No 105 Mallorcan Verna Lemon

When some friends invited us to attend their wedding near Sóller in Majorca, we discovered the Serra de Tramuntana for the first time and loved it. Particularly memorable were the incredibly aromatic lemons, which made fantastic jam. We knew right away that we had to have this fruit to create an equally aromatic spirit. Our supplier sources the widely grown Verna lemons from small, organic producers, who do not use any artificial treatments on the fruit during ripening or after the harvest. The main flavour carrier of our spirit is the key aroma of the lemon, citral (mixed isomers of the aldehydes geranial and neral). The main ingredients in terms of quantity are limonene, β-pinene and γ-terpinene. Genetically speaking, the different lemon types are hybrids of the bitter orange and the citron. With its clear, pure and vibrant lemony notes, this spirit is the perfect accompaniment wherever lemons or their juice are added: to fish dishes, summer salads, dressings, Mediterranean dishes and sour cocktails. It just enhances the lemony taste of the cocktails, as the lemon’s acidity is non-volatile, and our lemon spirit, therefore, isn’t sour.
