurous acid which is a component of acid rain. This decline means that chanterelles should only be collected by private individuals in small quantities for individual consumption.

    The marigold is originally from South and Central America and has been cultivated since the 16th century. In the Far East, it is used mainly as a spice and medicinal plant, and in Europe, mainly as an ornamental plant, but its edible flowers are also used to decorate many a gourmet dish. It’s rather a shame that the lovely yellowy-orange colour of its beautiful flowers is left behind in the stillage – the residue of the solids and non-volatile components of the macerate – because one eats (and drinks) with one’s eyes. Our spirit made from tagetes – one of over 50 known varieties – is a clear, colourless product, containing volatile aromas that blend with the alcohol when it is distilled. This is an essential oil, with conflicting information about its composition in the literature, so we won’t list any information here. It’s enough to know how our spirit tastes without knowing the name of the causal principle. It tastes of the subtle aromas of anise and woodruff, which makes it somewhat resemble tarragon. A cool product that’s seeking its champion among chefs, mixologists and connoisseurs.

    People have been fascinated since ancient times by the scent of roses. The Greeks bestowed the title “Queen of Flowers” upon the rose. Hardly surprising, therefore, that the inventive spirit of the Persians experimented with processing the raw material until they finally succeeded in condensing the vapour of boiling rose petals using an alembic, a copper helmet. This marked the start of the distillation era. The aim in ancient times was to obtain scented water used for freshening up. Today, essential rose oil made from the fresh petals and rose absolute, extracted from the flower buds, is one of the world’s most precious raw materials for perfume. So it’s hardly surprising that the scents of fresh organic flowers of a wide range of varieties supplied from a famous German rose-growing region hit us with all their intensity. If only we could capture it in a spirit! What would it taste like? These are questions that we always ask ourselves at the start of product development. In the case of the rose, the answer was particularly fascinating because one distillate was far and away the favourite on the nose during the tastings, and the other on the palate. We therefore opted for both varieties of wild rose, which have been cultivated in this country for centuries. The result is a heavenly spirit with a lasting rose fragrance and taste (sic), along with tea and honeyed spicy notes. Its impact is due to citronellol, geraniol and farnesol, along with rose oxide and 2-phenyl ethanol. It will taste delightful in cocktails, and also in desserts and dressings, or dishes from Arabic or French cuisine.

    Magnolias are a plant genus of the Magnoliaceae family consisting of around 250 species originating in East Asia or America. Its evolution probably dates back over 100 million years. The French botanist Plumier discovered the magnolia in the United States when he was researching new plants for Louis XIV. He dedicated it to his famous compatriot, the botanist Pierre Magnol, by giving it the name “magnolia”. The first of its genus was brought to France in 1740 by a dealer who travelled back and forth between Europe and America. Since then, it has become a plant that is cultivated in many gardens around the world. This is hardly surprising, as magnolias in bloom are among the most beautiful plants in the world. This magnificent tree with its luxuriant flowers can quite rightly be called the “Queen of the Woods”. The tulip magnolia that we use is the most widespread. Luckily, we were able to harvest the flowers of a magnolia tree in our own garden. Who else would allow their own tree to be stripped of all its beautiful blooms, whose appearance and fragrance awaken the joys of spring? A fragrance that blends mild creamy floral and transparent fruity, aquatic and slightly spicy to honeyed notes with a delicate hint of citrus. This makes our magnolia spirit as sublime and exclusive as the blooms themselves. It’s worth experimenting with it. You can also do that yourself with magnolia petals: they taste delicious raw in salads or fried in batter!

    Lavender inevitably makes one think of France and the vast lavender fields of Provence. And this is exactly where we obtained the organic lavender flowers used in our wonderful spirit, with its pleasantly fresh, woody-floral, balsamic-sweet to herbaceous notes. Once you smell and taste it, you’ll immediately understand why humankind has always used lavender flowers for a wide variety of purposes. The ancient Romans used it for washing and bathing. At the French court, on the other hand, its perfume was used instead of water to cleanse the body (because pathogenic properties were attributed to water). Even today, it is considered a traditional herbal medicinal product for internal or external use to treat anxiety or added to baths for circulatory disorders, for example. The Latin generic name “Lavandula” derives from the Latin word for washing (“lavare”) and the species epithet “angustifolia” refers to the narrow leaves of the plant, which we used to create another of our exclusive spirits. Now, if you ask what this spirit made from lavender flowers with the above-mentioned aromas typical of the variety should be used for, we recommend using it anywhere that you want to add a touch of Provencal sunshine.

    Cornflower blue is a deep vivid blue colour which has inspired humans down the ages. For Estonians it symbolizes their daily bread as it grows in cornfields. In Germany after unification in 1871, it became a symbol of the country as a whole. Vincent van Gogh immortalised them in his painting “Wheat Field with Cornflowers”. Cornflower was previously maligned and considered to be a weed on arable land, especially in cornfields. This is also how it came by its name. And it’s one of a kind. In addition to its magnificent colour, based on the cyanidin centaurocyanin, which unfortunately is not transferred to our spirit during distillation, it has a wonderfully sweet smell and exciting floral aromas that make this subtle spirit something quite unexpected. The fact that something that looks so great also has a very surprising and impressive taste, definitely means it deserves to be drunk and enjoyed. This spirit should be enjoyed neat to be fully appreciated, and its sweet, floral aromas lend a hitherto unfamiliar note to desserts and cocktails because, as far as we know, this is the first spirit made from cornflower.

    The black elderberry is a common plant. That’s why there are numerous myths about it. It was considered to be the tree of life and so it was planted in many gardens. It is found in lowland forests, beside paths and roads and on riverbanks. In around June, it looks stunning as it has countless fragrant umbrella-shaped white umbels. In autumn, these turn into small, black, juicy berry-like stone fruits, which gave the black elderberry the epithet nigra (Latin: “niger” = black). Based on many years of experience, dried flowers of the black elderberry are also used as a traditional herbal medicinal product. That’s why the quality of the elderflower (Sambuci flos) is specified in the European Pharmacopoeia. Elderflowers are used to relieve the initial symptoms of a cold. There has not as yet been any research into which of its many ingredients (flavonoids, hydroxycinnamic acid derivatives, triterpenes, gums and essential oil) account for its diaphoretic and expectorant effect. The essential oil contributes over 60 components to the remarkable flavour that our spirit aimed to reproduce. These include cis-rose oxide (floral, rose, powdery), nerol oxide (green, floral, minty), hotrienol (sweet, tropical), nonanal (green, fresh, lemon), linalool (floral, citrus) and a-terpineol (floral), as well as hexanal and 3-(Z) hexenol (both fresh, green, and grassy). Our farmers in Mecklenburg-Western Pomerania collected the wild flowers by hand. We used the fresh flowers to distil a wonderfully characteristic elder spirit. It has a range of flavours that will make you want to enjoy it neat, or use it to create spectacular cocktails and desserts.

    The hop is a climbing plant whose species name “lupulus” is the diminutive of the Latin “lupus” (wolf) “because this plant has a tendency to strangle other plants, reminiscent of the way wolves harm other animals”. Hops have been cultivated in Europe for more than 1100 years. The dried female inflorescences are used as a traditional herbal remedy to treat anxiety and sleep disturbances in the form of the medicinal drug “Lupuli flos”. This is probably less well known than their use in beer wort. Hop cones contain polyphenols and lupulin, a mixture of resin and essential oil. While the resin contains the hop’s bitter substances, such as humulones and lupulones, the essential oil is estimated to contain more than 1,000 components, only 440 of which have been identified so far. The most important in terms of quantity are monoterpene myrcene, the sesquiterpenes α-humulene and β-caryophyllene, and the terpene alcohol linalool. All of these are quite volatile and poorly soluble in water. These substances largely evaporate during the traditional brewing method of wort boiling and are only found in appreciable quantities in cold-hopping, for example, in modern craft beers. In our spirit made from hops, on the other hand, all these substances are fully extracted by maceration in alcohol. Their volatility ensures that they transfer well into the distillate, promising the purest hop taste without the bitter substances of the resin. We also followed a tip from the brewers: one aroma hop is not enough – the secret is having the right mix! And naturally it had to be hops from Hallertau, the largest contiguous hop-growing region in the world, where the author picked hops when he was young.

    Now that so many people are aiming to improve their individual life experiences, nutrition is becoming more personalised. So it’s hardly surprising that the so-called superfoods — foods with an actual or alleged health benefit — are becoming increasingly popular. These range from the domestic raspberry or blueberry to natives of exotic climes such as the goji berry or Cape gooseberry (Physalis), to chia seeds and even wheatgrass. Detoxifying, rejuvenating and skin-enhancing properties are attributed to wheatgrass, as well as healing properties to assist the fight against serious illnesses. This is where it becomes problematic from a legal point of view, because advertising foods with health claims is only permissible if there is evidence from scientific studies carried out as part of an approval procedure. Fresh wheatgrass has been proven to contain many vitamins, minerals and amino acids, in addition (of course) to the green plant pigment, chlorophyll. All these substances form an integral part of a balanced diet and thus make nutritional sense. So there’s nothing against the occasional “wheatgrass shooter”, as the dark green, freshly pressed juice is called. As only the hardy will want to drink it neat, wheatgrass should be pressed with fruit, for instance. We were inspired by the strong green aroma of fresh wheatgrass shoots, which is why we macerated and slowly distilled the freshly harvested Allgäu organic wheatgrass that was sown specially for us. The result is a refreshing spirit, with wonderful green, grassy notes, ideal for use in cocktails or in the kitchen.

    The plant Pandanus amaryllifolius is the only one of over 600 species of the Pandanus genus with strong smelling leaves. The leaves are used in many Southeast Asian countries as a natural flavouring and colouring in the kitchen, as well as in traditional medicine. Food is wrapped in the leaves before steaming or frying. The flavour and colour are transferred, but the leaves are not eaten. Ideally – as in the case of our spirit – fresh leaves are used. They are much more aromatic as they lose flavour when dried. The plant is sometimes called the “vanilla of the East”, though less on account of its price, as it is cultivated across much of Asia. The flavours are actually responsible for the name. These are characterised as milky-sweet to rose-like floral, and vanilla-like to slightly almond-like and nutty. It’s probably this exotic combination that made such an impression on the friendly Berlin bartender who inspired us to manufacture this spirit. The key component of the aroma of pandan leaves is 2-acetyl-1-pyrroline, which can be detected even in very small quantities. It smells of fresh buttery popcorn and also gives white bread, jasmine and basmati rice their typical smell. Many other components, such as 4-ethylguaiacol (an important flavouring in wine) b-damascenone (also called rose ketone) and 3-methyl-2 (5H)-furanone (also found in soy sauce or roasted coffee), contribute to the sensory experience of pandan. They also lend our spirit a potpourri of flavours, which add that certain something to cocktails and dishes.

    You can only appreciate nature with all your senses if you’re in the here and now. Many people achieve this by going into the wild and getting away from it all. It may be that there are basic instincts in us, deeply rooted in our genes, that make us stay still at such times and heighten our perception. The scents that surround us during these carefree moments are deeply embedded in our olfactory memories. That’s why many people associate the fragrance of hay with a summer stroll through the fields and meadows of their childhood. We aimed to preserve this exact smell in a spirit so as to have it handy at all times. For this, we macerated and very gently distilled sun-dried organic mountain meadow hay from the Rhoen UNESCO Biosphere Reserve. The result was a spirit that far exceeded our expectations in terms of capturing the olfactory memory. Our spirit made from  mountain hay blends the soothing smell of summery dried hay with the scents of aromatic herbs and fragrant wild grasses as only found in unspoiled nature. It will transport you to a freshly mowed meadow in the twinkling of an eye. The typical smell of hay when the grass is dried is due to the coumarins, which are also found in woodruff, tonka beans and Chinese cinnamon. These have glycosidic bonds in the living plant to some extent and are only released when the sugar is separated as the plants wither. Coumarin with its sweet, herbaceous and spicy fragrance and vanilla-like taste also provides inspiration for creative talents who want to use this unique spirit in the kitchen.

    Foodies and gourmets of the world rejoice; this spirit is absolutely incredible! The fragrance of the elongated leaves from our supplier of exceptional herbs was indescribably intense. By just slightly rubbing and cutting the verbena, an inevitable part of the processing, we were enfolded in a cloud of the freshest, most fruity lemon fragrance, which is why we very quickly overlaid it with alcohol because the flavours should be enjoyed in the spirit rather than simply creating a pleasant aroma during manufacturing. The raw material lives up to its Latin name citrodora. It is amazing how many members of the vegetable plant kingdom are blessed with the beautiful citrus aromas of citral without being even slightly botanically related to each other. But even more surprising is the fact that every single spirit produced from them has a completely different character when combined with the other aromas of the essential oil. In the verbena, it is mainly limonene, which also contributes its own lemony notes. Other than strongly recommending drinking it neat at room temperature for pure enjoyment, or topping it up with champagne, we’ll leave it up to the creative talents in award-winning kitchens and top-bars as well as connoisseurs to decide what else they can do with it.     The Latin name Melissa, as it is also often called, is revealing: the Greek words melissa and meli, which mean bee and honey, give an idea of how popular the honey-rich small whitish flowers of lemon balm are with bees. Artepitheton officinalis, on the other hand, is a reference to the medicinal use of the plant. Due to their calming and carminative effect, the leaves are used to treat sleep disorders and functional gastrointestinal disorders but have also long been widely used as a spice in Europe. Among the numerous ingredients of Melissa that are the reason for its widespread use, we are mainly interested in the essential oil, because this is responsible for the smell and taste of our spirit. Its aromatic, lemony, spicy aromas are mainly contributed by the monoterpene aldehydes citronellal, geranial (i.e. citral a) and neral (i.e. citral b), in which the proportion of the first one mentioned varies considerably according to the country of origin. Geraniol (flowery and rose notes), linalool (floral and woody notes) and other terpenoid substances also contribute to the refreshing overall impression that sets our pure Melissa spirit apart. We highly recommend using it for mixing, in fine cuisine or drunk neat at room temperature for immediate enjoyment.

    When purchasing raw materials, luck is also an important factor. In the case of the lemon grass, we were extremely lucky: our buyer scoured Thai markets to find the most aromatic lemon grass. And he came up trumps, as you can smell and taste when you enjoy this outstanding spirit. Its strong, intensely fresh, somewhat “green” lemon aroma is mainly due to a mixture denoted as citral of two isomers, monoterpene aldehyde geranial and neral, with smaller amounts of b-myrcene and numerous other components. They create a spirit with an unparalleled lemon freshness and naturalness, which prompts one to ask what it can’t be used with, rather than vice versa. It is ideal for pure pleasure, for example, in Asian food, where its aromas contribute that special something. It adds a subtle lemon touch to dressings, jams, salads and desserts, and lends an exotic hint to drinks such as herbal tea or cocktails. The grass also has other properties which explain its traditional use in other parts of the world. It is said that the flowers used to be smoked by shamans on Lake Tanganyika to induce dreams that enabled them to predict the future.

    It had to be Ceylon cinnamon from Sri Lanka. Only organic whole sticks were good enough for us. It’s not hard to distinguish between Ceylon cinnamon and Chinese cinnamon (Cinnamomum cassia) because the latter is mainly obtained from a thick layer of bark, which curls at the ends while drying and therefore does not form a closed stick. Ceylon cinnamon only consists of very thin layers of bast, several of which are pushed into each other for drying, which makes it possible to create a closed stick with a cigar-like cross-section. Ceylon cinnamon also has a finer aroma and the thin layers preserve it for much longer than is the case with Chinese cinnamon. The constituents of the essential oil are also significantly different. Cheaper cinnamon varieties such as Chinese cinnamon contain coumarin, which brings those woodruff-like notes. On the other hand, in our spirit made from Ceylon cinnamon, cinnamic aldehyde is in the foreground and eugenol is also an important ingredient. You can smell and taste it, whether it is enjoyed neat or used to add a special touch to pastries or cakes, desserts and jams, cocktails or mulled wine, tea or Asian dishes.

    We were quite surprised at how different juniper from various sources can taste, but in the end, it was easy to reach a decision. Because fresh berries from Bosnia and Herzegovina have a particularly fine aroma that is reminiscent of gin. The classic sweet-spicy, aromatic and slightly resinous-bitter conifers notes unfold, complemented by a hint of lemon, as if the berries had been mixed with a little lemon peel. The basis of this special blend is the essential oil, containing, among other things, the terpenes a-pinene, sabinene, myrcene, limonene, terpinene-4-ol and b-pinene. Of course, German juniper berries were also among the contenders, as the “cypresses of the north” are characteristic of nearby Lüneburg Heath. But, for complex aromas, the Mediterranean product, which benefits from a higher number of sunshine hours, is well ahead of the game. One should point out that juniper berries are false fruits, botanically speaking, because after pollination, the three uppermost scale leaves grow around the ovules like a fleshy fruit, and these form single-hull so-called seed cones which can be seen when you look at fresh juniper berries. In addition to pure enjoyment, this distillate, which is referred to under European legislation as a “juniper-flavoured spirit drink”, is the ideal accompaniment for many meat dishes and harmonises with bay leaves, garlic, thyme, fennel and pepper.

    If a friendly bartender at one of the top-class bars is so delighted by your thyme spirit after one a tasting that he decides to use it in a mixology competition, that’s a sign that all the effort paid off, from optimally harvested, aroma-rich raw material, through to time-consuming manual crushing and special maceration of the tiny thyme leaves, to the especially careful distillation of the sensitive ingredients. This produced an essential oil with the phenolic monoterpenes thymol and carvacrol as its main components. As the key aroma, the green, spicy, slightly flowery and cooling nuances of the thymol are responsible for the characteristic thyme aroma. Up to 250 species belong to the genus Thymus, but only two, including the “vulgaris” used by us, are authorised for use in the production of the pharmaceutical drug “Thymi herba” according to the European pharmacopoeia. The drug was already used in ancient Greece. Nowadays it is accepted as a traditional herbal medicinal product that can help to treat bronchitis and catarrh in the upper airways and inflammation of the mouth mucosa, for example. But now – after this excursion into the world of thyme – let us go back to our spirit made from the same herb. It blends all the complex and Thymus vulgaris aromas with the wonderful restrained sharpness of the alcohol and jazzes up savoury and sweet dishes, such as ice cream, and also drinks. But try adding it to champagne!

    Essential oils are crucial ingredients that can be extracted and distilled with alcohol. They can have quite a complex composition. The quantitative amount of a single component, however, does not necessarily reflect its importance in the overall flavour. This means that “the more, the better” doesn’t apply in this case. Sometimes a substance found in small quantities is much more important for the perceived aroma. In the case of the star anise, nature followed the adage and decided that the essential oil would mainly consist of trans-anethole. With its lingering sweet, liquorice-like, warm herby, spicy to slightly peppery notes, it also dominates our spirit made from organic Vietnamese star anise. Like fennel, bronze fennel, basil and tarragon, the oil also contains estragole (i.e. methyl chavicol). Something that all these plants have in common is a similar, pattern of components of the essential oil, which also differ in that each has its own unique variation and justification, which is also reflected in our spirits. Our star anise spirit will add that special something to jams, creamy soups (carrot, pumpkin), game, beef, fish or poultry dishes, desserts and cocktails, and not only during the Christmas season.
