Sometimes the name is sufficient to arouse curiosity about the raw material. And that’s certainly true of this herb, though it’s also somewhat symbolic for DSM, which aims to throw old habits overboard… In fact, the Boston Tea Party of 1773 – an act of protest against British colonial policy on the part of colonists, which ultimately ended in the American War of Independence – would probably never have happened without wild bergamot. The plant was used by Native Americans from the region of Oswego as a medicinal herb and also for seasoning and tea. As tea made from the flowers has a surprisingly similar taste to Earl Grey tea flavoured with bergamot oil, the dissatisfied colonists were able to throw an entire shipload of this hated tea – transported from China by the English Crown – into Boston Harbour without actually suffering any losses as they had a substitute. We used the leaves, which emit a powerful fragrance that lingers on the fingers after even just a brief touch, and combines with the sharpness of the mint with soft citrus notes accompanied by the herbal notes of sage and thyme produced by thymol and other terpenes.
