The wide variety of mints means it’s extremely tempting to use them to produce spirits. From apple mint to lemon mint, there’s plenty of temptation for distillers obsessed by aromas. Following the enthusiastic reception of our distillate No 550 — German Chocolate Mint — we wanted to complement the range with a classic mint, as not everyone appreciates its After Eight flavour. After numerous attempts, Moroccan spearmint with its lime green, pointy oval, rough leaves proved to be the best choice. Morocco’s national drink consists of mint and Chinese gunpowder green tea, with lots of sugar and hot water. The tea is traditionally made by hosts to welcome guests in a ritual ceremony. Moroccan mint lacks the menthol sharpness of peppermint or even our chocolate mint, because it is one of the mints that is very low in menthol. This can be clearly detected when you compare our two distillates. Cooling mentholated and woody notes are characteristic of menthol. In the essential oil of Moroccan spearmint, carvone with spicy minty spearmint notes predominates, along with bready notes that have slight hints of caraway. These aromas are complemented by dihydrocarveol, neodihydrocarveol and limonene with citrus notes. We think this idiosyncratic spirit is an ideal ingredient for cocktails, such as a Hugo or Mojito, or in desserts of all kinds and ice cream, and above all, enjoyed neat at room temperature.
