The plant Pandanus amaryllifolius is the only one of over 600 species of the Pandanus genus with strong smelling leaves. The leaves are used in many Southeast Asian countries as a natural flavouring and colouring in the kitchen, as well as in traditional medicine. Food is wrapped in the leaves before steaming or frying. The flavour and colour are transferred, but the leaves are not eaten. Ideally – as in the case of our spirit – fresh leaves are used. They are much more aromatic as they lose flavour when dried. The plant is sometimes called the “vanilla of the East”, though less on account of its price, as it is cultivated across much of Asia. The flavours are actually responsible for the name. These are characterised as milky-sweet to rose-like floral, and vanilla-like to slightly almond-like and nutty. It’s probably this exotic combination that made such an impression on the friendly Berlin bartender who inspired us to manufacture this spirit. The key component of the aroma of pandan leaves is 2-acetyl-1-pyrroline, which can be detected even in very small quantities. It smells of fresh buttery popcorn and also gives white bread, jasmine and basmati rice their typical smell. Many other components, such as 4-ethylguaiacol (an important flavouring in wine) b-damascenone (also called rose ketone) and 3-methyl-2 (5H)-furanone (also found in soy sauce or roasted coffee), contribute to the sensory experience of pandan. They also lend our spirit a potpourri of flavours, which add that certain something to cocktails and dishes.
