We would have appreciated using German porcino, but we are not allowed to. In some countries, because they are a protected species, porcino may only – if at all – be collected by private individuals in small household quantities for their own consumption. As porcino cannot be cultivated, they can only be obtained in sufficient quantities for our purposes by wild collection in controlled areas. In Europe, these regions are found mainly in Romania and the countries of former Yugoslavia, such as Bosnia and Herzegovina. There are rich stocks and the harvest is carried out in a sustainable manner, which means porcino will continue to delight future generations. To give pleasure to people today, we were able to capture in our spirit the wonderful walnut-like, earthy and mushroom-like aromas of organic porcino by particularly gentle maceration and distillation. It is, of course, an ideal ingredient for fine cuisine and can also be enjoyed neat by mushroom enthusiasts. For those interested in chemistry, by way of a postscript: using the analytical procedures of headspace chromatography with a sniffing port (i.e. a sniffer detector) it was possible to differentiate between the different substances responsible for the typical – especially when cut – fungal odour of porcino and identify them by their smell. It is a complex mixture of disparate ketones and alcohols, of which 1-octene-3-ol is the most important in terms of quantity.
