    Ethiopia is regarded as the home of coffee. Some 10 % of the nearly 100 million Ethiopians earn their livelihood somehow or other by cultivating coffee. This mocha bean, which comes from the region of Sidamo, is roasted by a small coffee roasting company in Bremen and its aqueous extract has been enjoyed by our pharmacist for many years at breakfast every morning. Which is why it was only natural to use this excellent coffee bean as the raw material for our coffee spirit. After a particularly gentle and customised roasting, the beans were cold macerated and then distilled equally gently to capture the fruity to delicately bitter, spicy aromas of the Sidamo mocha bean in our spirit. A special characteristic of Sidamo mocha is its distinctive, slightly perfumy note with a hint of Darjeeling tea. From a chemical point of view, this is due to lots of very different roasting aromas, with 2-furfurylthiol considered the key aroma. All in all, we succeeded in creating a wonderful authentic coffee spirit with a character all its own from the Sidamo mocha. It should be enjoyed neat, though star chefs will be eager to use it in desserts and other dishes. It’s also very popular with bartenders.

    Life without chocolate is possible, but meaningless. That’s why the cocoa tree, which supplies the key flavour ingredient of chocolate, was quite rightly given the genus name Theobroma, meaning “food of the gods”. One of the world’s best and most expensive cocoas is Criollo fine cocoa. This is native to Central America, and the Porcelana variety is considered to be the Criollo among Criollos. It gets its name from the white to light pink colour of the cotyledons, which is reminiscent of porcelain. Because this species is very sensitive, susceptible to disease and also produces lower yields than other varieties, it has largely been superseded by other crops. Its outstanding flavour and aroma are the reason why this Criollo is still cultivated for luxury chocolate, and why we selected it for our spirit. The flavour and aroma are due to more than 35 volatile compounds, especially pyrazines and aldehydes formed when the cocoa is roasted. As this process is critical to the aroma, we roasted the Porcelana beans in our distillery. The actual smell and flavour carriers are the result of flavour precursors formed when the cocoa beans are fermented. In the case of the Criollo, these are nutty and caramel-like, along with fruity and floral to herbaceous woody notes that produce an extremely complex blend of aromas that are superbly reflected in our spirit. A unique treat with a lingering chocolate aroma. You’ll enjoy it poured neat over desserts or in cocktails.

    It wasn’t easy to establish contact with our Piedmontese organic farmer: there was no response to our repeated calls and emails. However, once we translated the emails into Italian, things started to move fast, so it was only the language barrier: he wasn’t able to understand English. Which was lucky: because hazelnuts from this part of northern Italy are the best in the world, as we were able to confirm for ourselves. Following time-consuming and tedious roasting in our craft distillery, maceration and slow distillation, we tasted a pure hazelnut spirit with a truly incomparable aroma, the likes of which we’ve never previously experienced. Hazelnut praliné notes along with subtle roasting aromas and slightly sweetish hints, blended to a slightly buttery-fatty consistency, which is very soft on the palate and finish. And all without any further fining additives or ageing in barrels, which is all too often the case with this product. Because other than the water used to dilute it to drinking strength, no adulterating substances are added to our spirit before or after distillation. The most important flavour component is filbertone (5-methylhept-2-ene-4-one), and one can detect its scent even in the smallest quantities. All we have to say is: cheers! Enjoy it neat, sprinkled over dessert or in a cocktail!

    Germanic tribes used to call neighbouring peoples with Roman roots “Walhaz”. These were the people who introduced them to the walnut, which they called “Welschnuss” to distinguish it from the domestic hazelnut. This is the origin of the name “walnut”. The walnut tree bears the Latin species epithet “regia” – meaning “royal” – because it is a truly amazing tree. Due to the tannin content, the leaves are used as a traditional herbal remedy in baths and compresses. Green walnut shells are also used to manufacture liqueur and hair dye. The cold-pressed oil from its seeds is used for cooking and in the cosmetics industry, and, last but not least, the delicious walnut kernels are a versatile, healthy foodstuff. Walnut trees flourish in the fertile black earth soils of Moldova, where seemingly endless walnut tree-lined avenues grace the landscape. That’s where we obtained the organic walnuts for our special walnut spirit, with flavours based on a variety of aliphatic alcohols and aldehydes produced by oxidative degradation of the polyunsaturated fatty acids contained in walnuts. We recommend drinking it neat for pure pleasure, using it in salad dressings and desserts, or for mixing.

    The English word “peanut” already indicates the botanical relationship to peas. For although the name might suggest it, the peanut is not a nut, but belongs to the Faboideae family and thus to the legumes. For this reason, peanuts are more closely related to peas and beans than to nuts. The relationship can be recognized by the fact that peanuts do not have a hard shell, but ripen in a legume. We have very consciously selected the wild organic peanuts in raw vegetable quality, which we obtain 100 % natural, i.e. unroasted and unsalted from Indonesia, because they have a more original taste than the roasted peanut kernels from the supermarket. It is a wild variety that is cultivated by small farmers on half a hectare of land in mixed cultures according to ecological standards so that no pesticides are necessary. All processing steps are done by hand. Twice a year the organic peanut kernels are harvested and after harvesting they are dried in their shells in a special process and then cracked. The valuable red-brown striped seed skin remains largely intact. In order to enhance the taste of these pure, wild peanuts for our spirit production, we gently roasted them in our manufactory, freed them from the seed skins and then extracted and distilled them with our mild neutral alcohol. The result is a freshly roasted peanut aroma pure in the glass, which is mainly derived from 2-methyl-3-furanthiol with a roasted and meaty note and 2-acetyl-1-pyrroline and 2-propionyl-1-pyrroline with a popcorn-like note.
