No 140 Sicilian Grapefruit

The aroma of the red-fleshed grapefruit, picked from the tree just a week earlier, which we processed into our grapefruit spirit, was absolutely amazing. We had never encountered such highly aromatic fruit. So, we weren’t surprised that we were able to use it to manufacture a product with an unusually intense smell and taste. The main ingredient of grapefruit oil in terms of quantity is limonene. However, the typical grapefruit smell is due to (+)-nootkatone, a bicyclic sesquiterpene with an odour threshold of 0.001 ppm. This means we can detect the scent of a single nootkatone molecule in a billion air molecules. But the juice is also a significant contributor to the aroma, mainly with thiols, aldehydes, ketones and esters, but not bitter substances, which fortunately remain in the stillage during distillation. The grapefruit is a hybrid of an orange and a pomelo. It shouldn’t be equated with the latter, as they are completely different fruits.
