    Every first Friday of the month, a guided tour of our distillery starts at 2 pm. It gives you a look behind the scenes. It ends with a tasting of our distillates, and you’ll receive our cocktail book to take home. You should allow approximately 90 minutes for the whole event.

    This herb first arrived in kitchens outside Italy from the 1950s onwards with the triumphal march of the pizza. Who hasn’t tried to bake a pizza like the ones in the Italian restaurant at home? Oregano is one of the ingredients of the tomato sauce along with basil, garlic and other spices. Carvacrol, which is the main flavouring substance of the essential oil, gives it a sharp to piquantly spicy, slightly woody taste. Harvesting the plant at the right time – when it starts to flower – is important to obtain as much essential oil as possible, and that’s exactly when our German supplier struck. The result is a spirit that one looks forward not only to spraying on oven fresh pizza, but to give a completely new twist to antipasti and pasta dishes and cocktails, either on its own or with other Mediterranean spirits. However, oregano is not just used in Mediterranean cuisines: oregano (or its Mexican pendent) is used with cumin as an ingredient of chilli con carne, which would also undoubtedly benefit from a touch of our spirit.

    Sometimes the name is sufficient to arouse curiosity about the raw material. And that’s certainly true of this herb, though it’s also somewhat symbolic for DSM, which aims to throw old habits overboard… In fact, the Boston Tea Party of 1773 – an act of protest against British colonial policy on the part of colonists, which ultimately ended in the American War of Independence – would probably never have happened without wild bergamot. The plant was used by Native Americans from the region of Oswego as a medicinal herb and also for seasoning and tea. As tea made from the flowers has a surprisingly similar taste to Earl Grey tea flavoured with bergamot oil, the dissatisfied colonists were able to throw an entire shipload of this hated tea – transported from China by the English Crown – into Boston Harbour without actually suffering any losses as they had a substitute. We used the leaves, which emit a powerful fragrance that lingers on the fingers after even just a brief touch, and combines with the sharpness of the mint with soft citrus notes accompanied by the herbal notes of sage and thyme produced by thymol and other terpenes.     The unmistakably strong strawberry aroma of this ancient and popular variety compares extremely favourably with the newer varieties, which is why we selected it for this eau-de-vie. The Korona is a very high-yield, semi-early variety, which flowers shortly after the end of the winter and is therefore somewhat sensitive to late frosts. Fortunately, this was not an issue in 2018, due to the warm spring temperatures. This meant the big, juicy-sweet fruit of the Korona strawberry were able to ripen fully for our eau-de-vie produced by maceration and distillation. In June 2018, in accordance with the relevant rules, we extracted five parts of the fruit that was specially harvested for us at a Demeter farm near Berlin with one part alcohol. We then carefully distilled this macerate to release the full effect of the strawberry aroma on the nose and the palate. Perfect for those who like drinking it neat or to add that special touch to desserts and cocktails. Connoisseurs probably don’t find it important to know that the main flavour component responsible for the great taste of this eau-de-vie – along with more than 300 other substances – is something with a complicated-sounding name: 2,5-dimethyl-4-hydroxy-2H-furan-3-one (furaneol for short).

    Is that from Persia or Majorca? Some of our product names may sometimes make would-be connoisseurs furrow their brows. But there’s a simple explanation: our organic limes come from the popular tourist island, hence the name “Mallorcan”. In addition to the Persian lime (Citrus x latifolia), there is also the key lime (Citrus x aurantifolia). These are two different hybrids, which differ in appearance and in the composition of their essential oils: the key lime is only about the size of a ping-pong ball and has lots of pips, whereas the Persian lime is larger and seedless. Research into the composition of the essential oils revealed sufficient differences to explain the different smell and taste of the two lime varieties. Everyone can make up their own mind as to which they prefer. We eventually opted for the Persian lime, which we carefully macerated and then distilled slowly following extraction. The result is a world-class spirit with subtle bitter notes and sweet citrus aromas that are ideal for adding that special touch to a caipirinha, daiquiri or mojito. Or it can also be drunk neat as, with its complex aromas, it almost resembles a cocktail on its own. Contrary to popular belief, limes are not green lemons, but an independent citrus species that also turns yellow when ripe. The adjective “Persian” probably refers to the fact that it spread from Asia to Europe along ancient Persian trade routes

    We were quite surprised at how different juniper from various sources can taste, but in the end, it was easy to reach a decision. Because fresh berries from Bosnia and Herzegovina have a particularly fine aroma that is reminiscent of gin. The classic sweet-spicy, aromatic and slightly resinous-bitter conifers notes unfold, complemented by a hint of lemon, as if the berries had been mixed with a little lemon peel. The basis of this special blend is the essential oil, containing, among other things, the terpenes a-pinene, sabinene, myrcene, limonene, terpinene-4-ol and b-pinene. Of course, German juniper berries were also among the contenders, as the “cypresses of the north” are characteristic of nearby Lüneburg Heath. But, for complex aromas, the Mediterranean product, which benefits from a higher number of sunshine hours, is well ahead of the game. One should point out that juniper berries are false fruits, botanically speaking, because after pollination, the three uppermost scale leaves grow around the ovules like a fleshy fruit, and these form single-hull so-called seed cones which can be seen when you look at fresh juniper berries. In addition to pure enjoyment, this distillate, which is referred to under European legislation as a “juniper-flavoured spirit drink”, is the ideal accompaniment for many meat dishes and harmonises with bay leaves, garlic, thyme, fennel and pepper.

    Allspice is a plant from the myrtle family. It has a whole series of names including allspice, pimento, myrtle pepper and Jamaica pepper (after its country of origin). Tropical Central America is the home of the evergreen pimento tree. From there, Christopher Columbus brought the spice to Europe. This also had an influence on the name. As the kernels look like pepper, the Spaniards thought the allspice plant was a pepper plant. That’s the origin of the genus name, derived from the Spanish pimienta (which translates as “pepper”). Allspice berries lose their taste when ripe. So they are harvested when they have the most flavour, before they ripen fully. The berries are then washed and dried. As allspice ferments, it produces dark brown to reddish brown seeds. The seeds have a very characteristic smell that is a combination of cloves, nutmeg and cinnamon. The taste resembles that of cloves with a mild peppery sharpness. The fruits contain an essential oil that has a balsamic to spicy smell. Its main component is eugenol, which is also contained in cloves. The complexity of the essential oil is due to a total of about 40 components, including β-caryophyllene and 1,8-cineole. No wonder we couldn’t resist using it to produce a distillate. It’s impressively versatile and will add that special something to pastries, soups, sauces, marinades, fish and meat dishes, as well as a Bloody Mary.

    “Give it some pep”. A phrase that means to make something more lively or interesting. We decided to take it literally. It took some time to find really good organic black pepper. We decided on Indian pepper, because that’s where the king of spices originally comes from. Before goods began to be transported by ship from Asia, pepper had to be brought to Europe overland. The oldest evidence of trade with Europe north of the Alps is the Bremen peppercorn, a white pepper seed, found in 1989 during excavations in Bremen city centre. It dates from the 13th century and is proof of the trade relations between the Hanseatic city and South Asia in the High Middle Ages. The Piper nigrum plant, which yields this delicious hot and spicy pungent fruit twice a year, is a liana with tendrils winding up trees to a height of 10 metres. The black colouration of the green fruit that is harvested unripe occurs when it is dried due to the enzymatic oxidation of o-diphenols. The sharpness of the piperine during distillation remains in the stillage, which means the spicy, sweet, woody, resinous flowery aroma of the essential oil – tasting of pine and smelling like lemon – comes to the fore in our spirit. The perfect choice for drinking neat, seasoning almost any type of food and adding the finishing touch to cocktails.

    Magnolias are a plant genus of the Magnoliaceae family consisting of around 250 species originating in East Asia or America. Its evolution probably dates back over 100 million years. The French botanist Plumier discovered the magnolia in the United States when he was researching new plants for Louis XIV. He dedicated it to his famous compatriot, the botanist Pierre Magnol, by giving it the name “magnolia”. The first of its genus was brought to France in 1740 by a dealer who travelled back and forth between Europe and America. Since then, it has become a plant that is cultivated in many gardens around the world. This is hardly surprising, as magnolias in bloom are among the most beautiful plants in the world. This magnificent tree with its luxuriant flowers can quite rightly be called the “Queen of the Woods”. The tulip magnolia that we use is the most widespread. Luckily, we were able to harvest the flowers of a magnolia tree in our own garden. Who else would allow their own tree to be stripped of all its beautiful blooms, whose appearance and fragrance awaken the joys of spring? A fragrance that blends mild creamy floral and transparent fruity, aquatic and slightly spicy to honeyed notes with a delicate hint of citrus. This makes our magnolia spirit as sublime and exclusive as the blooms themselves. It’s worth experimenting with it. You can also do that yourself with magnolia petals: they taste delicious raw in salads or fried in batter!

    It wasn’t easy to establish contact with our Piedmontese organic farmer: there was no response to our repeated calls and emails. However, once we translated the emails into Italian, things started to move fast, so it was only the language barrier: he wasn’t able to understand English. Which was lucky: because hazelnuts from this part of northern Italy are the best in the world, as we were able to confirm for ourselves. Following time-consuming and tedious roasting in our craft distillery, maceration and slow distillation, we tasted a pure hazelnut spirit with a truly incomparable aroma, the likes of which we’ve never previously experienced. Hazelnut praliné notes along with subtle roasting aromas and slightly sweetish hints, blended to a slightly buttery-fatty consistency, which is very soft on the palate and finish. And all without any further fining additives or ageing in barrels, which is all too often the case with this product. Because other than the water used to dilute it to drinking strength, no adulterating substances are added to our spirit before or after distillation. The most important flavour component is filbertone (5-methylhept-2-ene-4-one), and one can detect its scent even in the smallest quantities. All we have to say is: cheers! Enjoy it neat, sprinkled over dessert or in a cocktail!

    It had to be Ceylon cinnamon from Sri Lanka. Only organic whole sticks were good enough for us. It’s not hard to distinguish between Ceylon cinnamon and Chinese cinnamon (Cinnamomum cassia) because the latter is mainly obtained from a thick layer of bark, which curls at the ends while drying and therefore does not form a closed stick. Ceylon cinnamon only consists of very thin layers of bast, several of which are pushed into each other for drying, which makes it possible to create a closed stick with a cigar-like cross-section. Ceylon cinnamon also has a finer aroma and the thin layers preserve it for much longer than is the case with Chinese cinnamon. The constituents of the essential oil are also significantly different. Cheaper cinnamon varieties such as Chinese cinnamon contain coumarin, which brings those woodruff-like notes. On the other hand, in our spirit made from Ceylon cinnamon, cinnamic aldehyde is in the foreground and eugenol is also an important ingredient. You can smell and taste it, whether it is enjoyed neat or used to add a special touch to pastries or cakes, desserts and jams, cocktails or mulled wine, tea or Asian dishes.

    The Latin species name “punctulatus” means ‘dotted’, and indicates that, after flowering, this Eriocephalus species has particularly dense and eye-catching white seeds resembling mini snowballs. That is why it is called “snowbush” in the Cape. Its strong aromatic smell is due to a high content of aromatic terpenes. These are also used to produce an essential oil marketed as Cape chamomile oil, used in the perfume and cosmetics industry and aromatherapy. Like German chamomile oil, Cape chamomile oil has a characteristic blue colour. The blue dye chamazulene is derived from the component matricin during the steam distillation to produce both chamomile oils. However, the colour is light-sensitive and quickly turns green and then amber when exposed to light. The colour is the only thing the German and Cape chamomile oils have in common, however. Cape chamomile oil has a completely different chemical composition consisting of approximately 200 different components. The smell of the Cape chamomile oil is characterised by floral, fruity (apple, pineapple) and chamomile-like notes similar to Roman chamomile. The description alone makes one eager to taste this rare distillate – whose aromas were perfectly blended in the alcohol by using extremely gentle distillation – and to exploit its potential as a flavouring in food and drinks.

    The orange is a hybrid (indicated by the “x” in the Latin name) of a mandarin and a pomelo. It originally came from Southeast Asia – the North German name Apfelsine means “apple from China” – and was likely introduced to Sicily by the Arabs. The balance between the juice aroma and essential oil from the orange peel is a crucial element of this fruity, refreshing spirit. This is why it’s so time-consuming to produce: as with most other citrus fruits, the juice is pressed after the orange zest has been finely peeled. This is done because both ingredients contribute quite different flavours to the bouquet and taste experience. Limonene is the dominant note in the peel oil, while fresh orange juice contains more than 200 components, with esters, aldehydes and terpene hydrocarbons dominating the overall aroma. When blended, they make this orange spirit something unique and unforgettable, whether you drink it neat or mixed, or eat it drizzled over ice cream as a dessert.

    The “officina” is a place where high-quality goods are manufactured as well as the adjoining sales area. It is the name used by pharmacists for their workplace in the pharmacy. This is referred to by the Latin epithet “officinalis”, which means “for medicinal purposes”. Rosemary leaves are used internally to treat digestive disorders and applied externally to treat rheumatic diseases, etc. A variety of substances are responsible for its effect, these include tannins (mainly rosemarinic acid), flavonoids, bitter substances, saponins, resin and the essential oil containing, among other things, 1,8-cineol, a-pinene, camphor, camphene and borneol. The essential oil is what makes it eminently suitable for distilling a spirit of outstanding quality. But it was a long, hard road. We only succeeded after numerous attempts and even more tastings. Did the developers of “Aqua Reginae Hungariae” – Queen of Hungary Water have a similar experience? This is a rosemary spirit made by distilling rosemary flowers with alcohol that appeared in the 14th century and was reputedly one of the first distilled perfumes. According to the legend, it was supposed to be a true fountain of youth. Our rosemary spirit naturally can’t compete with this. But we’re convinced that the opposite is also true: Queen of Hungary Water cannot compete with our very intense, authentic rosemary spirit, which is extremely popular not only in the kitchen, but also in the bar scene.

    When a top Berlin chef asks if you’re planning to produce a spirit made from dill, that’s the perfect motivation for starting product development. The first question was what raw material to use, because either dill weed or its seeds can be used. In this case, we relied on our nose and on science: the fresh herb has subtler notes, due to the various stages of ripening of the dill. Once it has flowered, when the seeds start to ripen, the proportion of (S)-(+)-carvone in the essential oil increases. This is responsible for the characteristic aroma of caraway oil. It overshadows other flavour components, such as limonene, a- and b-phellandrene and 3,6‐dimethyl‐2,3,3a, 4,5,7a‐hexahydrobenzofuran (also called dill ether, responsible for the typical dill smell and key aroma). The secret of success lies in harvesting the dill at just the right moment. Further processing also has to be performed with care and skill. This is the only way to capture the potent, fresh, sweet spicy, peppery and aromatic smell in our spirit, with its undertones that are reminiscent of spearmint and nutmeg. We’re curious to find out what our special customer’s illustrious guests will think of the pickled fish he’s planning to make with the spirit. We’re also eager to discover its many other potential uses, both in the kitchen and in cocktails. There should be no shortage of ideas: dill has been used as a medicinal and aromatic plant since the time of the Egyptians.

    In contrast to strawberries and raspberries, the blackcurrant is a berry in the botanical sense, i.e. an indehiscent fruit formed from an ovary, with an outer skin that remains fleshy when ripe. Its German name ‘Johannisbeere’ reflects the fact that the fruit ripens around the 24th of June, the feast day of St John the Baptist. At that time, the berries are plump and spherical with a dark blue to inky violet colour because of the high anthocyanin content in the skin. This colour is also characteristic of the famous French liqueur Crème de cassis. Rather than a sweet, colourful variety, we’ve opted for a fruity, clear variety with a fantastic aroma. We used perfectly ripened fruit from our southern German farmer to extract an eau-de-vie (by maceration and distillation), i.e. using five parts blackcurrants to one part alcohol. During the slow distillation, the flavouring substances are over-distilled with the alcohol, in particular 4-methoxy-2-methyl-2-butane thiol, a substance to which the human nose is particularly sensitive. Its pleasant, desirable smell of blackcurrants can be detected in very low quantities; however, in higher concentrations, our receptors suddenly start detecting unpleasant notes. There are definitely none of these in our eau-de-vie. On the contrary, it has compelling aromas that are typical of the fruit, which make it ideal for mixing, adding a special touch to desserts or drunk neat for pure pleasure.

    We would have appreciated using German porcino, but we are not allowed to. In some countries, because they are a protected species, porcino may only – if at all – be collected by private individuals in small household quantities for their own consumption. As porcino cannot be cultivated, they can only be obtained in sufficient quantities for our purposes by wild collection in controlled areas. In Europe, these regions are found mainly in Romania and the countries of former Yugoslavia, such as Bosnia and Herzegovina. There are rich stocks and the harvest is carried out in a sustainable manner, which means porcino will continue to delight future generations. To give pleasure to people today, we were able to capture in our spirit the wonderful walnut-like, earthy and mushroom-like aromas of organic porcino by particularly gentle maceration and distillation. It is, of course, an ideal ingredient for fine cuisine and can also be enjoyed neat by mushroom enthusiasts. For those interested in chemistry, by way of a postscript: using the analytical procedures of headspace chromatography with a sniffing port (i.e. a sniffer detector) it was possible to differentiate between the different substances responsible for the typical – especially when cut – fungal odour of porcino and identify them by their smell. It is a complex mixture of disparate ketones and alcohols, of which 1-octene-3-ol is the most important in terms of quantity.

    Cilantro belongs to the botanical family Apiaceae, to which many aromatic plants belong. In the case of cilantro, two different plant parts are used in the kitchen: the leaves and the seeds, with the leaves mainly used in Asian cuisine and the seeds in European cuisine. This posed the question as to which one we should use as the raw material for our spirit? Following a series of tests, we opted for both, but rather than combining them in a single product, we created two different ones. The result was two spirits that couldn’t be more different. For this spirit, we used the cilantro leaves. The leaves produce a very intense essential oil – though only in small quantities – which has a variety of aliphatic aldehydes (including decanal and dodecanal), which are responsible for the typical smell and taste. Its aroma is characterised as musky, lemony or even “soapy-herbaceous”. And it’s precisely this aroma that we reproduced 1:1 in our cilantro leaf spirit, which truly has the intense fresh cilantro smell and taste. Cilantro aficionados will enjoy drinking this distillate neat. But cilantro spirit is also ideal for mixing, cooking and, of course, perfuming.

    Most grain eaux-de-vie are based on conventional rye or wheat. This cereal stopped being a natural plant thousands of years ago, to become a grass modified by humans. We deliberately chose ancient grain varieties as the basis of our eaux-de-vie to give our products a more intense taste. This wild rye is an ancient rye from the Kraichgau region in southwestern Germany, and its name reflects its cultivation in forest clearings. In some areas, it is called St John’s Rye, a reference to its early sowing date around the feast of St John (24th June). Its grains are significantly smaller than ordinary rye grain, but otherwise very similar. Our Korn eau-de-vie made from forest wild rye is significantly stronger than eaux-de-vie made from wheat grain and has a totally individual note.

    Local sourcing of fresh fruit and vegetables is in. If you want to manufacture high-quality spirits, the raw materials must be of the highest quality, harvested when perfectly ripe, and processed as quickly as possible. Because a spirit can only be as good as the raw materials it’s made from. In the case of asparagus, the issue of origin was quickly resolved: when you have such famous and delicious asparagus right on your doorstep, you have to grab it. A small asparagus producer from the town of Beelitz close to Berlin told us about a particularly aromatic variety of the noble sprouting vegetable. After washing and crushing it, we macerated it for a while. During the extraction process, the substances which produce the asparagus taste and smell are resolved. These are mainly sulphur-containing substances, such as asparagusic acid and its methyl esters, and 1,2-dithiol in boiled asparagus. Unfortunately, the body converts these sulphur compounds into substances that don’t smell very nice, as any asparagus eater will already have experienced. But this obviously doesn’t prevent one enjoying the delicacy. Although the season is extremely short, our spirit gives asparagus lovers the opportunity to add a touch of asparagus to dishes such as soups, sauces or dressings. And even in bars, our asparagus spirit is used in some cocktails.

    The “officinalis” in the Latin name of common sage indicates its suitability for medicinal use. Because of their antibacterial effect, alcoholic extracts of the leaves are used for gargling, etc. We are however only interested in its use as a kitchen spice. Our extremely aromatic wild sage comes from Baden-Württemberg in southwest Germany, and was harvested in the early hours of the morning, carefully packed and immediately refrigerated in order to undergo elaborate processing at our Berlin craft distillery the next morning. We began by picking the leaves from the stems, washing them by hand and finally cutting them up with a knife. The quantity required meant several days engaged in manual work, but in view of the outcome, every minute was well worth it. It’s a first-class sage spirit, which has been well received by aficionados, bartenders and chefs alike. The typical flavour is due to the main components of the essential oil – in particular a– and b-thujone, camphor and 1,8-cineol – and ancillary components, especially b-pinene, borneol and bornyl acetate and some sesquiterpenes, such as b-caryophyllene.

    In addition to the pepper variety we selected for our distillate No 520 Indian Black Pepper, another variety stood out so strongly in our experiments on account of its aroma that we have also included it in our product range. The reason for this pepper’s very special aroma is the way it is cultivated and harvested, as well as its origin. The fruit of pepper plants is usually harvested green and unripe. It turns black when dry due to the enzymatic oxidation of o-diphenols. However, this particular pepper is left on the plant and only harvested with its red pericarp when it is ripe. This gives it a much more subtle flavour. It comes from the Periyar National Park, located in the spice region of Kerala in southern India. In the green, sheltered hills of Kumily, where there is also a tiger reserve, pepper is not cultivated in the usual way, as a monoculture in a plantation. Instead, smallholders plant older and now endangered pepper varieties, scattered throughout the jungle. The pepper is picked by hand from March to May. After drying in the sun and further selection by hand, the pepper has truly earned its exotic name. This production method leads to an essential oil content that is twice as high as conventionally grown black pepper, with b-caryophyllene, a-pinene and limonene as the main components. You can smell and taste it. We hope all those creative talents out there will have lots of fun deciding between the two varieties — not an easy choice!

    This spirit should not be confused with our German cilantro spirit, distilled using the leaves of this herb. Though once you’ve tried the cilantro seed spirit or even better – both – you’ll immediately find it’s impossible to mistake one for the other. Because in the seeds, it is the monoterpenes, such as linalool, g-terpinene, a-pinene, p-cymene, camphor and geranyl acetate that are dominant in the essential oil, rather than the aldehydes found in the leaves. All these and many other components combine to produce this wonderful natural combination. Linalool, the main component, is responsible for the fresh, floral notes; camphor contributes an aromatic, woody, eucalyptus-like scent and geranyl acetate produces a rose-like aroma. This complexity also makes cilantro seeds interesting for manufacturing gin and, in fact, they are used in almost every gin along with juniper. However, Coriandri fructus – the Latin name in the pharmacopoeia – is capable of even more: it was already used for medical purposes in ancient times. We now know that the seeds have, among other things, anti-bacterial and anti-spasmodic properties and also aid digestion. These characteristics naturally only apply to its correct use as a therapeutic herb. Our distillate uses only the best aromas typical of the variety, perfectly blended in alcohol. It can be used in cocktails and cooking – or anything else the connoisseur deems appropriate.

    The name “Blue Velvet” will remind almost everyone of the popular song from the 1950s, sung by Bobby Vinton, which catapulted to number one on the charts in 1963, as well as the more recent cover by Lana Del Rey. “Blue Velvet” is also the spelt enveloping the grain of this original pure spelt to protect it against predators. In the specialist literature, Blue Velvet was first mentioned in the mid-1850s, but its cultivation did not become widespread. Nowadays it is a protected exclusive product of our grain supplier and we have distilled a first-class grain spirit from it. Because spelt is a species of the wheat genus, our Korn eau-de-vie has a similar taste, i.e. it is mild with bready, fruity echoes.

    The old Canoneta orange variety is an indigenous species that originates from its current location in the Sóller valley on Mallorca and is only found there. Named after its breeder – the village doctor Metge Canonet – the so-called mother of all Sóller oranges, is usually harvested in March and April. It doesn’t look especially appealing, which is why it didn’t sell very well. The recent return to older, local varieties is the reason for the increased interest in cultivating Canoneta again. We were impressed by their “inner qualities”, especially the sweet juice, which has a slightly sour note, and the aromatic peel. So, to create this spirit, we preserved a batch of the freshest produce from a small family-run orange plantation.

    It was around the mid-1980s that this fruit first began to be used in “Nouvelle Cuisine” before becoming a “pink pepper-hype” a few years later. Almost every chef used it, and this spice which was a novelty in this country, began to be over-used to the point where it disappeared as rapidly as it had arrived. Which is rather a shame because the pink berries… no wait… first we have to clear up some misunderstandings: Botanically speaking, the fruits of the Brazilian peppertree are not berries, but stone fruits. They are bright red and brittle when fully ripened. And even though they come from the peppertree, they are not peppers, but are added to colourful pepper mixtures simply because of their colour. They completely lack sharpness but have a mild, sweetish resinous aroma. This is produced by an essential oil with around 17 components from mono- and sesquiterpenes, with Δ3-caren, limonene, a-pinene and a-phellandrene being the main ones. Our spirit, which is typical of the variety, is ideal for dessert recipes, meat, fish and vegetable dishes. In blind tastings with bartenders and friends, everyone agreed that the distinctly mild aromatic smell and taste of the pink peppercorn spirit is – in addition to using it for cooking – best enjoyed in a glass neat or as a cocktail ingredient.

    The black elderberry is a common plant. That’s why there are numerous myths about it. It was considered to be the tree of life and so it was planted in many gardens. It is found in lowland forests, beside paths and roads and on riverbanks. In around June, it looks stunning as it has countless fragrant umbrella-shaped white umbels. In autumn, these turn into small, black, juicy berry-like stone fruits, which gave the black elderberry the epithet nigra (Latin: “niger” = black). Based on many years of experience, dried flowers of the black elderberry are also used as a traditional herbal medicinal product. That’s why the quality of the elderflower (Sambuci flos) is specified in the European Pharmacopoeia. Elderflowers are used to relieve the initial symptoms of a cold. There has not as yet been any research into which of its many ingredients (flavonoids, hydroxycinnamic acid derivatives, triterpenes, gums and essential oil) account for its diaphoretic and expectorant effect. The essential oil contributes over 60 components to the remarkable flavour that our spirit aimed to reproduce. These include cis-rose oxide (floral, rose, powdery), nerol oxide (green, floral, minty), hotrienol (sweet, tropical), nonanal (green, fresh, lemon), linalool (floral, citrus) and a-terpineol (floral), as well as hexanal and 3-(Z) hexenol (both fresh, green, and grassy). Our farmers in Mecklenburg-Western Pomerania collected the wild flowers by hand. We used the fresh flowers to distil a wonderfully characteristic elder spirit. It has a range of flavours that will make you want to enjoy it neat, or use it to create spectacular cocktails and desserts.

    The plant with this curious name grows on shaded mountain slopes and forest edges in the Eastern and Western Cape. The genus name – Helichrysum – derives from the Greek “helios” (sun) and “chrysos” (gold) and alludes to the colour of the flowers. The species name “petiolare” means “stalked” and refers to the striking leaves. The leaves are silvery-grey and roughly heart-shaped with velvety hairs and a faint liquorice aroma, which was evidently strong enough to account for its name. Traditionally, a tea is made from the leaves, used, among other things, for treating respiratory diseases (especially by Rastafarians). The compound essential oil has anti-inflammatory properties and is made up of approximately 70 different components with 1,8-cineol, b-caryophyllene, a-pinene and p-cymene being the main ones. We didn’t select the plant on account of these properties, but for its aroma, which we were unfamiliar with. One definitely gets a subtle hint of liquorice among the rather complex aromas. A highly interesting spirit, which will find its way into kitchens and bars.

    The small town of Ribera on the southern coast of Sicily stands on a plateau between the Magazzolo and Verdura valleys. The soil in this area is extremely rich in nutrients, and the climate is ideal for growing citrus fruit. “Arancia Rossa di Sicilia“ is an EU-protected designation of origin for Sicilian blood oranges originating from here. There are different varieties, such as Sanguinelle, Moro and also our Tarocco. With its well-balanced sugar-acid ratio, the Tarocco is one of the most popular Sicilian blood oranges. Important aromatic compounds in the juice are short- to medium-chain aldehydes and various esters. The peel produces an essential oil with limonene as the main ingredient. The juice and oil composition differ according to the variety and ripeness, which means the taste of the distillates also varies. When gently swished around the mouth, our spirit made from Tarocco blood oranges leaves a pleasant aftertaste – reminiscent of the freshest, most aromatic blood oranges – that can be relished for several minutes. It is best enjoyed neat and at room temperature. Experienced bartenders will also be very enthusiastic about using this spirit in new, refreshing cocktails. Last but not least, a hint of this spirit adds the crowning glory to desserts, ice cream or cheesecake.
