    Vetiver is a tropical bunch grass, which grows to between 50 centimetres and 1.50 metres high. It is originally from Asia (South India, Indonesia and Sri Lanka), but is now cultivated in many tropical regions. The parts of the plant above ground are not used, only the extremely dense root system that can extend up to 3 m underground. There’s a good reason why vetiver is called khus or ”aromatic root” in India. The essential oil, obtained by steam distillation from both fresh and dried roots, is a component of many perfumes. It has elegant oriental notes and, depending on the degree of drying of the root, can have aromatic green, woody balsamic, strong earthy, root-like and smoky notes as well as refreshing citrus notes and dark leather accents. This is due to a complex blend of sesquiterpenes and their alcohols and ketones. The alcohols khusimol, cyclocopacamphanol A and B, vetiselinenol and isovalencenol have woody notes. The ketone khusimone has rhubarb and grapefruit notes, a-vetivon has strong grapefruit notes and b-vetivon has woody notes. These unusual flavours are blended perfectly in our spirit made from organic vetiver root, and are just crying out to be used as creatively in cocktails and in cooking as the Indians use vetiver in their daily lives. The root has the property that it smells pleasantly cool and aromatic for a long period, especially when sprayed with water. That’s why it is used to make everyday items such as mats, curtains or shutters in India.

    Boswellia serrata is a species of frankincense tree found in northern India. Many people will be familiar with frankincense from religious services or — along with gold and myrrh — as a gift for the infant Jesus from the Three Wise Men. Cleansing effects were attributed to it, which made it very precious in those times. This may be the reason why incense is now frequently touted as a miracle cure, even though there’s no scientific evidence for this. Frankincense is obtained by slashing the bark of the frankincense tree. As the wound closes, it secretes a milky white emulsion that hardens in air to a gum resin that is also called olibanum. The typical incense drops or ‘tears’ are produced and harvested in special containers. The brighter and bigger the drops, the higher the quality and the more expensive they are, as the process lasts for months. For our spirit, we used Indian frankincense sourced from collection in the wild. The tests we perform during product development have revealed that frankincense resins are extremely intense. This meant we had to clean our distillery line several times after production to prevent carryover into the downstream product. We were happy to take on board this added effort, and it really paid off. The result is a spirit with wonderfully warm, balsamic-spicy, conifer-like resinous and subtle citrus notes, based on the monoterpenes a-thujene, a-phellandrene and a-pinene of the essential oil, among others.

    The Buchu plant is a shrub indigenous to the South African Cape Mountains. According to the cargo manifest of the Titanic, there were eight bales of Buchu aboard the ship. People at the time were apparently enthusiastic about the aromas of Buchu, which had been distributed in England since the 18th century. It was called Noble’s Tea because of its price. Aqueous extracts of Buchu have been, and are still used by the San, a South African indigenous people, and are applied externally because of their anti-inflammatory effect. On the underside of the leaves of the Buchu bush we used there are numerous glands containing essential oil. The pure oil has a slightly fruity, peppermint-like smell reminiscent of turpentine. This is due to the menthone (also found in peppermint), isomenthone, y-diosphenol, diosphenol (both with a terpenic note), limonene, pulegone (minty, camphoraceous) and isopulegone. When the oil is diluted – as in our Buchu spirit – the mint and terpene-like notes are overshadowed by fruity blackcurrant notes. A small quantity of 8-mercapto-p-menthane-3-one is responsible for this. Interestingly, this compound is not found in blackcurrants and it intrigues the human nose even when heavily diluted. This detailed description of the Buchu aromas opens up countless ways of using this rare spirit by creative talent in kitchens and bars.

    Evergreen eucalyptus trees immediately make you think of Australia. This is no accident, because over 700 of the approximately 800 to 900 species of this genus are from there. The rest come from Indonesia. They are important because their rapid growth makes them important wood sources. That’s why they are grown in many tropical and subtropical countries. The trees extract such large amounts of water from the ground, however, that this creates a problem in countries such as South Africa, which have to cope with drought. As a result, there is now opposition to them in certain regions of the country. This characteristic is also used for draining swamps. This destroys the breeding sites of the Anopheles mosquito, which is responsible for transmitting malaria. The alternative name for the eucalyptus — the “Fever tree” — can probably be attributed to this, and also to the essential oil, which is supposed to disinfect the air. The fact that it contains an essential oil is why the eucalyptus also unfortunately causes bush fires to occur and then burn for a long time. That oil is extremely important for the production of this exceptional distillate, however. The oil mainly consists of 1,8-cineole, with α-pinene, limonene and α-terpineol also playing vital roles. It is distinguished by a characteristic refreshing spicy aromatic smell, with minty and grassy-green notes. After dozens of experiments with dried and fresh eucalyptus species, we managed to capture precisely this characteristic in our spirit. We can envisage it being used in a Eucalyptus Martini or by chefs who are keen to try out new things.

    The Latin species name “punctulatus” means ‘dotted’, and indicates that, after flowering, this Eriocephalus species has particularly dense and eye-catching white seeds resembling mini snowballs. That is why it is called “snowbush” in the Cape. Its strong aromatic smell is due to a high content of aromatic terpenes. These are also used to produce an essential oil marketed as Cape chamomile oil, used in the perfume and cosmetics industry and aromatherapy. Like German chamomile oil, Cape chamomile oil has a characteristic blue colour. The blue dye chamazulene is derived from the component matricin during the steam distillation to produce both chamomile oils. However, the colour is light-sensitive and quickly turns green and then amber when exposed to light. The colour is the only thing the German and Cape chamomile oils have in common, however. Cape chamomile oil has a completely different chemical composition consisting of approximately 200 different components. The smell of the Cape chamomile oil is characterised by floral, fruity (apple, pineapple) and chamomile-like notes similar to Roman chamomile. The description alone makes one eager to taste this rare distillate – whose aromas were perfectly blended in the alcohol by using extremely gentle distillation – and to exploit its potential as a flavouring in food and drinks.

    The eight species of the genus Coleonema (from the Greek: koleos = sheath and nema = thread, filament; which indicates that the filaments of the stamens are enclosed within a fold of the petals) are only found in the Western Cape Province. This plant blooms during the South African winter, mainly June to August, so one can see right away how it got its name: The bush, which grows to a height of 2 m, is visible from afar and consists of a sea of small – approximately 6-7 mm – white honey-scented flowers and offers a feast to bees and butterflies. When the flowers fall, the ground looks like a confetti shower. Removing the long (approx. 1 cm) needle-like leaves from the stems is extremely time-consuming but is essential to obtain the desired product quality. This is because the essential oil responsible for the aroma is mainly contained in the oil cells on the underside of its leaves. This oil has more than 40 components, mainly monoterpenes, sesquiterpenes and phenylpropanes, with Z-b-ocimene, b-phellandrene, myrcene, a- and b-pinene being the main ones. Crushing the leaves releases a sweetish fruity, herby, nutmeg aroma with peppery notes. We perfectly blended the subtle aroma and taste components in alcohol to create this rare, unusual spirit, which makes it ideal for adding that special something in the kitchen or bars.

    The plant with this curious name grows on shaded mountain slopes and forest edges in the Eastern and Western Cape. The genus name – Helichrysum – derives from the Greek “helios” (sun) and “chrysos” (gold) and alludes to the colour of the flowers. The species name “petiolare” means “stalked” and refers to the striking leaves. The leaves are silvery-grey and roughly heart-shaped with velvety hairs and a faint liquorice aroma, which was evidently strong enough to account for its name. Traditionally, a tea is made from the leaves, used, among other things, for treating respiratory diseases (especially by Rastafarians). The compound essential oil has anti-inflammatory properties and is made up of approximately 70 different components with 1,8-cineol, b-caryophyllene, a-pinene and p-cymene being the main ones. We didn’t select the plant on account of these properties, but for its aroma, which we were unfamiliar with. One definitely gets a subtle hint of liquorice among the rather complex aromas. A highly interesting spirit, which will find its way into kitchens and bars.

    Most people are probably familiar with mate in the form of a tea, or even in the form of a cult cold drink that emerged from the hacker scene. Green unroasted mate leaves are also used as traditional herbal remedies for mental and physical fatigue. The major difference between our spirit and the drinks or the medicinal application: our spirit contains no purines because caffeine, theophylline and theobromine are non-volatile under distillation conditions. All the aromas are volatile, and it is these that are responsible for the mellow, sweet-and-sour, earthy-smoky smell and taste, which evokes wilting leaves. That’s what makes our spirit using roasted organic mate leaves truly amazing! Just like with coffee, the roasting process is important to produce the typical aromas. Maillard reactions form the flavour components typical of the variety, such as pyrroles and pyrazine. These are then also transferred to our spirit during distillation. But don’t be put off by the chemical terminology: these processes occur in every frying pan and many dishes would be pretty bland without them! So, use the spirit in cocktails, as a shot in tea or drunk neat.

    The organic myrtle we used for our spirit comes from the Mediterranean, where the shrub — also called the common myrtle — originated. The ancient Romans and Greeks (and others from the 16th century onwards) saw myrtle branches and flowers as symbols of youth and beauty as well as virginity. That’s the origin of the custom — still occasionally found today — of using myrtle in bridal wreaths or bouquets. Brides used to plant a twig from the bridal wreath in the ground and let it take root. The verdant plant was taken as a sign of enduring marital bliss and was nurtured. That’s how the myrtle became a feature in living rooms and is considered to be one of the oldest indoor plants. The evergreen shrub bears lots of fragrant small white flowers in summer. After pollination, these develop into blue-black berries. They are used for instance to produce the Sardinian liqueur Mirto Rosso. We aimed to capture the scent of the myrtle leaves, which also gave it its name: the genus name Myrtus comes from the Greek “mýron” (fragrant juice, balm) and refers to this scent. It is based on the components of the essential oil – almost 50 of them, depending on the origin of the myrtle – and mainly contains α-pinene, 1,8-cineole, limonene, linalool and myrtenol acetate. These lend our spirit a distinctive spicy smell with eucalyptus and camphor notes. Creating a spirit makes it possible to use myrtle in the kitchen and bar, which would otherwise be inadvisable because the leaves are bitter.

    Indian patchouli is a plant of the Lamiaceae genus and is therefore related to mint. Its hairy leaves are reminiscent of stinging nettles, though they don’t sting. They are the reason behind the Greek name for the genus: pogos meaning beard and stemon meaning thread/stamen, as they are slightly hairy. Patchouli oil, which is widely used in perfume, is extracted from the dried and fermented leaves. Some people find the heavy, long-lasting scent of patchouli a bit hard to take. It is a combination of earthy, woody and herby with balsamic and sweet. It is also supposed to be an aphrodisiac; that’s why it was popular during the hippie era of 1968, when it was also used as a form of smellable protest against the establishment and the bourgeois way of life. This species is native to India, Taiwan and Indonesia, where our organically cultivated leaves originate from. We were inspired to produce this spirit by a bartender who loves to use the aroma of patchouli in his cocktails. Not an easy task, but we succeeded after numerous attempts. The main component of the essential oil, the sesquiterpene patchoulol, is easy to identify as it has powdery, woody, earthy and camphor notes. Other contributors to this unique olfactory and gustatory experience include a-guaiene with its balsamic-sweet and slightly peppery nuances, and various other aromas, some only present in tiny quantities. The secret is finding the right dose, because this spirit will only then reveal its true character.

    “Kapokbos” is the name given to African rosemary in its homeland South Africa, where it flourishes in the Western Cape, Eastern Cape and Namaqualand. There are 34 species of the genus Eriocephalus in southern Africa and they all have one thing in common: the fluffy seeds that appear shortly after flowering are covered in long white hair and resemble tiny snowballs, which is how they got their local name, because “kapok” means snow and “bos” stands for bush. In addition to its striking appearance and widespread distribution, the plant has a pleasant aromatic fragrance, spread by crushing its needle-like leaves, another reason why this extraordinary plant is popular with most of the local people. It is also widely used in the kitchen for seasoning meat dishes and vegetable stews and as a tea for relieving the symptoms of coughs and colds, etc. In times of severe water shortages in the Cape region, bushes like the kapokbos are ideal garden plants because they can thrive on very little water. In gardens, they also exude a herbaceous and balsamic fragrance that is unfamiliar in our part of the world, and that’s the reason why we selected this plant for one of our spirits. According to studies of plants cultivated in Spain, it contains 61 components, with artemisia ketone, intermedeol and g-eudesmol being the main constituents in terms of quantity. This spirit is crying out for people who are willing to try out new things and bold enough to mix it with familiar flavours to create completely new combinations.

    The flowers of the South African sage are golden yellow when they start to flower (later they turn rusty orange then reddish-brown), and this also explains its Latin name (luteus = (golden) yellow). Early European settlers used the plant to treat colds and chronic bronchitis. Traditional healers still use it for these purposes, as well for fever and headaches. However, the aromatic leaves used for our spirit – coming from shrubs that grow in the South African provinces of Eastern, Northern and Western Cape – are an unspectacular, greyish-green. It is also called beach sage or dune sage because it usually grows near the coast. Speaking of leaves: we rubbed these off from the harvested raw material by hand and also had to work around the thorn-like protuberances on the branches that probably act as a defence against herbivores. But all the effort more than paid off: it resulted in a distillate with a superb taste, which, despite its name, is nothing like the well-known sage smell and taste found in Europe. It is characterised by a complex essential oil with around 50 components. The most important in terms of quantity are a-pinene, myrcene, o-cymene and a-eudesmol. People can decide for themselves whether they prefer to enjoy this spirit neat or use it to add that special touch to food or drinks, or both.

    When purchasing raw materials, luck is also an important factor. In the case of the lemon grass, we were extremely lucky: our buyer scoured Thai markets to find the most aromatic lemon grass. And he came up trumps, as you can smell and taste when you enjoy this outstanding spirit. Its strong, intensely fresh, somewhat “green” lemon aroma is mainly due to a mixture denoted as citral of two isomers, monoterpene aldehyde geranial and neral, with smaller amounts of b-myrcene and numerous other components. They create a spirit with an unparalleled lemon freshness and naturalness, which prompts one to ask what it can’t be used with, rather than vice versa. It is ideal for pure pleasure, for example, in Asian food, where its aromas contribute that special something. It adds a subtle lemon touch to dressings, jams, salads and desserts, and lends an exotic hint to drinks such as herbal tea or cocktails. The grass also has other properties which explain its traditional use in other parts of the world. It is said that the flowers used to be smoked by shamans on Lake Tanganyika to induce dreams that enabled them to predict the future.

    You can only appreciate nature with all your senses if you’re in the here and now. Many people achieve this by going into the wild and getting away from it all. It may be that there are basic instincts in us, deeply rooted in our genes, that make us stay still at such times and heighten our perception. The scents that surround us during these carefree moments are deeply embedded in our olfactory memories. That’s why many people associate the fragrance of hay with a summer stroll through the fields and meadows of their childhood. We aimed to preserve this exact smell in a spirit so as to have it handy at all times. For this, we macerated and very gently distilled sun-dried organic mountain meadow hay from the Rhoen UNESCO Biosphere Reserve. The result was a spirit that far exceeded our expectations in terms of capturing the olfactory memory. Our spirit made from  mountain hay blends the soothing smell of summery dried hay with the scents of aromatic herbs and fragrant wild grasses as only found in unspoiled nature. It will transport you to a freshly mowed meadow in the twinkling of an eye. The typical smell of hay when the grass is dried is due to the coumarins, which are also found in woodruff, tonka beans and Chinese cinnamon. These have glycosidic bonds in the living plant to some extent and are only released when the sugar is separated as the plants wither. Coumarin with its sweet, herbaceous and spicy fragrance and vanilla-like taste also provides inspiration for creative talents who want to use this unique spirit in the kitchen.

The leaves are used in many Southeast Asian countries as a natural flavouring and colouring in the kitchen, as well as in traditional medicine. Food is wrapped in the leaves before steaming or frying. The flavour and colour are transferred, but the leaves are not eaten. Ideally – as in the case of our spirit – fresh leaves are used. They are much more aromatic as they lose flavour when dried. The plant is sometimes called the “vanilla of the East”, though less on account of its price, as it is cultivated across much of Asia. The flavours are actually responsible for the name. These are characterised as milky-sweet to rose-like floral, and vanilla-like to slightly almond-like and nutty. It’s probably this exotic combination that made such an impression on the friendly Berlin bartender who inspired us to manufacture this spirit. The key component of the aroma of pandan leaves is 2-acetyl-1-pyrroline, which can be detected even in very small quantities. It smells of fresh buttery popcorn and also gives white bread, jasmine and basmati rice their typical smell. Many other components, such as 4-ethylguaiacol (an important flavouring in wine) b-damascenone (also called rose ketone) and 3-methyl-2 (5H)-furanone (also found in soy sauce or roasted coffee), contribute to the sensory experience of pandan. They also lend our spirit a potpourri of flavours, which add that certain something to cocktails and dishes.

    Now that so many people are aiming to improve their individual life experiences, nutrition is becoming more personalised. So it’s hardly surprising that the so-called superfoods — foods with an actual or alleged health benefit — are becoming increasingly popular. These range from the domestic raspberry or blueberry to natives of exotic climes such as the goji berry or Cape gooseberry (Physalis), to chia seeds and even wheatgrass. Detoxifying, rejuvenating and skin-enhancing properties are attributed to wheatgrass, as well as healing properties to assist the fight against serious illnesses. This is where it becomes problematic from a legal point of view, because advertising foods with health claims is only permissible if there is evidence from scientific studies carried out as part of an approval procedure. Fresh wheatgrass has been proven to contain many vitamins, minerals and amino acids, in addition (of course) to the green plant pigment, chlorophyll. All these substances form an integral part of a balanced diet and thus make nutritional sense. So there’s nothing against the occasional “wheatgrass shooter”, as the dark green, freshly pressed juice is called. As only the hardy will want to drink it neat, wheatgrass should be pressed with fruit, for instance. We were inspired by the strong green aroma of fresh wheatgrass shoots, which is why we macerated and slowly distilled the freshly harvested Allgäu organic wheatgrass that was sown specially for us. The result is a refreshing spirit, with wonderful green, grassy notes, ideal for use in cocktails or in the kitchen.

    Autumn leaves, seriously? We usually get an amazed, incredulous reaction when we mention this creation. But this product is exactly what DSM stands for: trying out new and totally unprecedented things. Even ideas that seem crazy are passed to product development. If what we expected emerges during the experimental optimisation, then it was worth the effort. If not, we’ve gained another valuable experience. But what can be expected of a spirit made from autumn leaves? Everyone probably has that captivating smell somewhere in their olfactory memory. The smells while walking through an autumnal park or forest keep us deeply grounded in nature because they make us aware of its cycle. This is precisely the smell that we captured in our spirit made from autumn foliage. We ventured out and collected newly-fallen leaves of one specific type of tree. Their beautiful yellowish to red colours were created by the breakdown of chlorophyll into carotenoids and anthocyanins. We immediately macerated the leaves, to preserve the typical notes. The tasting was the ultimate surprise, because in addition to the autumnal notes, we also detected amazing fruity notes that round off the unusual experience of this spirit. So it’s hardly surprising that it has already been used in various cocktail recipes. But where does the smell and taste actually come from? We’re not quite sure, but it’s probably a combination of the breakdown metabolic products in the leaves and the decomposition of the leaves by ray fungi occurring on the ground. This involves bacteria of the genus Streptomyces coelicolor, which produce earthy-smelling geosmin, among other things.

    Nomen est omen. Rarely can a naming be better understood, as in the case of the caramel tree originating from Japan and China, which is also known as the katsura. It is certainly noticeable in summer with its red leaf stalks, which stand out from the deciduous leaves. In autumn, its leaves show a splendid bright coloration from yellow to orange to carmine and scarlet red. Shortly before and during the fall of the leaves, the caramel tree finally reveals its name-giving secret: the colorful, falling leaves give off a beguiling scent between caramel, cotton candy, cinnamon and yeast cake, especially on humid days. And so it came about that we collected the leaves of the tree in light rain and, wrapped in the pre-Christmas scent, asked ourselves whether we would succeed in capturing precisely this characteristic in our spirit, which after all is the goal with all our spirits? And indeed, besides the fruity aromas that also characterize our spirit of autumn leaves (distillate N° 685), it shows nuances of the aromas during the fall of the leaves. But where do they actually come from? The characteristic smell of the caramel tree leaves is caused by maltol, a cyclic unsaturated ether found in caramel and malt. As studies have shown, its concentration rises abruptly during the period of leaf discoloration and has its highest value in leaves that are discolored in autumn. Despite all this, it remains a mystery whether nature is trying to achieve something with this elaborate spectacle or whether it is simply one of its whims.

    The idea for our Christmas spirit came from an Advent tradition: every year on the last Sunday of Advent, friends come round for an Advent coffee gathering, at which mother’s unsurpassed home baked Christmas cookies and, of course, our home-made mulled wine, are served. The blend of a good red wine and around a dozen spices is regularly greeted so enthusiastically that we obviously had to use this recipe to create a spirit. However, this turned out to be a lot more difficult than we initially imagined. As the taste of red wine as an important stabilising basis is absent, the individual components emerged too strongly in our early attempts. That’s why after our internal tastings, we kept changing the quantities of ingredients. But in the end, the pharmacist’s meticulousness and patience paid off and resulted in a beautifully balanced spirit, which legally must be labelled as a spirit drink. Christmassy aromas of rich citrus, cinnamon, various classic gingerbread spices and, of course, a hint of vanilla, are smoothly blended in our particularly fine alcohol. You’re guaranteed to enjoy the Christmas spirit even in summer!
