Anyone who has ever carefully rubbed the skin of a yuzu fruit ripening in the southern sun will never forget this incomparable aroma: on the one hand, it is clearly recognizable as a citrus aroma, which is closest to a blend of the notes of lime, grapefruit and tangerine. But in its uniqueness, the yuzu cannot be compared to any of these fruits. Like the other citrus fruits, it belongs to the Rutaceae family and has probably been cultivated in China for many thousands of years. Today, it is mainly cultivated in Kochi Prefecture on Shikoku Island, the smallest of the four main Japanese islands. In addition, some producers in southern Spain have specialized in the exotic fruit, from where we also obtain our Yuzu. The plant grows very slowly and without grafting it takes more than 10 years until the trees, which are about 2-7 m high, produce fruit. The yuzu fruit contains very little juice because of the very numerous seeds. The peel and juice of both the still young green yuzu and the ripe yellow yuzu are used in the upscale cuisine for flavouring food and drinks and in the perfume industry. In our unfiltered spirit of the Spanish Yuzu, the full power of the exotic aromas of this very special fruit is concentrated. Its eight most important components are limonene, α-pinene, α- and β-phellandrene, myrcene, γ-terpinene, (E)-β-farnesene and linalool. However, the main taste difference from other citrus fruits is caused by yuzunone and yuzunol, which increase the balsamic, sweet and floral characteristics.
