    Young, bright green spruce shoots generally grow in May and should be no longer than a bone of the little finger. The shoots were hand-picked by our farmers in Mecklenburg-Western Pomerania and macerated immediately at the distillery. After that, patience is needed. Experience has shown that particularly lengthy maceration is extremely beneficial for this spirit made from young spruce shoots. The reason is that the predominant components of the essential oil in the young shoots (unoxidized terpenes) take longer to dissolve during the maceration process we use. This is required to extract the whole range of components. Only what is released by the needles can pass into the distillate during the subsequent distillation. However, the wait more than paid off. The freshly macerated tips produced an exceptionally green and fruity to fresh and spicy distillate with a forest aroma and hints of lemon. It matured significantly during storage and also gained in complexity. Harvesting shortly after sprouting means the proportion of oxidized monoterpenoid ester bornylacetate, with its very strong pine aroma, is less pronounced. The notes of unoxidized monoterpenes such as a- and b-pinene and limonene therefore became more prominent. These are responsible for the aroma profiles above. But enough dry theory: the proof of the pudding is in the eating. So it’s up to the mixologists, chefs and other creative people.

    Sometimes the name is sufficient to arouse curiosity about the raw material. And that’s certainly true of this herb, though it’s also somewhat symbolic for DSM, which aims to throw old habits overboard… In fact, the Boston Tea Party of 1773 – an act of protest against British colonial policy on the part of colonists, which ultimately ended in the American War of Independence – would probably never have happened without wild bergamot. The plant was used by Native Americans from the region of Oswego as a medicinal herb and also for seasoning and tea. As tea made from the flowers has a surprisingly similar taste to Earl Grey tea flavoured with bergamot oil, the dissatisfied colonists were able to throw an entire shipload of this hated tea – transported from China by the English Crown – into Boston Harbour without actually suffering any losses as they had a substitute. We used the leaves, which emit a powerful fragrance that lingers on the fingers after even just a brief touch, and combines with the sharpness of the mint with soft citrus notes accompanied by the herbal notes of sage and thyme produced by thymol and other terpenes.     There are so many mints around the world that it was prophesied in the 9th century that anyone wishing to name all the species would also know how many fish swim in the Red Sea. Therefore, we’ll simplify the subject by just looking at peppermint. The leaves have long been used to treat various ailments, and also as an anticonvulsant. The name peppermint refers to a certain sharpness due to the high menthol content. Together with other components of the essential oil, menthol produces a penetrating, characteristic, pleasant aromatic smell and an equally pleasant, aromatic, camphor-like taste, initially burning, then with a cool aftertaste. This is also true of chocolate mint, which has blackish brown petioles that look very much like chocolate. However, the slightly different composition of the essential oil results in additional chocolate-like aromas, so this spirit gives an overall impression of the famous After Eight chocolate mints. That’s why it goes really well with all desserts (you must try it with ice cream!) or is ideal for adding an unusual touch to meat (game!) and fish dishes and, of course, cocktails. Our favourite option is simple and easy: drunk neat!

    Foodies and gourmets of the world rejoice; this spirit is absolutely incredible! The fragrance of the elongated leaves from our supplier of exceptional herbs was indescribably intense. By just slightly rubbing and cutting the verbena, an inevitable part of the processing, we were enfolded in a cloud of the freshest, most fruity lemon fragrance, which is why we very quickly overlaid it with alcohol because the flavours should be enjoyed in the spirit rather than simply creating a pleasant aroma during manufacturing. The raw material lives up to its Latin name citrodora. It is amazing how many members of the vegetable plant kingdom are blessed with the beautiful citrus aromas of citral without being even slightly botanically related to each other. But even more surprising is the fact that every single spirit produced from them has a completely different character when combined with the other aromas of the essential oil. In the verbena, it is mainly limonene, which also contributes its own lemony notes. Other than strongly recommending drinking it neat at room temperature for pure enjoyment, or topping it up with champagne, we’ll leave it up to the creative talents in award-winning kitchens and top-bars as well as connoisseurs to decide what else they can do with it.     Basil, also called king herb, has been historically documented since the 12th century in Europe, where it is widely used as a culinary spice, especially in the Mediterranean, because it stimulates the appetite and digestion. Since then, it has also become very popular elsewhere as a component of pesto, the ideal accompaniment for pasta and Caprese – a delicious combination of tomato and mozzarella. Many different-tasting varieties exist. Depending on the variety, origin and time of harvest, the essential oil sometimes has very different concentrations of, for example, strongly aromatic monoterpenes – linalool, cineol, eugenol and methyl chavicol (also called estragole), with the latter accounting for the special basil aroma with green, tea, mint and hay-like notes. After months of experimentation, we found the ideal combination by varying the types and the processing. Our basil spirit is pure pesto on the nose and palate, and therefore ideal for adding that special touch to food (pasta with pesto and caprese, of course!), dressings, desserts (be sure to try it with strawberries) and also flavouring cocktails. It’s also pure pleasure drunk neat.

    Cilantro belongs to the botanical family Apiaceae, to which many aromatic plants belong. In the case of cilantro, two different plant parts are used in the kitchen: the leaves and the seeds, with the leaves mainly used in Asian cuisine and the seeds in European cuisine. This posed the question as to which one we should use as the raw material for our spirit? Following a series of tests, we opted for both, but rather than combining them in a single product, we created two different ones. The result was two spirits that couldn’t be more different. For this spirit, we used the cilantro leaves. The leaves produce a very intense essential oil – though only in small quantities – which has a variety of aliphatic aldehydes (including decanal and dodecanal), which are responsible for the typical smell and taste. Its aroma is characterised as musky, lemony or even “soapy-herbaceous”. And it’s precisely this aroma that we reproduced 1:1 in our cilantro leaf spirit, which truly has the intense fresh cilantro smell and taste. Cilantro aficionados will enjoy drinking this distillate neat. But cilantro spirit is also ideal for mixing, cooking and, of course, perfuming.

    Who isn’t familiar with the wonderful fragrance of pine needles on a walk through the forest in summer? It has a deeply soothing and balancing quality that connects us with the world of nature. But how do you recognise a spruce tree and how does it differ from the pine, for example? That’s easy: spruce needles are prickly; pine needles aren’t. This undesirable characteristic is also the reason why spruce has been supplanted by the ever-popular Nordmann fir as Christmas trees since the 17th century. Although one drawback is that the Christmas forest smell has disappeared from living rooms, as the latter produces almost no essential oil. That’s why we prefer to use spruce for our spirit. Its aromatic organic needles are collected wild and have an impressively high essential oil content. The German pharmacopoeia gives a detailed definition of the minimum and maximum amounts of the following components of spruce needle oil that is used medicinally: α-pinene, camphene, β-pinene, car-3-ene, limonene, bornyl acetate and borneol. Our spirit has captivating strong spruce notes of bornyl acetate, which can be detected even in the smallest quantities. The specially selected raw materials are the reason why this stands out in the distillate. They are easy to distinguish from the aroma produced by freshly harvested spruce tips because the composition of the essential oil changes significantly within the first weeks as the fresh tips mature. The proportion of oxidized terpenes keeps increasing and the non-oxidized proportion decreases. We recommend that anyone still not convinced should try a comparative tasting!

    The wide variety of mints means it’s extremely tempting to use them to produce spirits. From apple mint to lemon mint, there’s plenty of temptation for distillers obsessed by aromas. Following the enthusiastic reception of our distillate No 550 — German Chocolate Mint — we wanted to complement the range with a classic mint, as not everyone appreciates its After Eight flavour. After numerous attempts, Moroccan spearmint with its lime green, pointy oval, rough leaves proved to be the best choice. Morocco’s national drink consists of mint and Chinese gunpowder green tea, with lots of sugar and hot water. The tea is traditionally made by hosts to welcome guests in a ritual ceremony. Moroccan mint lacks the menthol sharpness of peppermint or even our chocolate mint, because it is one of the mints that is very low in menthol. This can be clearly detected when you compare our two distillates. Cooling mentholated and woody notes are characteristic of menthol. In the essential oil of Moroccan spearmint, carvone with spicy minty spearmint notes predominates, along with bready notes that have slight hints of caraway. These aromas are complemented by dihydrocarveol, neodihydrocarveol and limonene with citrus notes. We think this idiosyncratic spirit is an ideal ingredient for cocktails, such as a Hugo or Mojito, or in desserts of all kinds and ice cream, and above all, enjoyed neat at room temperature.

    The “officina” is a place where high-quality goods are manufactured as well as the adjoining sales area. It is the name used by pharmacists for their workplace in the pharmacy. This is referred to by the Latin epithet “officinalis”, which means “for medicinal purposes”. Rosemary leaves are used internally to treat digestive disorders and applied externally to treat rheumatic diseases, etc. A variety of substances are responsible for its effect, these include tannins (mainly rosemarinic acid), flavonoids, bitter substances, saponins, resin and the essential oil containing, among other things, 1,8-cineol, a-pinene, camphor, camphene and borneol. The essential oil is what makes it eminently suitable for distilling a spirit of outstanding quality. But it was a long, hard road. We only succeeded after numerous attempts and even more tastings. Did the developers of “Aqua Reginae Hungariae” – Queen of Hungary Water have a similar experience? This is a rosemary spirit made by distilling rosemary flowers with alcohol that appeared in the 14th century and was reputedly one of the first distilled perfumes. According to the legend, it was supposed to be a true fountain of youth. Our rosemary spirit naturally can’t compete with this. But we’re convinced that the opposite is also true: Queen of Hungary Water cannot compete with our very intense, authentic rosemary spirit, which is extremely popular not only in the kitchen, but also in the bar scene.

    If a friendly bartender at one of the top-class bars is so delighted by your thyme spirit after one a tasting that he decides to use it in a mixology competition, that’s a sign that all the effort paid off, from optimally harvested, aroma-rich raw material, through to time-consuming manual crushing and special maceration of the tiny thyme leaves, to the especially careful distillation of the sensitive ingredients. This produced an essential oil with the phenolic monoterpenes thymol and carvacrol as its main components. As the key aroma, the green, spicy, slightly flowery and cooling nuances of the thymol are responsible for the characteristic thyme aroma. Up to 250 species belong to the genus Thymus, but only two, including the “vulgaris” used by us, are authorised for use in the production of the pharmaceutical drug “Thymi herba” according to the European pharmacopoeia. The drug was already used in ancient Greece. Nowadays it is accepted as a traditional herbal medicinal product that can help to treat bronchitis and catarrh in the upper airways and inflammation of the mouth mucosa, for example. But now – after this excursion into the world of thyme – let us go back to our spirit made from the same herb. It blends all the complex and Thymus vulgaris aromas with the wonderful restrained sharpness of the alcohol and jazzes up savoury and sweet dishes, such as ice cream, and also drinks. But try adding it to champagne!

    The “officinalis” in the Latin name of common sage indicates its suitability for medicinal use. Because of their antibacterial effect, alcoholic extracts of the leaves are used for gargling, etc. We are however only interested in its use as a kitchen spice. Our extremely aromatic wild sage comes from Baden-Württemberg in southwest Germany, and was harvested in the early hours of the morning, carefully packed and immediately refrigerated in order to undergo elaborate processing at our Berlin craft distillery the next morning. We began by picking the leaves from the stems, washing them by hand and finally cutting them up with a knife. The quantity required meant several days engaged in manual work, but in view of the outcome, every minute was well worth it. It’s a first-class sage spirit, which has been well received by aficionados, bartenders and chefs alike. The typical flavour is due to the main components of the essential oil – in particular a– and b-thujone, camphor and 1,8-cineol – and ancillary components, especially b-pinene, borneol and bornyl acetate and some sesquiterpenes, such as b-caryophyllene.

    When a top Berlin chef asks if you’re planning to produce a spirit made from dill, that’s the perfect motivation for starting product development. The first question was what raw material to use, because either dill weed or its seeds can be used. In this case, we relied on our nose and on science: the fresh herb has subtler notes, due to the various stages of ripening of the dill. Once it has flowered, when the seeds start to ripen, the proportion of (S)-(+)-carvone in the essential oil increases. This is responsible for the characteristic aroma of caraway oil. It overshadows other flavour components, such as limonene, a- and b-phellandrene and 3,6‐dimethyl‐2,3,3a, 4,5,7a‐hexahydrobenzofuran (also called dill ether, responsible for the typical dill smell and key aroma). The secret of success lies in harvesting the dill at just the right moment. Further processing also has to be performed with care and skill. This is the only way to capture the potent, fresh, sweet spicy, peppery and aromatic smell in our spirit, with its undertones that are reminiscent of spearmint and nutmeg. We’re curious to find out what our special customer’s illustrious guests will think of the pickled fish he’s planning to make with the spirit. We’re also eager to discover its many other potential uses, both in the kitchen and in cocktails. There should be no shortage of ideas: dill has been used as a medicinal and aromatic plant since the time of the Egyptians.

    The Latin name Melissa, as it is also often called, is revealing: the Greek words melissa and meli, which mean bee and honey, give an idea of how popular the honey-rich small whitish flowers of lemon balm are with bees. Artepitheton officinalis, on the other hand, is a reference to the medicinal use of the plant. Due to their calming and carminative effect, the leaves are used to treat sleep disorders and functional gastrointestinal disorders but have also long been widely used as a spice in Europe. Among the numerous ingredients of Melissa that are the reason for its widespread use, we are mainly interested in the essential oil, because this is responsible for the smell and taste of our spirit. Its aromatic, lemony, spicy aromas are mainly contributed by the monoterpene aldehydes citronellal, geranial (i.e. citral a) and neral (i.e. citral b), in which the proportion of the first one mentioned varies considerably according to the country of origin. Geraniol (flowery and rose notes), linalool (floral and woody notes) and other terpenoid substances also contribute to the refreshing overall impression that sets our pure Melissa spirit apart. We highly recommend using it for mixing, in fine cuisine or drunk neat at room temperature for immediate enjoyment.

    A herb that tastes like porcini? We were somewhat dubious when our supplier sent us a sample of this herb that we had never come across before. However, the shiny, crisp and succulent leaves, with a slightly spinach-like texture, gave off a delicate unusual mushroom-like aroma somewhat resembling that of oyster mushrooms, champignons and porcino mushrooms. And we were sold on it, because this wonderful herb was crying out to be used in a spirit. Following a series of tests, we eventually came up with the perfect recipe, which enabled us to perfectly blend the mushroom flavours into the alcohol. Rungia klossii – the Latin name for the mushroom, originates in the Highlands of Papua New Guinea, where it is used as a vegetable by the locals and is also a valuable source of protein, as well as being used in traditional medicine. We recommend using this spirit with anything that goes well with the mushroom-like notes, such as soups, casseroles, stews, salads, sandwiches, wok dishes and, naturally, mushroom dishes. But please note: as with the fresh leaves, you should only add our spirit to a dish when it’s cooked or almost ready, so as not to dull the beautiful aromas with too much heat!

    The idea of creating a bear’s garlic spirit sounds like an April Fool’s joke and, in fact, we came up with it at dinner one April Fool’s Day. The wonderful taste of this fantastic bear’s garlic soup left us hungry for more. However, it’s a fleeting delight as the season is extremely short. The fact is, fresh bear’s garlic of comparable quality is difficult to preserve during the harvest period as it quickly loses constituents once it’s chopped and dried. This is why the idea of preserving the strong bear’s garlic flavour in a spirit in order to have it available throughout the year began to take shape. Our farmer from Mecklenburg-Western Pomerania harvests wild garlic leaves before the plant flowers to obtain their full force, as the aromas become less intense after flowering. The key component for the smell and taste of bear’s garlic is allicin, a substance also found in common garlic that is unstable and contains sulphur. It is converted into di- and trisulphides, which, in their turn, are responsible for the typical garlic smell. Because allicin decomposes when it’s heated, we used an especially gentle distillation process for this spirit.     Purple shamrock is also known by the beautiful name of “love plant”. You can understand why when you see one of these amazing plants. Three heart-shaped, triangular red leaves sit at the end of each of the numerous stems. What’s more, like the wings of a butterfly, the hearts open at sunrise and close at night. Purple shamrock is also a skilled survivor. If there’s no water or it’s too cold, everything aboveground dies and withdraws into the underground bulb. When conditions improve within a very short space of time it shows what it’s capable of, or in the words of Albert Schweitzer: “I am life that wants to live, in the midst of life that wants to live.” We accepted the “inner values” of this plant, which is almost a cult object, and were so impressed we decided to commemorate it in a spirit. Our spirit isn’t sour because the oxalic acid responsible for the sour taste of purple shamrock is non-volatile. It has fresh, fruity rhubarb and slightly berry-like notes of blackcurrant and raspberry, as well as a touch of hay and straw. It’s just waiting to be used in salads, dressings, desserts and cocktails.

    This herb first arrived in kitchens outside Italy from the 1950s onwards with the triumphal march of the pizza. Who hasn’t tried to bake a pizza like the ones in the Italian restaurant at home? Oregano is one of the ingredients of the tomato sauce along with basil, garlic and other spices. Carvacrol, which is the main flavouring substance of the essential oil, gives it a sharp to piquantly spicy, slightly woody taste. Harvesting the plant at the right time – when it starts to flower – is important to obtain as much essential oil as possible, and that’s exactly when our German supplier struck. The result is a spirit that one looks forward not only to spraying on oven fresh pizza, but to give a completely new twist to antipasti and pasta dishes and cocktails, either on its own or with other Mediterranean spirits. However, oregano is not just used in Mediterranean cuisines: oregano (or its Mexican pendent) is used with cumin as an ingredient of chilli con carne, which would also undoubtedly benefit from a touch of our spirit.

    You wouldn’t necessarily expect a spirit made with lavender leaves to be so radically different from one made using the flowers. Science soon clarifies why this should be the case: whereas the essential oil from the flowers contains approximately 70 % of the key aromas – linalool and linalyl acetate – in more or less equal parts, the leaves contain hardly any of these two substances. Their oil contains no such key aromas, but is made up of more than 80 components, including epi-a-cadinol, borneol, 1,8-cineol and camphor, but all in relatively small quantities. Overall, the leaves contain much less essential oil than the flowers. This is also reflected in the amount of raw material required when the leaves are used to produce a spirit. In terms of smell and taste, you’ll immediately know it’s lavender when you taste the leaves’ spirit, but camphor-like, aromatic and woody notes are more predominant than fresh, sweetish and floral ones. This is what makes this spirit useful when one wants lavender echoes without being hit by the full force of this aroma, which can quickly become overwhelming. It can be used for perfuming salads, soups or sauces, dressings, desserts and drinks.

    Virtually no tarragon is grown in Germany, which is why demand is met by imports. Following weeks of research, we eventually found a supplier in Israel. He supplied us with the higher-grade “aromatic” variety of the two available types (“Russian” and “aromatic” tarragon), harvested before they began budding, because that’s when the essential oil content is at its peak. This complex composite oil consists of 2/3 estragole (methyl chavicol) as well as ocimene, sabinene and eugenol etc., which give the herb its spicy-aromatic, anise-like aroma with hints of woodruff and a bitter-sweet taste. These ingredients are the reason tarragon is used as a culinary spice, but they are also responsible for its digestion stimulating properties. It’s these special ingredients that made us enthusiastic about creating a tarragon spirit. The result is a distillate with an authentic tarragon aroma that anyone who is not averse to an anise note will also enjoy drinking neat. This distillate also gives people who enjoy experimenting in gourmet kitchens, bars and elsewhere an opportunity to unleash their creativity. The Latin name ”dracunculus” (“Little Dragon/Snake”) is probably the reason for the erroneous belief that tarragon leaves are an antidote for snakebite.

    We must admit we didn’t know the names of the ingredients of a number of our products before we began product development. But new doors are opened once you start dealing with magnificent and varied natural flavours. And that’s what happened with bronze fennel. It’s aptly named, as it has unmistakeable, fine pinnate, bronze brown leaves, which are the reason why it’s often mistaken for dill. Unlike its relative, vegetable fennel, this two-year perennial does not develop a tuber, and therefore the herb is mainly used for garnishing and seasoning dishes or for teas. Or for producing a distillate, a completely new creation. It has delicious anise, camphor and liquorice notes, which invite you to nibble it, add that special touch to food or add to other drinks. Like its ”big brother”, the smell and taste are mainly due to components of the essential oil, such as fenchone, trans-anethole and estragole. What inspired us to use both fennel products is that, when you directly compare them, the oil in the various plant parts (leaves versus tuber) is quite different.

    To the best of our knowledge, our supplier is the only one offering this unique herb. So, we were grateful to obtain sufficiently large quantities for our purposes. This is the bitter yarrow variety, whose vermouth-like characteristics were described in 1609-10 by the Italian pharmacist Nicolò Clavena from Belluno. The famous Swedish scientist Carl Linnaeus in 1753 also honoured Clavena in the species name, but evidently made a mistake when he added an extra “n”, as the species should actually be called “clavenae”. The generic name “Achillea” refers to Achilles, the legendary hero of the Trojan War, who apparently used plants of this genus for healing wounds. The bitter substance achillein, responsible for the taste of bitter yarrow, is not contained in our spirit because it remains in the stillage during distillation. On the other hand, the fresh, intensely aromatic and spicy fragrance reminiscent of mountain meadows, with a hint of chamomile produced by crushing the leaves, due to the main components of the essential oil – camphor and 1,8-cineole – can be detected 1:1 in our spirit and lends a summery touch to dishes and drinks.
