Who hasn’t tried the Black Forest Gateau? It is interesting for us here in two ways, because it is made with both the raw material of our brandy, morello cherries, and the product of our work, an excellent cherry brandy. The morello cherries, preserved in sugar and water, are incorporated into the cake layers during production and used for decoration, while the cherry brandy is used to soak the cocoa-containing cake bases.
It is the dark, cocoa-like aromas of the sour cherries that make this combination with the cocoa of the cake base so unique. In addition, our brandy made from hand-picked, highly aromatic morello cherries from Saxony has fruity notes of fully ripe sour cherries without a disturbing stone note. We have also taken care to carefully remove all the pits from this stone fruit brandy to prevent the almond-like tone from gaining the upper hand, which occurs when the pits are mashed in. This is because the amygdalin they contain is broken down by enzymes into mandelonitrile, which in turn breaks down into benzaldehyde and hydrocyanic acid, both of which are responsible for the almond aroma. And so our brandy from the Saxon morello cherry impresses with pure cherry aromas that are not masked by almond aromas.
