    Freshly harvested organic lemons from the Amalfi coast of Sorrento are the secret of this superb limoncello. Contrary to popular belief, no lemon juice is used in its production, but only the very finely zested peel of the lemon, which preferably does not have any albedo (the white under the peel) adhering to it, as it contains too many bitter substances. The peels, which are extracted for several weeks with our particularly mild neutral alcohol, are finally rounded off with sugar syrup so delicately that sweetness and lemon aroma harmonize perfectly on the palate. If you want to enjoy Limoncello in the style of an Italian, do so as an aperitif or digestive. Both the drinking glass covered with a layer of ice (e.g. champagne glass) and the Limoncello come from the freezer. Enjoy it ice-cold in small sips and exhale through the nose, whereby the aroma and aftertaste develop best. But avanti, avanti, drink the limoncello before it gets too warm! Although we recommend this kind of enjoyment, our Limoncello is also sinfully good in cocktails or with desserts.

    A Bloody Mary is considered by some contemporaries to be both a nutritious breakfast and a remedy for hang-over. As a very special variation of this classic, we recommend using our spirit of horseradish instead of vodka, which harmonizes wonderfully with the tomato juice, Worcestershire sauce and the other ingredients. The pungency transported by our horseradish spirit is due to various mustard oils, which are chemically isothiocyanates. These are produced when the horseradish is cut, which causes mustard oil glycosides contained in the horseradish, e.g. gluconasturtiin and sinigrin, to come into contact with the plant’s own enzyme myrosinase. The enzyme splits the glycosidic bond of the mustard oil glycosides by splitting off glucose, whereupon in the sugar-free part of the molecule a rearrangement to the volatile, mucous membrane irritating and pungent tasting mustard oils 2-phenyl ethyl isothiocyanate or allyl isothiocyanate takes place. The inclined reader can imagine the tearful scenery that accompanies the grating of horseradish to produce this spirit. But it is precisely this spiciness that makes horseradish so widely used in the kitchen for seasoning sauces, meat and fish dishes. The explanation that its German name “Meerrettich” is an indication of the foreign origin of horseradish, which “came to us by sea” (“Meer” translates into English as “sea”), seems rather unlikely in view of its origin in the Volga-Don region. It is more plausible that the word “Meer” formerly used in the sense of “bigger” originates from the size of the horseradish compared to the already known radish.

    The English word “peanut” already indicates the botanical relationship to peas. For although the name might suggest it, the peanut is not a nut, but belongs to the Faboideae family and thus to the legumes. For this reason, peanuts are more closely related to peas and beans than to nuts. The relationship can be recognized by the fact that peanuts do not have a hard shell, but ripen in a legume. We have very consciously selected the wild organic peanuts in raw vegetable quality, which we obtain 100 % natural, i.e. unroasted and unsalted from Indonesia, because they have a more original taste than the roasted peanut kernels from the supermarket. It is a wild variety that is cultivated by small farmers on half a hectare of land in mixed cultures according to ecological standards so that no pesticides are necessary. All processing steps are done by hand. Twice a year the organic peanut kernels are harvested and after harvesting they are dried in their shells in a special process and then cracked. The valuable red-brown striped seed skin remains largely intact. In order to enhance the taste of these pure, wild peanuts for our spirit production, we gently roasted them in our manufactory, freed them from the seed skins and then extracted and distilled them with our mild neutral alcohol. The result is a freshly roasted peanut aroma pure in the glass, which is mainly derived from 2-methyl-3-furanthiol with a roasted and meaty note and 2-acetyl-1-pyrroline and 2-propionyl-1-pyrroline with a popcorn-like note.

    Anyone who has ever carefully rubbed the skin of a yuzu fruit ripening in the southern sun will never forget this incomparable aroma: on the one hand, it is clearly recognizable as a citrus aroma, which is closest to a blend of the notes of lime, grapefruit and tangerine. But in its uniqueness, the yuzu cannot be compared to any of these fruits. Like the other citrus fruits, it belongs to the Rutaceae family and has probably been cultivated in China for many thousands of years. Today, it is mainly cultivated in Kochi Prefecture on Shikoku Island, the smallest of the four main Japanese islands. In addition, some producers in southern Spain have specialized in the exotic fruit, from where we also obtain our Yuzu. The plant grows very slowly and without grafting it takes more than 10 years until the trees, which are about 2-7 m high, produce fruit. The yuzu fruit contains very little juice because of the very numerous seeds. The peel and juice of both the still young green yuzu and the ripe yellow yuzu are used in the upscale cuisine for flavouring food and drinks and in the perfume industry. In our unfiltered spirit of the Spanish Yuzu, the full power of the exotic aromas of this very special fruit is concentrated. Its eight most important components are limonene, α-pinene, α- and β-phellandrene, myrcene, γ-terpinene, (E)-β-farnesene and linalool. However, the main taste difference from other citrus fruits is caused by yuzunone and yuzunol, which increase the balsamic, sweet and floral characteristics. We invite you to enjoy this olfactory and gustatory sensation in cocktails, with desserts, as an aromatic ingredient for cooking or pure.

    Jasminum officinale, or common jasmine, is one of over 600 flowering plants in the olive family. Originally from the Himalayas, Kashmir and southern China, the plant is now also cultivated in Spain, France and Romania. The perennial climber is known for its white flowers, which have an intense honey-like, sweet and floral fragrance with fruity, herbaceous notes. It is very important in the perfume industry, aromatherapy and the production of jasmine tea. The edible flower buds, both fresh and dried, have found a place in the kitchen and the bar. They are mostly used in desserts, but also in spice mixtures to enhance the floral notes of a dish. They can be blended perfectly with aniseed, basil, ginger, pink peppercorns and white pepper. Cocktail variants include the Jasmine Fizz or the Jasmine Martini. Our jasmine spirit makes it easy to use just the right amount, eliminating the need for jasmine oil, syrup or aqueous jasmine extract, which are costly and time-consuming to produce. More than 100 substances in the essential oil produced from the flowers are responsible for the typical jasmine scent. Jasmone, methyl anthranilate, indole, phytol, benzyl alcohol, benzyl acetate, benzyl benzoate and linalool are some of them. Jasmine blossoms contain the greatest amounts of these substances at night, which is why they are harvested then. An experienced picker can gather between 10,000 and 15,000 flowers in a single night. This also explains the high price of jasmine oil, which is also said to have aphrodisiac properties.

    Nomen est omen. Rarely can a naming be better understood, as in the case of the caramel tree originating from Japan and China, which is also known as the katsura. It is certainly noticeable in summer with its red leaf stalks, which stand out from the deciduous leaves. In autumn, its leaves show a splendid bright coloration from yellow to orange to carmine and scarlet red. Shortly before and during the fall of the leaves, the caramel tree finally reveals its name-giving secret: the colorful, falling leaves give off a beguiling scent between caramel, cotton candy, cinnamon and yeast cake, especially on humid days. And so it came about that we collected the leaves of the tree in light rain and, wrapped in the pre-Christmas scent, asked ourselves whether we would succeed in capturing precisely this characteristic in our spirit, which after all is the goal with all our spirits? And indeed, besides the fruity aromas that also characterize our spirit of autumn leaves (distillate N° 685), it shows nuances of the aromas during the fall of the leaves. But where do they actually come from? The characteristic smell of the caramel tree leaves is caused by maltol, a cyclic unsaturated ether found in caramel and malt. As studies have shown, its concentration rises abruptly during the period of leaf discoloration and has its highest value in leaves that are discolored in autumn. Despite all this, it remains a mystery whether nature is trying to achieve something with this elaborate spectacle or whether it is simply one of its whims.

    The buchu plant is native to South Africa.     Fortune really did favour the bold on this occasion. Poor harvests at our Sicilian citron farmers due to bad weather meant we were unable to produce our Distillate No 100 as planned. Just in time, we contacted a bergamot supplier, who was able to respond to our request for citron from Sorrento, an area near Naples famous for cultivating citrus fruit. As described for our Distillate No 100, the lemon is one of the three original citrus fruits, alongside the pomelo and the mandarin. All other species in the citrus genus that we know of today are the result of the hybridisation of these initial three. Able to grow as large as a volleyball, the plant’s fruit has an odd bumpy surface. Due to the fruit’s thick pith, it does not produce a lot of juice. Instead, it is used as the main source of succade (candied peel), which is often used in stollen for example. The fruit has significance in rituals in Judaism, where it is called an “etrog”, as well as in Buddhism, where the fingered citron variety known as “Buddha’s Hand” is used as an offering on altars. Just four days after the harvest in Sorrento, we took delivery of wonderfully aromatic scented citrons and immediately processed them into a marvellous spirit. It is typical of the variety and – like its Sicilian counterpart – has captivating, refreshing citrus notes that resemble those of cedar fruit. This is also the reason for the Italian name for the fruit — cedro (which also means cedar in Italian) — derived from the Greek word kedrómêlon, “cedar apple”.

All other species in the genus citrus that we know today came about through hybridisation of these initial three. The citron started its journey from Asia to the Middle East back in the 4th century BC, in the wake of Alexander the Great’s campaigns. Jewish migrants then brought them to Sicily, amongst other places. Able to grow as large as a volleyball, the plant’s fruit has an odd bumpy surface. Due to the fruit’s thick pith, it does not produce a lot of juice. Instead, it is used as the main source of succade (candied peel), which is often used in stollen for example. The fruit has significance in rituals in Judaism, where it is called an “etrog”, as well as in Buddhism, where the fingered citron variety known as “Buddha’s Hand” is used as an offering on altars. We were fascinated by the idea of using this historical, original citrus variety to distil a spirit for possibly the first time. Our supplier provided us with a small batch of citrons – still with some leaves, twigs and long spines from the plants – from which we were able to create something wonderfully tantalising, with captivating and refreshing citrus notes.

    We would have appreciated using German porcino, but we are not allowed to. In some countries, because they are a protected species, porcino may only – if at all – be collected by private individuals in small household quantities for their own consumption. As porcino cannot be cultivated, they can only be obtained in sufficient quantities for our purposes by wild collection in controlled areas. In Europe, these regions are found mainly in Romania and the countries of former Yugoslavia, such as Bosnia and Herzegovina. There are rich stocks and the harvest is carried out in a sustainable manner, which means porcino will continue to delight future generations. To give pleasure to people today, we were able to capture in our spirit the wonderful walnut-like, earthy and mushroom-like aromas of organic porcino by particularly gentle maceration and distillation. It is, of course, an ideal ingredient for fine cuisine and can also be enjoyed neat by mushroom enthusiasts. For those interested in chemistry, by way of a postscript: using the analytical procedures of headspace chromatography with a sniffing port (i.e. a sniffer detector) it was possible to differentiate between the different substances responsible for the typical – especially when cut – fungal odour of porcino and identify them by their smell. It is a complex mixture of disparate ketones and alcohols, of which 1-octene-3-ol is the most important in terms of quantity.

    People have been fascinated since ancient times by the scent of roses. The Greeks bestowed the title “Queen of Flowers” upon the rose. Hardly surprising, therefore, that the inventive spirit of the Persians experimented with processing the raw material until they finally succeeded in condensing the vapour of boiling rose petals using an alembic, a copper helmet. This marked the start of the distillation era. The aim in ancient times was to obtain scented water used for freshening up. Today, essential rose oil made from the fresh petals and rose absolute, extracted from the flower buds, is one of the world’s most precious raw materials for perfume. So it’s hardly surprising that the scents of fresh organic flowers of a wide range of varieties supplied from a famous German rose-growing region hit us with all their intensity. If only we could capture it in a spirit! What would it taste like? These are questions that we always ask ourselves at the start of product development. In the case of the rose, the answer was particularly fascinating because one distillate was far and away the favourite on the nose during the tastings, and the other on the palate. We therefore opted for both varieties of wild rose, which have been cultivated in this country for centuries. The result is a heavenly spirit with a lasting rose fragrance and taste (sic), along with tea and honeyed spicy notes. Its impact is due to citronellol, geraniol and farnesol, along with rose oxide and 2-phenyl ethanol. It will taste delightful in cocktails, and also in desserts and dressings, or dishes from Arabic or French cuisine.

    Magnolias are a plant genus of the Magnoliaceae family consisting of around 250 species originating in East Asia or America. Its evolution probably dates back over 100 million years. The French botanist Plumier discovered the magnolia in the United States when he was researching new plants for Louis XIV. He dedicated it to his famous compatriot, the botanist Pierre Magnol, by giving it the name “magnolia”. The first of its genus was brought to France in 1740 by a dealer who travelled back and forth between Europe and America. Since then, it has become a plant that is cultivated in many gardens around the world. This is hardly surprising, as magnolias in bloom are among the most beautiful plants in the world. This magnificent tree with its luxuriant flowers can quite rightly be called the “Queen of the Woods”. The tulip magnolia that we use is the most widespread. Luckily, we were able to harvest the flowers of a magnolia tree in our own garden. Who else would allow their own tree to be stripped of all its beautiful blooms, whose appearance and fragrance awaken the joys of spring? A fragrance that blends mild creamy floral and transparent fruity, aquatic and slightly spicy to honeyed notes with a delicate hint of citrus. This makes our magnolia spirit as sublime and exclusive as the blooms themselves. It’s worth experimenting with it. You can also do that yourself with magnolia petals: they taste delicious raw in salads or fried in batter!

    Is that from Persia or Majorca? Some of our product names may sometimes make would-be connoisseurs furrow their brows. But there’s a simple explanation: our organic limes come from the popular tourist island, hence the name “Mallorcan”. In addition to the Persian lime (Citrus x latifolia), there is also the key lime (Citrus x aurantifolia). These are two different hybrids, which differ in appearance and in the composition of their essential oils: the key lime is only about the size of a ping-pong ball and has lots of pips, whereas the Persian lime is larger and seedless. Research into the composition of the essential oils revealed sufficient differences to explain the different smell and taste of the two lime varieties. Everyone can make up their own mind as to which they prefer. We eventually opted for the Persian lime, which we carefully macerated and then distilled slowly following extraction. The result is a world-class spirit with subtle bitter notes and sweet citrus aromas that are ideal for adding that special touch to a caipirinha, daiquiri or mojito. Or it can also be drunk neat as, with its complex aromas, it almost resembles a cocktail on its own. Contrary to popular belief, limes are not green lemons, but an independent citrus species that also turns yellow when ripe. The adjective “Persian” probably refers to the fact that it spread from Asia to Europe along ancient Persian trade routes

    Autumn leaves, seriously? We usually get an amazed, incredulous reaction when we mention this creation. But this product is exactly what DSM stands for: trying out new and totally unprecedented things. Even ideas that seem crazy are passed to product development. If what we expected emerges during the experimental optimisation, then it was worth the effort. If not, we’ve gained another valuable experience. But what can be expected of a spirit made from autumn leaves? Everyone probably has that captivating smell somewhere in their olfactory memory. The smells while walking through an autumnal park or forest keep us deeply grounded in nature because they make us aware of its cycle. This is precisely the smell that we captured in our spirit made from autumn foliage. We ventured out and collected newly-fallen leaves of one specific type of tree. Their beautiful yellowish to red colours were created by the breakdown of chlorophyll into carotenoids and anthocyanins. We immediately macerated the leaves, to preserve the typical notes. The tasting was the ultimate surprise, because in addition to the autumnal notes, we also detected amazing fruity notes that round off the unusual experience of this spirit. So it’s hardly surprising that it has already been used in various cocktail recipes. But where does the smell and taste actually come from? We’re not quite sure, but it’s probably a combination of the breakdown metabolic products in the leaves and the decomposition of the leaves by ray fungi occurring on the ground. This involves bacteria of the genus Streptomyces coelicolor, which produce earthy-smelling geosmin, among other things.

    Every first Friday of the month, a guided tour of our distillery starts at 2 pm. It gives you a look behind the scenes. It ends with a tasting of our distillates. You should allow approximately 60-90 minutes for the whole event.

     

    Tastings & Workshops are only open to people over 18. If you are unable to attend a session, please phone us well in advance and we will no doubt be able to find a satisfactory solution.     The organic myrtle we used for our spirit comes from the Mediterranean, where the shrub — also called the common myrtle — originated. The ancient Romans and Greeks (and others from the 16th century onwards) saw myrtle branches and flowers as symbols of youth and beauty as well as virginity. That’s the origin of the custom — still occasionally found today — of using myrtle in bridal wreaths or bouquets. Brides used to plant a twig from the bridal wreath in the ground and let it take root. The verdant plant was taken as a sign of enduring marital bliss and was nurtured. That’s how the myrtle became a feature in living rooms and is considered to be one of the oldest indoor plants. The evergreen shrub bears lots of fragrant small white flowers in summer. After pollination, these develop into blue-black berries. They are used for instance to produce the Sardinian liqueur Mirto Rosso. We aimed to capture the scent of the myrtle leaves, which also gave it its name: the genus name Myrtus comes from the Greek “mýron” (fragrant juice, balm) and refers to this scent. It is based on the components of the essential oil – almost 50 of them, depending on the origin of the myrtle – and mainly contains α-pinene, 1,8-cineole, limonene, linalool and myrtenol acetate. These lend our spirit a distinctive spicy smell with eucalyptus and camphor notes. Creating a spirit makes it possible to use myrtle in the kitchen and bar, which would otherwise be inadvisable because the leaves are bitter.

    Evergreen eucalyptus trees immediately make you think of Australia. This is no accident, because over 700 of the approximately 800 to 900 species of this genus are from there. The rest come from Indonesia. They are important because their rapid growth makes them important wood sources. That’s why they are grown in many tropical and subtropical countries. The trees extract such large amounts of water from the ground, however, that this creates a problem in countries such as South Africa, which have to cope with drought. As a result, there is now opposition to them in certain regions of the country. This characteristic is also used for draining swamps. This destroys the breeding sites of the Anopheles mosquito, which is responsible for transmitting malaria. The alternative name for the eucalyptus — the “Fever tree” — can probably be attributed to this, and also to the essential oil, which is supposed to disinfect the air. The fact that it contains an essential oil is why the eucalyptus also unfortunately causes bush fires to occur and then burn for a long time. That oil is extremely important for the production of this exceptional distillate, however. The oil mainly consists of 1,8-cineole, with α-pinene, limonene and α-terpineol also playing vital roles. It is distinguished by a characteristic refreshing spicy aromatic smell, with minty and grassy-green notes. After dozens of experiments with dried and fresh eucalyptus species, we managed to capture precisely this characteristic in our spirit. We can envisage it being used in a Eucalyptus Martini or by chefs who are keen to try out new things.

    Vetiver is a tropical bunch grass, which grows to between 50 centimetres and 1.50 metres high. It is originally from Asia (South India, Indonesia and Sri Lanka), but is now cultivated in many tropical regions. The parts of the plant above ground are not used, only the extremely dense root system that can extend up to 3 m underground. There’s a good reason why vetiver is called khus or ”aromatic root” in India. The essential oil, obtained by steam distillation from both fresh and dried roots, is a component of many perfumes. It has elegant oriental notes and, depending on the degree of drying of the root, can have aromatic green, woody balsamic, strong earthy, root-like and smoky notes as well as refreshing citrus notes and dark leather accents. This is due to a complex blend of sesquiterpenes and their alcohols and ketones. The alcohols khusimol, cyclocopacamphanol A and B, vetiselinenol and isovalencenol have woody notes. The ketone khusimone has rhubarb and grapefruit notes, a-vetivon has strong grapefruit notes and b-vetivon has woody notes. These unusual flavours are blended perfectly in our spirit made from organic vetiver root, and are just crying out to be used as creatively in cocktails and in cooking as the Indians use vetiver in their daily lives. The root has the property that it smells pleasantly cool and aromatic for a long period, especially when sprayed with water. That’s why it is used to make everyday items such as mats, curtains or shutters in India.

    Who isn’t familiar with the wonderful fragrance of pine needles on a walk through the forest in summer? It has a deeply soothing and balancing quality that connects us with the world of nature. But how do you recognise a spruce tree and how does it differ from the pine, for example? That’s easy: spruce needles are prickly; pine needles aren’t. This undesirable characteristic is also the reason why spruce has been supplanted by the ever-popular Nordmann fir as Christmas trees since the 17th century. Although one drawback is that the Christmas forest smell has disappeared from living rooms, as the latter produces almost no essential oil. That’s why we prefer to use spruce for our spirit. Its aromatic organic needles are collected wild and have an impressively high essential oil content. The German pharmacopoeia gives a detailed definition of the minimum and maximum amounts of the following components of spruce needle oil that is used medicinally: α-pinene, camphene, β-pinene, car-3-ene, limonene, bornyl acetate and borneol. Our spirit has captivating strong spruce notes of bornyl acetate, which can be detected even in the smallest quantities. The specially selected raw materials are the reason why this stands out in the distillate. They are easy to distinguish from the aroma produced by freshly harvested spruce tips because the composition of the essential oil changes significantly within the first weeks as the fresh tips mature. The proportion of oxidized terpenes keeps increasing and the non-oxidized proportion decreases. We recommend that anyone still not convinced should try a comparative tasting!

    Allspice is a plant from the myrtle family. It has a whole series of names including allspice, pimento, myrtle pepper and Jamaica pepper (after its country of origin). Tropical Central America is the home of the evergreen pimento tree. From there, Christopher Columbus brought the spice to Europe. This also had an influence on the name. As the kernels look like pepper, the Spaniards thought the allspice plant was a pepper plant. That’s the origin of the genus name, derived from the Spanish pimienta (which translates as “pepper”). Allspice berries lose their taste when ripe. So they are harvested when they have the most flavour, before they ripen fully. The berries are then washed and dried. As allspice ferments, it produces dark brown to reddish brown seeds. The seeds have a very characteristic smell that is a combination of cloves, nutmeg and cinnamon. The taste resembles that of cloves with a mild peppery sharpness. The fruits contain an essential oil that has a balsamic to spicy smell. Its main component is eugenol, which is also contained in cloves. The complexity of the essential oil is due to a total of about 40 components, including β-caryophyllene and 1,8-cineole. No wonder we couldn’t resist using it to produce a distillate. It’s impressively versatile and will add that special something to pastries, soups, sauces, marinades, fish and meat dishes, as well as a Bloody Mary.

    Who doesn’t know the melody of Brahms’s Lullaby? The text German children grow up with translates as:  “Good evening, good night,
With roses covered,
With cloves adorned,
Slip under the covers.
Tomorrow morning, if God wills,
you will wake once again.”  The cloves are put in the cradle for their essential oils which evaporate and have antiseptic properties. They also smell nice and are supposed to repel insects and prevent diseases. The word clove is derived from the Latin clavus, meaning “nail”. It got the name because its shape was reminiscent of the hand-forged nails of the Middle Ages. But why do cloves have this unusual shape? They are the dried flower buds of the clove tree, which originates from the Molucca Islands. The buds are hand-picked before they blossom and turn brown and hard when dry. The spice reached Europe in the Middle Ages and became very well known. That’s why the name for the carnation in other European languages is the same as for cloves, because the root contains a similar essential oil. This essential oil is also why cloves are described in the European Pharmacopoeia. They are used medicinally in dentistry for localised pain relief. The cloves we use in our spirit are particularly high-quality organic ones from Madagascar. The oil mainly consists of eugenol, along with eugenyl acetate and b-caryophyllene, which are responsible for the unmistakable strongly aromatic, warm and spicy-sweet smell and taste. It tastes fantastic in any dish usually flavoured with cloves or in autumn or winter cocktails, for example.
