It had to be Ceylon cinnamon from Sri Lanka. Only organic whole sticks were good enough for us. It’s not hard to distinguish between Ceylon cinnamon and Chinese cinnamon (Cinnamomum cassia) because the latter is mainly obtained from a thick layer of bark, which curls at the ends while drying and therefore does not form a closed stick. Ceylon cinnamon only consists of very thin layers of bast, several of which are pushed into each other for drying, which makes it possible to create a closed stick with a cigar-like cross-section. Ceylon cinnamon also has a finer aroma and the thin layers preserve it for much longer than is the case with Chinese cinnamon. The constituents of the essential oil are also significantly different. Cheaper cinnamon varieties such as Chinese cinnamon contain coumarin, which brings those woodruff-like notes. On the other hand, in our spirit made from Ceylon cinnamon, cinnamic aldehyde is in the foreground and eugenol is also an important ingredient. You can smell and taste it, whether it is enjoyed neat or used to add a special touch to pastries or cakes, desserts and jams, cocktails or mulled wine, tea or Asian dishes.
