Citrus fruits are a large family that is highly complex from a botanical point of view. The advent of molecular genetic analysis led on several occasions to presumed relationships needing to be corrected. This was also the case for the clementine, a relatively recent citrus fruit. It was previously thought to be a hybrid of a mandarin and a Seville orange (bitter orange). However, in 2002, scientists in Corsica discovered that it is a hybrid of the Mediterranean mandarin and the orange. It takes its name from a French monk, Clément Rodier. This hybrid occurred randomly in 1902 in his mandarin plantation in a village near Oran in Algeria. Since then, cultivation of the clementine has outstripped that of mandarins because it has few if any pips — which is what customers want — and its peel is much thicker and therefore more resistant to cold and pressure, which gives it a longer shelf life. Our Sicilian citrus fruit specialist went back on the road for us and brought us freshly harvested clementines. Just one week after the harvest, we were able to process the aromatic fruit and immortalise its essence in our spirit. Although the composition of the essential oil — which has limonene as its main ingredient — is similar to that of the mandarin, the nuanced differences in composition make the clementine spirit a totally different product. It will pamper the palate when poured over desserts, in cocktails or drunk neat at room temperature.
