    According to English reports, the Blenheim Orange apple variety was discovered in 1740 as a chance seedling at Woodstock near Blenheim Palace in Oxfordshire, England, the country estate of the Duke of Marlborough, from where it gets its name. The name of the estate also recalls a historically important battle for England during the War of the Spanish Succession in 1704, fought at Blindheim (District of Dillingen, Bavaria), which became anglicised as Blenheim. Reinette is the name given to a group of apples with dense, later pithy flesh and a distinctive flavour. The “golden” in the name refers to the fruit’s colour. The Blenheim used to be a prized, widely cultivated species, but is now only available sporadically. It used to be grown mainly for its taste. We obtained our Golden Reinette from the edge of the Spreewald — right next door so to speak — from a farm owned by the same family for more than 120 years. They have orchards of old high-stem apple trees with only two trees of each variety. The owner personally delivered these extremely aromatic apples to us immediately after the harvest. We mashed and distilled them after fermentation. The result, after months of storage, was a wonderfully characteristic apple brandy with slightly green, fruity notes, almost like breathing in the air under a tree of ripe apples, and slight echoes of pear.

    No one knows exactly where Constantinople Apple Quince comes from. The name suggests Turkish roots, as Constantinople is the former name of modern Istanbul. In any case, of all the numerous varieties of quince, we specifically wanted this particular one as it is said to have a particularly subtle aroma. We had a real stroke of luck, because a Mecklenburg farmer came to us of his own accord a few weeks before the harvest and offered us precisely this variety from his certified organic farm. What he brought to our yard in October surpassed our expectations: the most intensely fragrant, highly aromatic fruit we had ever seen. They were harvested at optimum ripeness and therefore no longer had the fine fuzz, which has to be removed before processing from fruit that is harvested unripe and then post-ripened because it has bitter taste. We immediately washed, crushed and slowly fermented and cooled the firm fruit to capture its full complexity in our distillate, which contains the subtle fragrance of the aromas released. Chemically, it is a blend of more than 80 esters, ketones, alcohols and aldehydes. Following gentle distillation and extensive maturation, we obtained a wonderful eau-de-vie typical of the variety, with sweet and flowery, slightly spicy notes on the nose and palate. A truly world-class eau-de-vie with a lingering finish that blends the complexity of the quince aroma to perfection.

    he art of creating a great pear brandy lies in the symbiosis of technically perfect distillation and knowledge of the chemistry of the potential aromas in the pear. As recent studies show, the Williams pear is the variety with by far the highest proportion of what is known as ‘pear ester’: ethyl (E,Z)-2,4-decadienoate. It is characterised by a typical pear smell with green, fruity, tropical and sweetish notes. Due to various factors, it isomerises into ethyl (E,E)-2,4-decadienoate, which is significantly less intense. This means that the ratio of the two in ripe pears is around 4.5 to 1, but only 3 to 1 in the stored distillate. The aim is to avoid this reaction as far as possible. Nevertheless, these are just two out of the more than forty odour-active substances typically found in pear brandies. In combination, they produce what ultimately delights your palate. We believe we succeeded in creating a true masterpiece that perfectly blends the classic notes of a brandy made from the yellow Williams pear. Although we strongly recommend enjoying it neat at room temperature, its powerful aromas create spectacular cocktails. Here’s everything we know about the origin of the name of this wonderful fruit: a monk, who was mentioned as a “good Christian”, is supposed to have brought it from Italy to France as a gift for the French king. From there, it reached the London Williams nursery, which distributed this pear throughout England in around 1770.
