The art of creating a great pear brandy lies in the symbiosis of technically perfect distillation and knowledge of the chemistry of the potential aromas in the pear. As recent studies show, the Williams pear is the variety with by far the highest proportion of what is known as ‘pear ester’: ethyl (E,Z)-2,4-decadienoate. It is characterised by a typical pear smell with green, fruity, tropical and sweetish notes. Due to various factors, it isomerises into ethyl (E,E)-2,4-decadienoate, which is significantly less intense. This means that the ratio of the two in ripe pears is around 4.5 to 1, but only 3 to 1 in the stored distillate. The aim is to avoid this reaction as far as possible. Nevertheless, these are just two out of the more than forty odour-active substances typically found in pear brandies. In combination, they produce what ultimately delights your palate. We believe we succeeded in creating a true masterpiece that perfectly blends the classic notes of a brandy made from the yellow Williams pear. Although we strongly recommend enjoying it neat at room temperature, its powerful aromas create spectacular cocktails. Here’s everything we know about the origin of the name of this wonderful fruit: a monk, who was mentioned as a “good Christian”, is supposed to have brought it from Italy to France as a gift for the French king. From there, it reached the London Williams nursery, which distributed this pear throughout England in around 1770.
