“Give it some pep”. A phrase that means to make something more lively or interesting. We decided to take it literally. It took some time to find really good organic black pepper. We decided on Indian pepper, because that’s where the king of spices originally comes from. Before goods began to be transported by ship from Asia, pepper had to be brought to Europe overland. The oldest evidence of trade with Europe north of the Alps is the Bremen peppercorn, a white pepper seed, found in 1989 during excavations in Bremen city centre. It dates from the 13th century and is proof of the trade relations between the Hanseatic city and South Asia in the High Middle Ages. The Piper nigrum plant, which yields this delicious hot and spicy pungent fruit twice a year, is a liana with tendrils winding up trees to a height of 10 metres. The black colouration of the green fruit that is harvested unripe occurs when it is dried due to the enzymatic oxidation of o-diphenols. The sharpness of the piperine during distillation remains in the stillage, which means the spicy, sweet, woody, resinous flowery aroma of the essential oil – tasting of pine and smelling like lemon – comes to the fore in our spirit. The perfect choice for drinking neat, seasoning almost any type of food and adding the finishing touch to cocktails.
