    It wasn’t easy to establish contact with our Piedmontese organic farmer: there was no response to our repeated calls and emails. However, once we translated the emails into Italian, things started to move fast, so it was only the language barrier: he wasn’t able to understand English. Which was lucky: because hazelnuts from this part of northern Italy are the best in the world, as we were able to confirm for ourselves. Following time-consuming and tedious roasting in our craft distillery, maceration and slow distillation, we tasted a pure hazelnut spirit with a truly incomparable aroma, the likes of which we’ve never previously experienced. Hazelnut praliné notes along with subtle roasting aromas and slightly sweetish hints, blended to a slightly buttery-fatty consistency, which is very soft on the palate and finish. And all without any further fining additives or ageing in barrels, which is all too often the case with this product. Because other than the water used to dilute it to drinking strength, no adulterating substances are added to our spirit before or after distillation. The most important flavour component is filbertone (5-methylhept-2-ene-4-one), and one can detect its scent even in the smallest quantities. All we have to say is: cheers! Enjoy it neat, sprinkled over dessert or in a cocktail!

    There’s a simple reason why we don’t use the pith – the white layer of the citrus fruit immediately below the oil cells: It is of no value to our spirits because it does not contain any volatile flavouring substances. It consists mainly of pectin, a constituent of gelling agents. When ripe, mandarin pith is broken down into a network of fibres, referred to in Latin as “reticulata”, i.e. “netlike”. The pith breakdown in ripe mandarins is the reason they are so easy to peel. However, for us, they mean a lot of work because we go to the trouble of using a knife to scrape away the pith inside every single peel. But this has paid off because we’ve succeeded in producing a unique and particularly pure mandarin spirit. The aroma of the mandarin spirit is determined by the cyclic monoterpenes limonene and γ-terpinene, and only very small quantities of N-methyl anthranilic acid methyl ester, which give it its characteristic bouquet. A spirit that can be drunk neat at any time, which immediately makes one dream of summery-southern climes.

    The small town of Ribera on the southern coast of Sicily stands on a plateau between the Magazzolo and Verdura valleys. The soil in this area is extremely rich in nutrients, and the climate is ideal for growing citrus fruit. “Arancia Rossa di Sicilia“ is an EU-protected designation of origin for Sicilian blood oranges originating from here. There are different varieties, such as Sanguinelle, Moro and also our Tarocco. With its well-balanced sugar-acid ratio, the Tarocco is one of the most popular Sicilian blood oranges. Important aromatic compounds in the juice are short- to medium-chain aldehydes and various esters. The peel produces an essential oil with limonene as the main ingredient. The juice and oil composition differ according to the variety and ripeness, which means the taste of the distillates also varies. When gently swished around the mouth, our spirit made from Tarocco blood oranges leaves a pleasant aftertaste – reminiscent of the freshest, most aromatic blood oranges – that can be relished for several minutes. It is best enjoyed neat and at room temperature. Experienced bartenders will also be very enthusiastic about using this spirit in new, refreshing cocktails. Last but not least, a hint of this spirit adds the crowning glory to desserts, ice cream or cheesecake.

    Even though the name suggests otherwise, the raspberry is not a berry! Some of you may recall the cumbersome term “aggregation of drupes” from biology lessons. This tells us that the raspberry is made up of many small stone fruits formed of individual carpels. There are countless varieties of raspberry with red, yellow and black fruiting bodies, which can be divided into summer and autumn raspberries. The former includes our Tulameen, a variety obtained in 1980 in Vancouver, Canada by crossing Nootka and Glen Prosen. We’ve chosen it because it is very aromatic and tastes delicious. The large, sweet, attractive fruits were harvested when particularly fresh towards the end of June 2018 by a farmer in Southern Germany in sufficient quantities for us to manufacture an eau-de-vie by maceration and distillation. We mixed five parts fruit with one part alcohol and, after the end of the maceration period, carefully distilled it to capture the full force of the rheosmin or raspberry ketone in our eau-de-vie. But it would be wrong to think that only one substance is responsible for the bombastic flavours of this spirit. Raspberry ketone may dominate, but it is just one of more than 200 substances that contribute to the flavour. Taste this classic drink neat, with dessert or in a sophisticated cocktail mix.

    The idea for our Christmas spirit came from an Advent tradition: every year on the last Sunday of Advent, friends come round for an Advent coffee gathering, at which mother’s unsurpassed home baked Christmas cookies and, of course, our home-made mulled wine, are served. The blend of a good red wine and around a dozen spices is regularly greeted so enthusiastically that we obviously had to use this recipe to create a spirit. However, this turned out to be a lot more difficult than we initially imagined. As the taste of red wine as an important stabilising basis is absent, the individual components emerged too strongly in our early attempts. That’s why after our internal tastings, we kept changing the quantities of ingredients. But in the end, the pharmacist’s meticulousness and patience paid off and resulted in a beautifully balanced spirit, which legally must be labelled as a spirit drink. Christmassy aromas of rich citrus, cinnamon, various classic gingerbread spices and, of course, a hint of vanilla, are smoothly blended in our particularly fine alcohol. You’re guaranteed to enjoy the Christmas spirit even in summer!

    People often ask us: “What is it, a raspberry or strawberry?” The answer is unequivocal, because, from a botanical point of view, it is a variety of the strawberry. The Latin suffix ‘Mieze Schindler’ refers to the wife of the director of the State Institute for Horticulture in Dresden, Professor Otto Schindler, who bred the variety from two other varieties almost a century ago. At first glance, it looks very similar to a raspberry and is probably the most aromatic strawberry variety with a distinctive wild strawberry aroma. Cultivating the strasberry calls for a degree of enthusiasm on the part of our Southern German strawberry farmer. This is because the variety is regarded as not very productive and the fruit is not particularly storable. Also, as it only forms female flowers, it has to be planted in between other varieties to ensure pollination. The particularly intense aroma is well worth the effort, however. The strasberries were harvested for us at peak ripeness and immediately deep frozen to preserve the flavours until maceration. From a botanical point of view, the strawberry is not a berry but an aggregate accessory fruit, i.e. the tasty red part of the strawberry is a false fruit because the actual fruits are the small nuts on the surface. But there’s nothing false about our spirit. It’s an exceptionally intense, aromatic strawberry spirit with the very special wild strawberry aromas of the ‘Mieze Schindler’ and therefore we recommend drinking it neat, or for use in the kitchen or bars.

    In contrast to strawberries and raspberries, the blackcurrant is a berry in the botanical sense, i.e. an indehiscent fruit formed from an ovary, with an outer skin that remains fleshy when ripe. Its German name ‘Johannisbeere’ reflects the fact that the fruit ripens around the 24th of June, the feast day of St John the Baptist. At that time, the berries are plump and spherical with a dark blue to inky violet colour because of the high anthocyanin content in the skin. This colour is also characteristic of the famous French liqueur Crème de cassis. Rather than a sweet, colourful variety, we’ve opted for a fruity, clear variety with a fantastic aroma. We used perfectly ripened fruit from our southern German farmer to extract an eau-de-vie (by maceration and distillation), i.e. using five parts blackcurrants to one part alcohol. During the slow distillation, the flavouring substances are over-distilled with the alcohol, in particular 4-methoxy-2-methyl-2-butane thiol, a substance to which the human nose is particularly sensitive. Its pleasant, desirable smell of blackcurrants can be detected in very low quantities; however, in higher concentrations, our receptors suddenly start detecting unpleasant notes. There are definitely none of these in our eau-de-vie. On the contrary, it has compelling aromas that are typical of the fruit, which make it ideal for mixing, adding a special touch to desserts or drunk neat for pure pleasure.

    Ethiopia is regarded as the home of coffee. Some 10 % of the nearly 100 million Ethiopians earn their livelihood somehow or other by cultivating coffee. This mocha bean, which comes from the region of Sidamo, is roasted by a small coffee roasting company in Bremen and its aqueous extract has been enjoyed by our pharmacist for many years at breakfast every morning. Which is why it was only natural to use this excellent coffee bean as the raw material for our coffee spirit. After a particularly gentle and customised roasting, the beans were cold macerated and then distilled equally gently to capture the fruity to delicately bitter, spicy aromas of the Sidamo mocha bean in our spirit. A special characteristic of Sidamo mocha is its distinctive, slightly perfumy note with a hint of Darjeeling tea. From a chemical point of view, this is due to lots of very different roasting aromas, with 2-furfurylthiol considered the key aroma. All in all, we succeeded in creating a wonderful authentic coffee spirit with a character all its own from the Sidamo mocha. It should be enjoyed neat, though star chefs will be eager to use it in desserts and other dishes. It’s also very popular with bartenders.

    Young, bright green spruce shoots generally grow in May and should be no longer than a bone of the little finger. The shoots were hand-picked by our farmers in Mecklenburg-Western Pomerania and macerated immediately at the distillery. After that, patience is needed. Experience has shown that particularly lengthy maceration is extremely beneficial for this spirit made from young spruce shoots. The reason is that the predominant components of the essential oil in the young shoots (unoxidized terpenes) take longer to dissolve during the maceration process we use. This is required to extract the whole range of components. Only what is released by the needles can pass into the distillate during the subsequent distillation. However, the wait more than paid off. The freshly macerated tips produced an exceptionally green and fruity to fresh and spicy distillate with a forest aroma and hints of lemon. It matured significantly during storage and also gained in complexity. Harvesting shortly after sprouting means the proportion of oxidized monoterpenoid ester bornylacetate, with its very strong pine aroma, is less pronounced. The notes of unoxidized monoterpenes such as a- and b-pinene and limonene therefore became more prominent. These are responsible for the aroma profiles above. But enough dry theory: the proof of the pudding is in the eating. So it’s up to the mixologists, chefs and other creative people.

    Most grain eaux-de-vie are based on conventional rye or wheat. This cereal stopped being a natural plant thousands of years ago, to become a grass modified by humans. We deliberately chose ancient grain varieties as the basis of our eaux-de-vie to give our products a more intense taste. This wild rye is an ancient rye from the Kraichgau region in southwestern Germany, and its name reflects its cultivation in forest clearings. In some areas, it is called St John’s Rye, a reference to its early sowing date around the feast of St John (24th June). Its grains are significantly smaller than ordinary rye grain, but otherwise very similar. Our Korn eau-de-vie made from forest wild rye is significantly stronger than eaux-de-vie made from wheat grain and has a totally individual note.

    The unmistakably strong strawberry aroma of this ancient and popular variety compares extremely favourably with the newer varieties, which is why we selected it for this eau-de-vie. The Korona is a very high-yield, semi-early variety, which flowers shortly after the end of the winter and is therefore somewhat sensitive to late frosts. Fortunately, this was not an issue in 2018, due to the warm spring temperatures. This meant the big, juicy-sweet fruit of the Korona strawberry were able to ripen fully for our eau-de-vie produced by maceration and distillation. In June 2018, in accordance with the relevant rules, we extracted five parts of the fruit that was specially harvested for us at a Demeter farm near Berlin with one part alcohol. We then carefully distilled this macerate to release the full effect of the strawberry aroma on the nose and the palate. Perfect for those who like drinking it neat or to add that special touch to desserts and cocktails. Connoisseurs probably don’t find it important to know that the main flavour component responsible for the great taste of this eau-de-vie – along with more than 300 other substances – is something with a complicated-sounding name: 2,5-dimethyl-4-hydroxy-2H-furan-3-one (furaneol for short).

    This orange variety produced by natural crossing is very low in acidity and tastes much sweeter than ordinary oranges. The low acidity also makes it suitable for people with a sensitive stomach, and children love it. The aromatic flesh is tender and juicy and is therefore also ideal for squeezing. The pronounced vanilla aroma documented during sensory profile analyses is the reason we selected this variety as the basis for a spirit. Even though the distinctive aroma is rather subtle, this spirit has quite a different smell and taste from its equivalent obtained from a classic orange. We highly recommend drinking it neat at room temperature. It can be enjoyed at any time of the year. However, it goes really well in a cocktail too, with a dash of champagne, for example.

    As every child knows, blood oranges obviously have nothing to do with blood, other than the dark red colour of the flesh and sometimes also the peel, but this colour only occurs when the night temperatures drop below 10 °C. Blood oranges are the result of a mutation centuries ago. Unfortunately, as the dyes are non-volatile, none of the beautiful colour of the fruit is transferred to our spirit during distillation. However, what are volatile are the key aromas such as limonene, the aldehydes hexanal, octanal, decanal (i.e. with 6, 8 and 10 carbon atoms) and β-sinensal with its citrus fresh, sweetish smell, and octyl acetate and neryl acetate. The latter has a sweet, flowery smell reminiscent of oranges and roses. These are what give our spirit the typical blood orange taste. Just listing these wonderful aromas makes one imagine melting it on the tongue or enchanting your guests by drizzling it over delicious vanilla ice cream.

    The orange is a hybrid (indicated by the “x” in the Latin name) of a mandarin and a pomelo. It originally came from Southeast Asia – the North German name Apfelsine means “apple from China” – and was likely introduced to Sicily by the Arabs. The balance between the juice aroma and essential oil from the orange peel is a crucial element of this fruity, refreshing spirit. This is why it’s so time-consuming to produce: as with most other citrus fruits, the juice is pressed after the orange zest has been finely peeled. This is done because both ingredients contribute quite different flavours to the bouquet and taste experience. Limonene is the dominant note in the peel oil, while fresh orange juice contains more than 200 components, with esters, aldehydes and terpene hydrocarbons dominating the overall aroma.     When purchasing raw materials, luck is also an important factor. In the case of the lemon grass, we were extremely lucky: our buyer scoured Thai markets to find the most aromatic lemon grass. And he came up trumps, as you can smell and taste when you enjoy this outstanding spirit. Its strong, intensely fresh, somewhat “green” lemon aroma is mainly due to a mixture denoted as citral of two isomers, monoterpene aldehyde geranial and neral, with smaller amounts of b-myrcene and numerous other components. They create a spirit with an unparalleled lemon freshness and naturalness, which prompts one to ask what it can’t be used with, rather than vice versa. It is ideal for pure pleasure, for example, in Asian food, where its aromas contribute that special something. It adds a subtle lemon touch to dressings, jams, salads and desserts, and lends an exotic hint to drinks such as herbal tea or cocktails. The grass also has other properties which explain its traditional use in other parts of the world. It is said that the flowers used to be smoked by shamans on Lake Tanganyika to induce dreams that enabled them to predict the future.

    The plant with this curious name grows on shaded mountain slopes and forest edges in the Eastern and Western Cape. The genus name – Helichrysum – derives from the Greek “helios” (sun) and “chrysos” (gold) and alludes to the colour of the flowers. The species name “petiolare” means “stalked” and refers to the striking leaves. The leaves are silvery-grey and roughly heart-shaped with velvety hairs and a faint liquorice aroma, which was evidently strong enough to account for its name. Traditionally, a tea is made from the leaves, used, among other things, for treating respiratory diseases (especially by Rastafarians). The compound essential oil has anti-inflammatory properties and is made up of approximately 70 different components with 1,8-cineol, b-caryophyllene, a-pinene and p-cymene being the main ones. We didn’t select the plant on account of these properties, but for its aroma, which we were unfamiliar with. One definitely gets a subtle hint of liquorice among the rather complex aromas. A highly interesting spirit, which will find its way into kitchens and bars.

    If you are interested in our craft, or maybe even always wanted try distilling and even make your own personal gin, our workshop will be just right for you! In around 3.5 to 4 hours, we’ll teach you the basics of distillation – from preparing and cleaning the raw materials, to maceration or mashing, gentle distillation, ending with maturation and dilution to drinking strength. With expert guidance, you’ll distil your own spirit or gin in a small copper pot still, which you can then take home. We also serve a light meal. We’ll get in touch a week before the event, so that you can select the right distillate for you and we can start it up.

    Tastings & Workshops are only open to people over 18. If you are unable to attend a session, please phone us well in advance and we will no doubt be able to find a satisfactory solution.     When some friends invited us to attend their wedding near Sóller in Majorca, we discovered the Serra de Tramuntana for the first time and loved it. Particularly memorable were the incredibly aromatic lemons, which made fantastic jam. We knew right away that we had to have this fruit to create an equally aromatic spirit. Our supplier sources the widely grown Verna lemons from small, organic producers, who do not use any artificial treatments on the fruit during ripening or after the harvest. The main flavour carrier of our spirit is the key aroma of the lemon, citral (mixed isomers of the aldehydes geranial and neral). The main ingredients in terms of quantity are limonene, β-pinene and γ-terpinene. Genetically speaking, the different lemon types are hybrids of the bitter orange and the citron. With its clear, pure and vibrant lemony notes, this spirit is the perfect accompaniment wherever lemons or their juice are added: to fish dishes, summer salads, dressings, Mediterranean dishes and sour cocktails. It just enhances the lemony taste of the cocktails, as the lemon’s acidity is non-volatile, and our lemon spirit, therefore, isn’t sour.

    Salad cucumber or gherkin? That’s the question! When we’re asked a question like this, we answer it properly. It was obvious that we would produce our cucumber spirit using the famous gherkins from nearby Spreewald. But the blind tastings that form part of our systematic product development ultimately gave preference to the cucumber in terms of smell and taste. Once we’d opted for cucumbers, there was no question that they had to come from the place in Germany where they grow best, and which has a long-standing tradition – the island of Reichenau on Lake Constance. Of organic quality, naturally. Botanically speaking, the cucumber is a fruit (berry with a hard rind), however, the aroma is the reason why it’s treated as a vegetable and used not for desserts but as part of a savoury main course, e.g. as a salad. This is also why it is assigned to the crop group of fruiting vegetables. The aldehydes (E,Z)-2,6-nonadienal and (E)-2-nonenal are responsible for the typical cucumber aroma. They provide the foundation for this truly refreshing spirit, which recalls fresh summer aromas and can be enjoyed at any time of the year, either drunk neat or used for cooking or mixing. Incidentally, the bitter substances often found in cucumbers are mainly triterpene glycosides, so-called cucurbitacins. But don’t worry: these bitter substances are non-volatile and therefore not contained in our spirit.

    The black elderberry is a common plant. That’s why there are numerous myths about it. It was considered to be the tree of life and so it was planted in many gardens. It is found in lowland forests, beside paths and roads and on riverbanks. In around June, it looks stunning as it has countless fragrant umbrella-shaped white umbels. In autumn, these turn into small, black, juicy berry-like stone fruits, which gave the black elderberry the epithet nigra (Latin: “niger” = black). Based on many years of experience, dried flowers of the black elderberry are also used as a traditional herbal medicinal product. That’s why the quality of the elderflower (Sambuci flos) is specified in the European Pharmacopoeia. Elderflowers are used to relieve the initial symptoms of a cold. There has not as yet been any research into which of its many ingredients (flavonoids, hydroxycinnamic acid derivatives, triterpenes, gums and essential oil) account for its diaphoretic and expectorant effect. The essential oil contributes over 60 components to the remarkable flavour that our spirit aimed to reproduce. These include cis-rose oxide (floral, rose, powdery), nerol oxide (green, floral, minty), hotrienol (sweet, tropical), nonanal (green, fresh, lemon), linalool (floral, citrus) and a-terpineol (floral), as well as hexanal and 3-(Z) hexenol (both fresh, green, and grassy). Our farmers in Mecklenburg-Western Pomerania collected the wild flowers by hand. We used the fresh flowers to distil a wonderfully characteristic elder spirit. It has a range of flavours that will make you want to enjoy it neat, or use it to create spectacular cocktails and desserts.

    Opinions vary about beetroot, a beet from the Amaranthaceae family: people either love it or hate it. Even aficionados have to admit its earthy and slightly musty smell is special. This is due to geosmin, a bicyclic alcohol, which does not actually come from the beetroot itself, but from certain soil bacteria that are transferred to the beet when it is peeled. However, people who are not fans of beetroot may like the smell of geosmin because it is the reason for the pleasant odour in the atmosphere when it starts raining after a long period of dryness. The human sense of smell is particularly sensitive to geosmin: We can “sniff” a single geosmin molecule among 10 billion air molecules. So, it’s hardly surprising that our spirit made from the beetroot variety Robuschka releases this key aroma. Robuschka has a fruity-sweet taste and was processed organically by us. The resulting spirit embodies the typical aromas of the variety and will assert itself anywhere where the literally down-to-earth beetroot taste is required.

    The Buchu plant is a shrub indigenous to the South African Cape Mountains. According to the cargo manifest of the Titanic, there were eight bales of Buchu aboard the ship. People at the time were apparently enthusiastic about the aromas of Buchu, which had been distributed in England since the 18th century. It was called Noble’s Tea because of its price. Aqueous extracts of Buchu have been, and are still used by the San, a South African indigenous people, and are applied externally because of their anti-inflammatory effect. On the underside of the leaves of the Buchu bush we used there are numerous glands containing essential oil. The pure oil has a slightly fruity, peppermint-like smell reminiscent of turpentine. This is due to the menthone (also found in peppermint), isomenthone, y-diosphenol, diosphenol (both with a terpenic note), limonene, pulegone (minty, camphoraceous) and isopulegone. When the oil is diluted – as in our Buchu spirit – the mint and terpene-like notes are overshadowed by fruity blackcurrant notes. A small quantity of 8-mercapto-p-menthane-3-one is responsible for this. Interestingly, this compound is not found in blackcurrants and it intrigues the human nose even when heavily diluted. This detailed description of the Buchu aromas opens up countless ways of using this rare spirit by creative talent in kitchens and bars.

    Foodies and gourmets of the world rejoice; this spirit is absolutely incredible! The fragrance of the elongated leaves from our supplier of exceptional herbs was indescribably intense. By just slightly rubbing and cutting the verbena, an inevitable part of the processing, we were enfolded in a cloud of the freshest, most fruity lemon fragrance, which is why we very quickly overlaid it with alcohol because the flavours should be enjoyed in the spirit rather than simply creating a pleasant aroma during manufacturing. The raw material lives up to its Latin name citrodora. It is amazing how many members of the vegetable plant kingdom are blessed with the beautiful citrus aromas of citral without being even slightly botanically related to each other. But even more surprising is the fact that every single spirit produced from them has a completely different character when combined with the other aromas of the essential oil. In the verbena, it is mainly limonene, which also contributes its own lemony notes. Other than strongly recommending drinking it neat at room temperature for pure enjoyment, or topping it up with champagne, we’ll leave it up to the creative talents in award-winning kitchens and top-bars as well as connoisseurs to decide what else they can do with it.     The old Canoneta orange variety is an indigenous species that originates from its current location in the Sóller valley on Mallorca and is only found there. Named after its breeder – the village doctor Metge Canonet – the so-called mother of all Sóller oranges, is usually harvested in March and April. It doesn’t look especially appealing, which is why it didn’t sell very well. The recent return to older, local varieties is the reason for the increased interest in cultivating Canoneta again. We were impressed by their “inner qualities”, especially the sweet juice, which has a slightly sour note, and the aromatic peel. So, to create this spirit, we preserved a batch of the freshest produce from a small family-run orange plantation.

    It’s hardly surprising that a plant part like the ginger rhizome (underground stem) with such an intense taste has been used as a spice since ancient times by Indians and the Chinese, the inhabitants of its probable place of origin. But Zingiberis rhizoma (as the pharmaceutically applied rhizome is called in Latin) is also used for medicinal purposes. These include: promoting digestion and treating loss of appetite and travel sickness (interestingly, it is unlikely to be of much use on boat trips). These effects resulted in the ginger plant being named “Medicinal Plant of the Year 2018″ in Germany. This was largely irrelevant to us. All we were interested in was the characteristic aromatic smell and spicy taste with its earthy notes, which inspired us to create a spirit that has the typical ginger taste but is mild on the palate with a mellow aftertaste. Chinese ginger has an interesting flowery, lemony smell. After several weeks’ research, we managed to obtain a small batch of the best organic ginger from China and used it to create a spirit based on our vision. The predominant taste is ingredients of essential ginger oil, with the components zingiberene, b-bisabolene, sesquiphellandrene, ar-curcumene and citral. The latter is responsible, among other things, for the lemony echoes. The pungent components are non-volatile, which is why our ginger spirit does not display the pungency of raw ginger.

    Germanic tribes used to call neighbouring peoples with Roman roots “Walhaz”. These were the people who introduced them to the walnut, which they called “Welschnuss” to distinguish it from the domestic hazelnut. This is the origin of the name “walnut”. The walnut tree bears the Latin species epithet “regia” – meaning “royal” – because it is a truly amazing tree. Due to the tannin content, the leaves are used as a traditional herbal remedy in baths and compresses. Green walnut shells are also used to manufacture liqueur and hair dye. The cold-pressed oil from its seeds is used for cooking and in the cosmetics industry, and, last but not least, the delicious walnut kernels are a versatile, healthy foodstuff. Walnut trees flourish in the fertile black earth soils of Moldova, where seemingly endless walnut tree-lined avenues grace the landscape. That’s where we obtained the organic walnuts for our special walnut spirit, with flavours based on a variety of aliphatic alcohols and aldehydes produced by oxidative degradation of the polyunsaturated fatty acids contained in walnuts. We recommend drinking it neat for pure pleasure, using it in salad dressings and desserts, or for mixing.

    There are so many mints around the world that it was prophesied in the 9th century that anyone wishing to name all the species would also know how many fish swim in the Red Sea. Therefore, we’ll simplify the subject by just looking at peppermint. The leaves have long been used to treat various ailments, and also as an anticonvulsant. The name peppermint refers to a certain sharpness due to the high menthol content. Together with other components of the essential oil, menthol produces a penetrating, characteristic, pleasant aromatic smell and an equally pleasant, aromatic, camphor-like taste, initially burning, then with a cool aftertaste. This is also true of chocolate mint, which has blackish brown petioles that look very much like chocolate. However, the slightly different composition of the essential oil results in additional chocolate-like aromas, so this spirit gives an overall impression of the famous After Eight chocolate mints. That’s why it goes really well with all desserts (you must try it with ice cream!) or is ideal for adding an unusual touch to meat (game!) and fish dishes and, of course, cocktails. Our favourite option is simple and easy: drunk neat!

    The name ‘galangal’ can be confusing as it refers to four different plants of the ginger family. One of these – Alpinia officinarum or lesser galangal – has the epithet “officinalis” because of its pharmaceutical use to treat indigestion and loss of appetite. We use greater galangal or Alpinia galanga, also called the lengkuas in Indonesian. It is widespread in Southeast Asia, where it is also believed to aid digestion. Which explains why people like to use it in the kitchen, both there and here, in spicy pastes or soups, for example. Only the yellowish, woody rhizome (the rootstock that grows underground), the pale pink runners and the young stems are used. The sharpness of the greater galangal is caused by a resin that contains diarylheptanoids and phenylalkanones. That sharpness is prized, as are the aromatic components of the essential oil. These are b-bisabolene, 1,8-cineole, chavicol acetate, chavicol, eugenyl acetate, a-farnesene, methyl eugenol, b-caryophyllene, a-bisabolol, spathulenol, farnesyl acetate, and 4-hydroxycinnamyl acetate. The latter is responsible, among other things, for the sweet, almost cinnamon-like, spicy smell of the greater galangal. These properties are the reason we recommend adding our spirit to Asian dishes, desserts and (of course) cocktails.
