To the best of our knowledge, our supplier is the only one offering this unique herb. So, we were grateful to obtain sufficiently large quantities for our purposes. This is the bitter yarrow variety, whose vermouth-like characteristics were described in 1609-10 by the Italian pharmacist Nicolò Clavena from Belluno. The famous Swedish scientist Carl Linnaeus in 1753 also honoured Clavena in the species name, but evidently made a mistake when he added an extra “n”, as the species should actually be called “clavenae”. The generic name “Achillea” refers to Achilles, the legendary hero of the Trojan War, who apparently used plants of this genus for healing wounds. The bitter substance achillein, responsible for the taste of bitter yarrow, is not contained in our spirit because it remains in the stillage during distillation. On the other hand, the fresh, intensely aromatic and spicy fragrance reminiscent of mountain meadows, with a hint of chamomile produced by crushing the leaves, due to the main components of the essential oil – camphor and 1,8-cineole – can be detected 1:1 in our spirit and lends a summery touch to dishes and drinks.
