    It had to be Ceylon cinnamon from Sri Lanka. Only organic whole sticks were good enough for us. It’s not hard to distinguish between Ceylon cinnamon and Chinese cinnamon (Cinnamomum cassia) because the latter is mainly obtained from a thick layer of bark, which curls at the ends while drying and therefore does not form a closed stick. Ceylon cinnamon only consists of very thin layers of bast, several of which are pushed into each other for drying, which makes it possible to create a closed stick with a cigar-like cross-section. Ceylon cinnamon also has a finer aroma and the thin layers preserve it for much longer than is the case with Chinese cinnamon. The constituents of the essential oil are also significantly different. Cheaper cinnamon varieties such as Chinese cinnamon contain coumarin, which brings those woodruff-like notes. On the other hand, in our spirit made from Ceylon cinnamon, cinnamic aldehyde is in the foreground and eugenol is also an important ingredient. You can smell and taste it, whether it is enjoyed neat or used to add a special touch to pastries or cakes, desserts and jams, cocktails or mulled wine, tea or Asian dishes.

    The orange is a hybrid (indicated by the “x” in the Latin name) of a mandarin and a pomelo. It originally came from Southeast Asia – the North German name Apfelsine means “apple from China” – and was likely introduced to Sicily by the Arabs. The balance between the juice aroma and essential oil from the orange peel is a crucial element of this fruity, refreshing spirit. This is why it’s so time-consuming to produce: as with most other citrus fruits, the juice is pressed after the orange zest has been finely peeled. This is done because both ingredients contribute quite different flavours to the bouquet and taste experience. Limonene is the dominant note in the peel oil, while fresh orange juice contains more than 200 components, with esters, aldehydes and terpene hydrocarbons dominating the overall aroma. When blended, they make this orange spirit something unique and unforgettable, whether you drink it neat or mixed, or eat it drizzled over ice cream as a dessert.

    The Latin species name “punctulatus” means ‘dotted’, and indicates that, after flowering, this Eriocephalus species has particularly dense and eye-catching white seeds resembling mini snowballs. That is why it is called “snowbush” in the Cape. Its strong aromatic smell is due to a high content of aromatic terpenes. These are also used to produce an essential oil marketed as Cape chamomile oil, used in the perfume and cosmetics industry and aromatherapy. Like German chamomile oil, Cape chamomile oil has a characteristic blue colour. The blue dye chamazulene is derived from the component matricin during the steam distillation to produce both chamomile oils. However, the colour is light-sensitive and quickly turns green and then amber when exposed to light. The colour is the only thing the German and Cape chamomile oils have in common, however. Cape chamomile oil has a completely different chemical composition consisting of approximately 200 different components. The smell of the Cape chamomile oil is characterised by floral, fruity (apple, pineapple) and chamomile-like notes similar to Roman chamomile. The description alone makes one eager to taste this rare distillate – whose aromas were perfectly blended in the alcohol by using extremely gentle distillation – and to exploit its potential as a flavouring in food and drinks.

    There are numerous legends about oriental wheat, which is also called kamut. It has been found as offerings in the tombs of the Egyptian Pharaohs. It is sometimes also called “prophet’s wheat” after the legend that Noah carried the grain on board the ark. We can say for sure that oriental wheat is a very ancient grain. According to the latest genetic research, it is a natural hybrid of durum wheat and so-called Polish wheat. It originated in the north-eastern province of Khorasan in Iran, hence the name. The grains of oriental wheat are three times as big as those of normal wheat, have a golden-yellow colour and a slightly buttery, nutty flavour. In the nose and on the palate, the resulting mild Korn grain spirit recalls fresh bread underpinned by fruity notes.

    In contrast to strawberries and raspberries, the blackcurrant is a berry in the botanical sense, i.e. an indehiscent fruit formed from an ovary, with an outer skin that remains fleshy when ripe. Its German name ‘Johannisbeere’ reflects the fact that the fruit ripens around the 24th of June, the feast day of St John the Baptist. At that time, the berries are plump and spherical with a dark blue to inky violet colour because of the high anthocyanin content in the skin. This colour is also characteristic of the famous French liqueur Crème de cassis. Rather than a sweet, colourful variety, we’ve opted for a fruity, clear variety with a fantastic aroma. We used perfectly ripened fruit from our southern German farmer to extract an eau-de-vie (by maceration and distillation), i.e. using five parts blackcurrants to one part alcohol. During the slow distillation, the flavouring substances are over-distilled with the alcohol, in particular 4-methoxy-2-methyl-2-butane thiol, a substance to which the human nose is particularly sensitive. Its pleasant, desirable smell of blackcurrants can be detected in very low quantities; however, in higher concentrations, our receptors suddenly start detecting unpleasant notes. There are definitely none of these in our eau-de-vie. On the contrary, it has compelling aromas that are typical of the fruit, which make it ideal for mixing, adding a special touch to desserts or drunk neat for pure pleasure.

    Citrus fruits are a large family that is highly complex from a botanical point of view. The advent of molecular genetic analysis led on several occasions to presumed relationships needing to be corrected. This was also the case for the clementine, a relatively recent citrus fruit. It was previously thought to be a hybrid of a mandarin and a Seville orange (bitter orange). However, in 2002, scientists in Corsica discovered that it is a hybrid of the Mediterranean mandarin and the orange. It takes its name from a French monk, Clément Rodier. This hybrid occurred randomly in 1902 in his mandarin plantation in a village near Oran in Algeria. Since then, cultivation of the clementine has outstripped that of mandarins because it has few if any pips — which is what customers want — and its peel is much thicker and therefore more resistant to cold and pressure, which gives it a longer shelf life. Our Sicilian citrus fruit specialist went back on the road for us and brought us freshly harvested clementines. Just one week after the harvest, we were able to process the aromatic fruit and immortalise its essence in our spirit. Although the composition of the essential oil — which has limonene as its main ingredient — is similar to that of the mandarin, the nuanced differences in composition make the clementine spirit a totally different product. It will pamper the palate when poured over desserts, in cocktails or drunk neat at room temperature.

    Basil, also called king herb, has been historically documented since the 12th century in Europe, where it is widely used as a culinary spice, especially in the Mediterranean, because it stimulates the appetite and digestion. Since then, it has also become very popular elsewhere as a component of pesto, the ideal accompaniment for pasta and Caprese – a delicious combination of tomato and mozzarella. Many different-tasting varieties exist. Depending on the variety, origin and time of harvest, the essential oil sometimes has very different concentrations of, for example, strongly aromatic monoterpenes – linalool, cineol, eugenol and methyl chavicol (also called estragole), with the latter accounting for the special basil aroma with green, tea, mint and hay-like notes. After months of experimentation, we found the ideal combination by varying the types and the processing. Our basil spirit is pure pesto on the nose and palate, and therefore ideal for adding that special touch to food (pasta with pesto and caprese, of course!), dressings, desserts (be sure to try it with strawberries) and also flavouring cocktails. It’s also pure pleasure drunk neat.

    In addition to the pepper variety we selected for our distillate No 520 Indian Black Pepper, another variety stood out so strongly in our experiments on account of its aroma that we have also included it in our product range. The reason for this pepper’s very special aroma is the way it is cultivated and harvested, as well as its origin. The fruit of pepper plants is usually harvested green and unripe. It turns black when dry due to the enzymatic oxidation of o-diphenols. However, this particular pepper is left on the plant and only harvested with its red pericarp when it is ripe. This gives it a much more subtle flavour. It comes from the Periyar National Park, located in the spice region of Kerala in southern India. In the green, sheltered hills of Kumily, where there is also a tiger reserve, pepper is not cultivated in the usual way, as a monoculture in a plantation. Instead, smallholders plant older and now endangered pepper varieties, scattered throughout the jungle. The pepper is picked by hand from March to May. After drying in the sun and further selection by hand, the pepper has truly earned its exotic name. This production method leads to an essential oil content that is twice as high as conventionally grown black pepper, with b-caryophyllene, a-pinene and limonene as the main components. You can smell and taste it. We hope all those creative talents out there will have lots of fun deciding between the two varieties — not an easy choice!

    Cilantro belongs to the botanical family Apiaceae, to which many aromatic plants belong. In the case of cilantro, two different plant parts are used in the kitchen: the leaves and the seeds, with the leaves mainly used in Asian cuisine and the seeds in European cuisine. This posed the question as to which one we should use as the raw material for our spirit? Following a series of tests, we opted for both, but rather than combining them in a single product, we created two different ones. The result was two spirits that couldn’t be more different. For this spirit, we used the cilantro leaves. The leaves produce a very intense essential oil – though only in small quantities – which has a variety of aliphatic aldehydes (including decanal and dodecanal), which are responsible for the typical smell and taste. Its aroma is characterised as musky, lemony or even “soapy-herbaceous”. And it’s precisely this aroma that we reproduced 1:1 in our cilantro leaf spirit, which truly has the intense fresh cilantro smell and taste. Cilantro aficionados will enjoy drinking this distillate neat. But cilantro spirit is also ideal for mixing, cooking and, of course, perfuming.

    Most grain eaux-de-vie are based on conventional rye or wheat. This cereal stopped being a natural plant thousands of years ago, to become a grass modified by humans. We deliberately chose ancient grain varieties as the basis of our eaux-de-vie to give our products a more intense taste. This wild rye is an ancient rye from the Kraichgau region in southwestern Germany, and its name reflects its cultivation in forest clearings. In some areas, it is called St John’s Rye, a reference to its early sowing date around the feast of St John (24th June). Its grains are significantly smaller than ordinary rye grain, but otherwise very similar. Our Korn eau-de-vie made from forest wild rye is significantly stronger than eaux-de-vie made from wheat grain and has a totally individual note.

    The name “Blue Velvet” will remind almost everyone of the popular song from the 1950s, sung by Bobby Vinton, which catapulted to number one on the charts in 1963, as well as the more recent cover by Lana Del Rey. “Blue Velvet” is also the spelt enveloping the grain of this original pure spelt to protect it against predators. In the specialist literature, Blue Velvet was first mentioned in the mid-1850s, but its cultivation did not become widespread. Nowadays it is a protected exclusive product of our grain supplier and we have distilled a first-class grain spirit from it. Because spelt is a species of the wheat genus, our Korn eau-de-vie has a similar taste, i.e. it is mild with bready, fruity echoes.

    Salad cucumber or gherkin? That’s the question! When we’re asked a question like this, we answer it properly. It was obvious that we would produce our cucumber spirit using the famous gherkins from nearby Spreewald. But the blind tastings that form part of our systematic product development ultimately gave preference to the cucumber in terms of smell and taste. Once we’d opted for cucumbers, there was no question that they had to come from the place in Germany where they grow best, and which has a long-standing tradition – the island of Reichenau on Lake Constance. Of organic quality, naturally. Botanically speaking, the cucumber is a fruit (berry with a hard rind), however, the aroma is the reason why it’s treated as a vegetable and used not for desserts but as part of a savoury main course, e.g. as a salad. This is also why it is assigned to the crop group of fruiting vegetables. The aldehydes (E,Z)-2,6-nonadienal and (E)-2-nonenal are responsible for the typical cucumber aroma. They provide the foundation for this truly refreshing spirit, which recalls fresh summer aromas and can be enjoyed at any time of the year, either drunk neat or used for cooking or mixing. Incidentally, the bitter substances often found in cucumbers are mainly triterpene glycosides, so-called cucurbitacins. But don’t worry: these bitter substances are non-volatile and therefore not contained in our spirit.

    It was around the mid-1980s that this fruit first began to be used in “Nouvelle Cuisine” before becoming a “pink pepper-hype” a few years later. Almost every chef used it, and this spice which was a novelty in this country, began to be over-used to the point where it disappeared as rapidly as it had arrived. Which is rather a shame because the pink berries… no wait… first we have to clear up some misunderstandings: Botanically speaking, the fruits of the Brazilian peppertree are not berries, but stone fruits. They are bright red and brittle when fully ripened. And even though they come from the peppertree, they are not peppers, but are added to colourful pepper mixtures simply because of their colour. They completely lack sharpness but have a mild, sweetish resinous aroma. This is produced by an essential oil with around 17 components from mono- and sesquiterpenes, with Δ3-caren, limonene, a-pinene and a-phellandrene being the main ones. Our spirit, which is typical of the variety, is ideal for dessert recipes, meat, fish and vegetable dishes. In blind tastings with bartenders and friends, everyone agreed that the distinctly mild aromatic smell and taste of the pink peppercorn spirit is – in addition to using it for cooking – best enjoyed in a glass neat or as a cocktail ingredient.

    The black elderberry is a common plant. That’s why there are numerous myths about it. It was considered to be the tree of life and so it was planted in many gardens. It is found in lowland forests, beside paths and roads and on riverbanks. In around June, it looks stunning as it has countless fragrant umbrella-shaped white umbels. In autumn, these turn into small, black, juicy berry-like stone fruits, which gave the black elderberry the epithet nigra (Latin: “niger” = black). Based on many years of experience, dried flowers of the black elderberry are also used as a traditional herbal medicinal product. That’s why the quality of the elderflower (Sambuci flos) is specified in the European Pharmacopoeia. Elderflowers are used to relieve the initial symptoms of a cold. There has not as yet been any research into which of its many ingredients (flavonoids, hydroxycinnamic acid derivatives, triterpenes, gums and essential oil) account for its diaphoretic and expectorant effect. The essential oil contributes over 60 components to the remarkable flavour that our spirit aimed to reproduce. These include cis-rose oxide (floral, rose, powdery), nerol oxide (green, floral, minty), hotrienol (sweet, tropical), nonanal (green, fresh, lemon), linalool (floral, citrus) and a-terpineol (floral), as well as hexanal and 3-(Z) hexenol (both fresh, green, and grassy). Our farmers in Mecklenburg-Western Pomerania collected the wild flowers by hand. We used the fresh flowers to distil a wonderfully characteristic elder spirit. It has a range of flavours that will make you want to enjoy it neat, or use it to create spectacular cocktails and desserts.

It may be that there are basic instincts in us, deeply rooted in our genes, that make us stay still at such times and heighten our perception. The scents that surround us during these carefree moments are deeply embedded in our olfactory memories. That’s why many people associate the fragrance of hay with a summer stroll through the fields and meadows of their childhood. We aimed to preserve this exact smell in a spirit so as to have it handy at all times. For this, we macerated and very gently distilled sun-dried organic mountain meadow hay from the Rhoen UNESCO Biosphere Reserve. The result was a spirit that far exceeded our expectations in terms of capturing the olfactory memory. Our spirit made from  mountain hay blends the soothing smell of summery dried hay with the scents of aromatic herbs and fragrant wild grasses as only found in unspoiled nature. It will transport you to a freshly mowed meadow in the twinkling of an eye. The typical smell of hay when the grass is dried is due to the coumarins, which are also found in woodruff, tonka beans and Chinese cinnamon. These have glycosidic bonds in the living plant to some extent and are only released when the sugar is separated as the plants wither. Coumarin with its sweet, herbaceous and spicy fragrance and vanilla-like taste also provides inspiration for creative talents who want to use this unique spirit in the kitchen.

    The small town of Ribera on the southern coast of Sicily stands on a plateau between the Magazzolo and Verdura valleys. The soil in this area is extremely rich in nutrients, and the climate is ideal for growing citrus fruit. “Arancia Rossa di Sicilia“ is an EU-protected designation of origin for Sicilian blood oranges originating from here. There are different varieties, such as Sanguinelle, Moro and also our Tarocco. With its well-balanced sugar-acid ratio, the Tarocco is one of the most popular Sicilian blood oranges. Important aromatic compounds in the juice are short- to medium-chain aldehydes and various esters. The peel produces an essential oil with limonene as the main ingredient. The juice and oil composition differ according to the variety and ripeness, which means the taste of the distillates also varies. When gently swished around the mouth, our spirit made from Tarocco blood oranges leaves a pleasant aftertaste – reminiscent of the freshest, most aromatic blood oranges – that can be relished for several minutes. It is best enjoyed neat and at room temperature. Experienced bartenders will also be very enthusiastic about using this spirit in new, refreshing cocktails. Last but not least, a hint of this spirit adds the crowning glory to desserts, ice cream or cheesecake.

    The idea for our Christmas spirit came from an Advent tradition: every year on the last Sunday of Advent, friends come round for an Advent coffee gathering, at which mother’s unsurpassed home baked Christmas cookies and, of course, our home-made mulled wine, are served. The blend of a good red wine and around a dozen spices is regularly greeted so enthusiastically that we obviously had to use this recipe to create a spirit. However, this turned out to be a lot more difficult than we initially imagined. As the taste of red wine as an important stabilising basis is absent, the individual components emerged too strongly in our early attempts. That’s why after our internal tastings, we kept changing the quantities of ingredients. But in the end, the pharmacist’s meticulousness and patience paid off and resulted in a beautifully balanced spirit, which legally must be labelled as a spirit drink. Christmassy aromas of rich citrus, cinnamon, various classic gingerbread spices and, of course, a hint of vanilla, are smoothly blended in our particularly fine alcohol. You’re guaranteed to enjoy the Christmas spirit even in summer!

    Opinions vary about beetroot, a beet from the Amaranthaceae family: people either love it or hate it. Even aficionados have to admit its earthy and slightly musty smell is special. This is due to geosmin, a bicyclic alcohol, which does not actually come from the beetroot itself, but from certain soil bacteria that are transferred to the beet when it is peeled. However, people who are not fans of beetroot may like the smell of geosmin because it is the reason for the pleasant odour in the atmosphere when it starts raining after a long period of dryness. The human sense of smell is particularly sensitive to geosmin: We can “sniff” a single geosmin molecule among 10 billion air molecules. So, it’s hardly surprising that our spirit made from the beetroot variety Robuschka releases this key aroma. Robuschka has a fruity-sweet taste and was processed organically by us. The resulting spirit embodies the typical aromas of the variety and will assert itself anywhere where the literally down-to-earth beetroot taste is required.

    According to English reports, the Blenheim Orange apple variety was discovered in 1740 as a chance seedling at Woodstock near Blenheim Palace in Oxfordshire, England, the country estate of the Duke of Marlborough, from where it gets its name. The name of the estate also recalls a historically important battle for England during the War of the Spanish Succession in 1704, fought at Blindheim (District of Dillingen, Bavaria), which became anglicised as Blenheim. Reinette is the name given to a group of apples with dense, later pithy flesh and a distinctive flavour. The “golden” in the name refers to the fruit’s colour. The Blenheim used to be a prized, widely cultivated species, but is now only available sporadically. It used to be grown mainly for its taste. We obtained our Golden Reinette from the edge of the Spreewald — right next door so to speak — from a farm owned by the same family for more than 120 years. They have orchards of old high-stem apple trees with only two trees of each variety. The owner personally delivered these extremely aromatic apples to us immediately after the harvest. We mashed and distilled them after fermentation. The result, after months of storage, was a wonderfully characteristic apple brandy with slightly green, fruity notes, almost like breathing in the air under a tree of ripe apples, and slight echoes of pear.

    No one knows exactly where Constantinople Apple Quince comes from. The name suggests Turkish roots, as Constantinople is the former name of modern Istanbul. In any case, of all the numerous varieties of quince, we specifically wanted this particular one as it is said to have a particularly subtle aroma. We had a real stroke of luck, because a Mecklenburg farmer came to us of his own accord a few weeks before the harvest and offered us precisely this variety from his certified organic farm. What he brought to our yard in October surpassed our expectations: the most intensely fragrant, highly aromatic fruit we had ever seen. They were harvested at optimum ripeness and therefore no longer had the fine fuzz, which has to be removed before processing from fruit that is harvested unripe and then post-ripened because it has bitter taste. We immediately washed, crushed and slowly fermented and cooled the firm fruit to capture its full complexity in our distillate, which contains the subtle fragrance of the aromas released. Chemically, it is a blend of more than 80 esters, ketones, alcohols and aldehydes. Following gentle distillation and extensive maturation, we obtained a wonderful eau-de-vie typical of the variety, with sweet and flowery, slightly spicy notes on the nose and palate. A truly world-class eau-de-vie with a lingering finish that blends the complexity of the quince aroma to perfection.

    Most people are probably familiar with mate in the form of a tea, or even in the form of a cult cold drink that emerged from the hacker scene. Green unroasted mate leaves are also used as traditional herbal remedies for mental and physical fatigue. The major difference between our spirit and the drinks or the medicinal application: our spirit contains no purines because caffeine, theophylline and theobromine are non-volatile under distillation conditions. All the aromas are volatile, and it is these that are responsible for the mellow, sweet-and-sour, earthy-smoky smell and taste, which evokes wilting leaves. That’s what makes our spirit using roasted organic mate leaves truly amazing! Just like with coffee, the roasting process is important to produce the typical aromas. Maillard reactions form the flavour components typical of the variety, such as pyrroles and pyrazine. These are then also transferred to our spirit during distillation. But don’t be put off by the chemical terminology: these processes occur in every frying pan and many dishes would be pretty bland without them! So, use the spirit in cocktails, as a shot in tea or drunk neat.

    The English word celery was first used in the 17th century, originally starting with an s and later on with a c. It comes from the French céleri, which in turn can be traced back to the ancient Greek term for this plant species: selinon. Celery belongs to the botanical family Apiaceae (Umbelliferae), known for its essential oil content. The second part of the Latin name, “graveolens”, means “strong-smelling”. Several varieties are distinguished within this species, including celery and celeriac. The characteristic sweet, hot-spicy scent of the essential oil is due to approximately 16 different methylphthalides (esp. sedanenolide and 3-butylphthalide), and terpenes such as limonene, a-selinene and b-selinene. Due to the varying proportions of these essential oil components in the different varieties, we opted for a spirit made from both, celery and celeriac, organic, of course. Because when you compare them, the difference in taste and smell quickly become obvious. Both are equally suitable for use in the kitchen to add flavour to soups, salads and meat dishes, but they can also be enjoyed neat.

    A herb that tastes like porcini? We were somewhat dubious when our supplier sent us a sample of this herb that we had never come across before. However, the shiny, crisp and succulent leaves, with a slightly spinach-like texture, gave off a delicate unusual mushroom-like aroma somewhat resembling that of oyster mushrooms, champignons and porcino mushrooms. And we were sold on it, because this wonderful herb was crying out to be used in a spirit. Following a series of tests, we eventually came up with the perfect recipe, which enabled us to perfectly blend the mushroom flavours into the alcohol. Rungia klossii – the Latin name for the mushroom, originates in the Highlands of Papua New Guinea, where it is used as a vegetable by the locals and is also a valuable source of protein, as well as being used in traditional medicine. We recommend using this spirit with anything that goes well with the mushroom-like notes, such as soups, casseroles, stews, salads, sandwiches, wok dishes and, naturally, mushroom dishes. But please note: as with the fresh leaves, you should only add our spirit to a dish when it’s cooked or almost ready, so as not to dull the beautiful aromas with too much heat!

    Virtually no tarragon is grown in Germany, which is why demand is met by imports. Following weeks of research, we eventually found a supplier in Israel. He supplied us with the higher-grade “aromatic” variety of the two available types (“Russian” and “aromatic” tarragon), harvested before they began budding, because that’s when the essential oil content is at its peak. This complex composite oil consists of 2/3 estragole (methyl chavicol) as well as ocimene, sabinene and eugenol etc., which give the herb its spicy-aromatic, anise-like aroma with hints of woodruff and a bitter-sweet taste. These ingredients are the reason tarragon is used as a culinary spice, but they are also responsible for its digestion stimulating properties. It’s these special ingredients that made us enthusiastic about creating a tarragon spirit. The result is a distillate with an authentic tarragon aroma that anyone who is not averse to an anise note will also enjoy drinking neat. This distillate also gives people who enjoy experimenting in gourmet kitchens, bars and elsewhere an opportunity to unleash their creativity. The Latin name ”dracunculus” (“Little Dragon/Snake”) is probably the reason for the erroneous belief that tarragon leaves are an antidote for snakebite.

    The aroma of the red-fleshed grapefruit, picked from the tree just a week earlier, which we processed into our grapefruit spirit, was absolutely amazing. We had never encountered such highly aromatic fruit. So, we weren’t surprised that we were able to use it to manufacture a product with an unusually intense smell and taste. The main ingredient of grapefruit oil in terms of quantity is limonene. However, the typical grapefruit smell is due to (+)-nootkatone, a bicyclic sesquiterpene with an odour threshold of 0.001 ppm. This means we can detect the scent of a single nootkatone molecule in a billion air molecules. But the juice is also a significant contributor to the aroma, mainly with thiols, aldehydes, ketones and esters, but not bitter substances, which fortunately remain in the stillage during distillation. The grapefruit is a hybrid of an orange and a pomelo. It shouldn’t be equated with the latter, as they are completely different fruits.

    There are three fennel varieties: Sweet or spice fennel, bitter or wild fennel, and vegetable fennel. The fruit of the first two is used in the kitchen and also in pharmacy as traditional herbal medicinal products. Sweet and bitter fennel fruits largely contain the same essential oil, which is responsible for the characteristic taste. Only the quantities vary: sweet fennel contains considerably less of the bitter fenchone, which means the main component of the essential oil – the sweetish trans-anethole – is more pronounced. They both also contain estragole. They are both used as herbal medicines for the treatment of coughs, etc. On the contrary, vegetable fennel, which is a stalk vegetable, is only used for cooking. For our spirit, a super fresh tray of great organic vegetable fennel was delivered to us at the craft distillery the day after it was harvested. After extensive processing, we slowly and gently distilled the macerate to obtain a spirit that has incredible fennel and anise notes, which are somewhat subtler than those from the fruit. This distillate is great drunk neat, but also ideal for mixing and adding flavour.
