Life without chocolate is possible, but meaningless. That’s why the cocoa tree, which supplies the key flavour ingredient of chocolate, was quite rightly given the genus name Theobroma, meaning “food of the gods”. One of the world’s best and most expensive cocoas is Criollo fine cocoa. This is native to Central America, and the Porcelana variety is considered to be the Criollo among Criollos. It gets its name from the white to light pink colour of the cotyledons, which is reminiscent of porcelain. Because this species is very sensitive, susceptible to disease and also produces lower yields than other varieties, it has largely been superseded by other crops. Its outstanding flavour and aroma are the reason why this Criollo is still cultivated for luxury chocolate, and why we selected it for our spirit. The flavour and aroma are due to more than 35 volatile compounds, especially pyrazines and aldehydes formed when the cocoa is roasted. As this process is critical to the aroma, we roasted the Porcelana beans in our distillery. The actual smell and flavour carriers are the result of flavour precursors formed when the cocoa beans are fermented. In the case of the Criollo, these are nutty and caramel-like, along with fruity and floral to herbaceous woody notes that produce an extremely complex blend of aromas that are superbly reflected in our spirit. A unique treat with a lingering chocolate aroma. You’ll enjoy it poured neat over desserts or in cocktails.
