The marigold is originally from South and Central America and has been cultivated since the 16th century. In the Far East, it is used mainly as a spice and medicinal plant, and in Europe, mainly as an ornamental plant, but its edible flowers are also used to decorate many a gourmet dish. It’s rather a shame that the lovely yellowy-orange colour of its beautiful flowers is left behind in the stillage – the residue of the solids and non-volatile components of the macerate – because one eats (and drinks) with one’s eyes. Our spirit made from tagetes – one of over 50 known varieties – is a clear, colourless product, containing volatile aromas that blend with the alcohol when it is distilled. This is an essential oil, with conflicting information about its composition in the literature, so we won’t list any information here. It’s enough to know how our spirit tastes without knowing the name of the causal principle. It tastes of the subtle aromas of anise and woodruff, which makes it somewhat resemble tarragon. A cool product that’s seeking its champion among chefs, mixologists and connoisseurs.
